- Cook spinach in water until limp [or better, steam in Oster Digital Food Steamer, cost $40 on amazon.com so you can "set it and forget it".
- Blend/puree cooked spinach.
- Gently fry shallots and garlic in olive oil and mix well with pureed spinach.
- Note, a slight touch of freshly grated nutmeg, a pinch of good quality curry or any favorite spice adds a lot to this dish -

MIRJ'S SIMPLE CREAMED SPINACH
This recipe came about because I'm Somersizing and was looking for something fast and easy and basically all I had in the house that fit into my diet was frozen spinach and cream cheese. This was ready in minutes. I actually find myself making this often, either as a side dish, or I eat it straight out of the bowl. I told Yooped this easy SS diet trick, and he twisted my arm so much I had to post it here at Zaar. Even for those who aren't Somersizing, this is a fantastic and simple creamed spinach side dish.

- Place the spinach in a microwave-safe bowl and nuke for about 8 minutes, until cooked through.
- Add the cream cheese, mix through and nuke for another 2 minutes.
- Add the salt, pepper and red pepper, and mix through completely.

- In a large nonstick skillet, saute onion, mushroom and garlic in bacon grease until soft.
- Season with salt and pepper, and garlic powder if not using fresh garlic.
- Add entire bag of spinach and gently mix, then cover and reduce heat to low.
- After a few minutes when spinach has wilted, add cream and cream cheese and gently stir until cream cheese chunks have melted into the sauce.

- 1. Boil the washed spinach in a medium-sized saucepan. Drain thoroughly in a colander.
- 2. Return the drained spinach to the saucepan. Add either the olive oil or the water, and the garlic. Simmer on medium heat for about 5-7 minutes.
- 3. Add the yogurt to the spinach and garlic mixture, and cook on medium to low heat until well blended.
- 4. Serve warm as a side dish for meat or other vegetables, or as an accompaniment to baked or boiled potatoes. Crusty rolls or garlic/French bread also go well with this dish.

"ALMOST" BOSTON MARKET CREAMED SPINACH
This is quite similar to the creamed spinach at Boston Market, well so I'm told anyway! --- this is a great side dish, even people that hate spinach love this, it's great to serve along side a holiday turkey or a ham dinner, or at any meal --- I also like to saute about 2 teaspoons fresh minced garlic and a pinch of cayenne pepper in the butter for about 2 minutes before adding in the flour but that is optional, add in some grated Parmesan cheese too if desired, this complete recipe can be doubled :)

Steps:
- In a saucepan melt butter over medium heat until sizzling.
- If you are adding in the fresh garlic and a pinch of cayenne pepper then saute in butter for about 2 minutes but do not brown the garlic.
- Whisk in the flour and 1/2 tsp seasoned salt (or white salt) until creamed together and smooth.
- Stir in the half and half, or milk (if using) a little at a time.
- Increase heat to medium and constantly whisk until the mixture becomes thick and smooth.
- Remove from heat; set aside.
- Place 2 tbsp butter in saucepan over med heat; add the 2 tbsp minced onion, and cook until transparent.
- Add spinach and water to pan, lower the heat, and cover.
- Stirring several times until the spinach is cooked.
- When the spinach is almost done, add the prepared white sauce, sour cream and Parmesan cheese (if using).
- Stir well, and simmer until completely blended.
- Season with more seasoned salt or white salt if desired and black pepper.
