1 lime
1 tablespoon peanut oil
Kosher salt
1 10-ounce bag mixed vegetable slaw or salad blend (such as kale, cabbage and kohlrabi)
2 Persian cucumbers, thinly sliced
1 shallot, thinly sliced
1 tablespoon grated peeled fresh ginger
1 pound ground pork
1 tablespoon chili-garlic sauce
1 tablespoon fish sauce
1 cup packed fresh cilantro and/or mint
1/4 cup chopped roasted salted peanuts

Steps:

  • Grate the lime zest and set aside, then juice half of the lime into a large bowl and cut the other half into small wedges. Whisk 1 teaspoon peanut oil and a pinch of salt into the lime juice. Add the slaw and cucumbers and toss to coat.
  • Heat the remaining 2 teaspoons peanut oil in a large skillet over medium-high heat. Add the shallot and cook until softened, 2 to 3 minutes. Add the ginger and cook, stirring, until soft but not browned, about 1 minute. Stir in the pork and ½ teaspoon salt and cook, breaking up the meat with a wooden spoon, until browned in spots and no longer pink, 6 to 8 minutes. Carefully pour off all but about 1 tablespoon fat from the skillet. Stir in the chili-garlic sauce, fish sauce and lime zest and remove from the heat.
  • Divide the slaw mixture among bowls. Top with the pork, herbs and peanuts; serve with the lime wedges.

650 g pork fillets or 650 g tenderloin
100 g salad leaves
4 spring onions, sliced
1/4 cup basil leaves
1/4 cup mint leaf
1/4 cup coriander leaves

Steps:

  • place the soy, sugar,chillies, ginger, fish sauce lime juice and star anise in a deep fry pan over medium heat.
  • cook stirring for about 4-5 mins until the mixture thickens slightly.
  • halve the pork lengthwise and add to the pan.
  • cook for 4 mins on each side or until tender.
  • remove pork from the pan and cool slightly.
  • simmer the pan juices until thickened.
  • toss together the salad leaves, spring onions and herbs.
  • slice the pork drizzle with the pan juices and serve with the salad.

1 boneless pork loin roast (3 to 4 pounds)
1-1/2 cups apple cider or juice
1 can (4 ounces) chopped green chiles, drained
3 garlic cloves, minced
1-1/2 teaspoons salt
1-1/2 teaspoons hot pepper sauce
1 teaspoon chili powder
1 teaspoon pepper
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
12 cups torn mixed salad greens
1 can (15 ounces) black beans, rinsed and drained
2 medium tomatoes, chopped
1 small red onion, chopped
1 cup fresh or frozen corn
1 cup crumbled Cotija or shredded part-skim mozzarella cheese
Salad dressing of your choice

Steps:

  • Place pork in a 5- or 6-qt. slow cooker. In a small bowl, mix cider, green chiles, garlic, salt, pepper sauce, chili powder, pepper, cumin and oregano; pour over pork. Cook, covered, on low 6-8 hours or until meat is tender., Remove roast from slow cooker; discard cooking juices. Shred pork with 2 forks. Arrange salad greens on a large serving platter. Top with pork, black beans, tomatoes, onion, corn and cheese. Serve with salad dressing. Freeze option: Place shredded pork in a freezer container; top with cooking juices. Cool and freeze. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

Steps:

1 large tomatoes, chopped
4 ounces pepperoni, thinly sliced
1/4 cup black olives
1/2 cup shredded cheddar cheese
1 (15 ounce) can chili with beans (or use your own leftover)

Steps:

  • In salad bowl, combine all but the chili.
  • Heat chili until bubbly.
  • Pour over salad, tossing lightly to coat.

OKINAWA PORK EARS SALAD IN PEANUT SAUCE



Okinawa Pork Ears Salad in Peanut Sauce image

In Okinawa, pork ears are most commonly cooked or prepared with peanut sauce. There are many variations but pork ears and peanut-based sauce really goes well together. This recipe is simple and easy to prepare. I've used a creamy peanut butter to make the peanut-based sauce. This is usually served as an appetizer in some local Okinawan restaurants.

100 g shredded pork, ears (pre-boiled)
1/2 cucumber
1/4 teaspoon salt
100 g bean sprouts
100 g firm tofu
4 tablespoons peanut butter
2 tablespoons miso
1 tablespoon brown sugar
2 tablespoons rice vinegar
1/4 teaspoon salt

Steps:

  • Bring water in a pot to a boil then boil the pork ear for about a minute. Take the pork ears from the boiling water then set aside and use a strainer to drain.
  • While waiting for the pork ears to drain, you can prepare the vegetables to be used for this recipe. Start by slicing the cucumber into shreds. Put the cucumber in a bowl then add quarter a teaspoon of salt. Set it aside and wait for it to release its liquid.
  • Bring another batch of water to a boil. Once the water boils, add the bean sprouts into the boiling water then cook until it has softened, about 3 minutes. Remove from water then drain.
  • In the same pot of boiling water, add the tofu then cook for about 2 minutes. Remove the tofu from water then drain. Pat dry the tofu using a paper towel to remove excess liquid. Then, cut it into about 1-centimeter cubes.
  • Once the cucumber releases liquid, squeeze it out to take more liquid using your hands.
  • In a bowl, combine the peanut butter, miso paste, brown sugar and salt then mix well. Slowly add the vinegar. Do not pour everything at once. Add a little at a time then mix well as you add vinegar. Mix until the consistency becomes smooth.
  • In a large bowl, mix the pork ears, cucumber, bean sprouts and peanut sauce then mix well. Add the tofu then carefully mix until all ingredients are well combined then you can serve.

75 g okinawa salt pork (boiled)
1/2 piece okinawa island carrot
20 g garlic scapes
1/3 piece scallion (white part)
1 tablespoon sesame oil
1/2 piece avocado
1 teaspoon broad chili bean paste (doubanjiang)
1 teaspoon vegetable oil
100 g green lettuce (saladana)
1 tablespoon lime juice

Steps:

  • Start by preparing the vegetables. Cut the carrot into thin strips. For the garlic scapes, cut it into about 3-centimeter pieces.
  • Make several cuts along the length of the scallions then cut it into 3-centimeters to have fine strips.
  • Cut the avocado in half then take the seed. Remove the peel then slice it thinly. Put it in a bowl then squeeze out some lime juice on top to prevent it from browning.
  • Slice the boiled Okinawa salted pork thinly.
  • Heat a pan using medium heat then add a teaspoon of vegetable oil. Add the doubanjiang then stir and cook it for about a minute. Add the carrot and garlic scapes then stir-fry until the vegetables are soft. Remove the vegetables from pan then let it cool.
  • Wash the saladana then tear into easy-to-bite pieces. Put the pieces in an ice cold water until ready to be used. Drain right before using.
  • In a large bowl, add the carrot, garlic scapes, salted pork, scallions, avocado and saladana. Add a tablespoon of sesame oil then mix well until all ingredients are well-combined. Serve and enjoy.
