1/4 cup packed brown sugar
1/4 cup chopped walnuts, toasted
2 teaspoons ground cinnamon
1 cup Gold Medal™ all-purpose flour
1/2 cup whole wheat flour
1/2 cup old-fashioned oats
2 tablespoons ground flaxseed or flaxseed meal
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup packed brown sugar
2/3 cup vegetable oil
2 eggs
1/4 cup sour cream
2 teaspoons vanilla extract
1/2 cup milk
3/4 to 1 cup powdered sugar
1 tablespoon milk
2 teaspoons light corn syrup

Steps:

  • Heat oven to 350°F. Spray bottom only of 9x5-inch loaf pan with cooking spray. In small bowl, stir together all streusel ingredients; set aside.
  • In medium bowl, stir flours, oats, flaxseed, baking powder, salt and baking soda with whisk until blended.
  • In large bowl, beat 3/4 cup brown sugar and oil with electric mixer on medium speed 1 minute or until blended. Beat in eggs one at a time, beating well after each addition. Beat in sour cream and vanilla.
  • Beat flour mixture into sugar mixture alternately with 1/2 cup milk on low speed, beating after each addition until smooth. Spoon one-third of batter in pan (about 1 cup); sprinkle with half of the streusel (about 1/3 cup). Top with half of remaining batter (about 1 cup), spreading gently. Sprinkle with remaining streusel mixture. Top with remaining batter. Gently run knife through batter to swirl.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool on cooling rack 10 minutes.
  • Loosen sides of loaf from pan; remove from pan and place top side up on cooling rack. Cool completely, about 2 hours.
  • In small bowl, beat all icing ingredients, adding enough of the powdered sugar for desired drizzling consistency. Drizzle icing over bread. Let stand until set. Wrap tightly and store at room temperature up to 4 days, or refrigerate.

1 (9 inch) pie shell
5 cups apples - peeled, cored and sliced
2 tablespoons all-purpose flour
⅔ cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
2 tablespoons butter
¾ cup all-purpose flour
½ teaspoon ground cinnamon
½ cup packed brown sugar
¾ cup rolled oats
1 teaspoon lemon zest

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Fit pastry shell into pie pan and place in freezer.
  • To Make Apple Filling: Place apples in a large bowl. In a separate bowl combine 2 tablespoons flour, white sugar, 1/2 teaspoon cinnamon, nutmeg, and allspice. Mix well, then add to apples. Toss until apples are evenly coated.
  • Remove pie shell from freezer. Place apple mixture in pie shell and dot with 2 tablespoons butter or margarine. Lay a sheet of aluminum foil lightly on top of filling, but do not seal.
  • Bake in preheated oven for 10 minutes.
  • While filling is baking, make Streusel Topping: In a medium bowl combine 3/4 cup flour, 1/2 teaspoon cinnamon, brown sugar, oats, and lemon peel. Mix thoroughly, then cut in 1/2 cup butter or margarine until mixture is crumbly. Remove filling from oven and sprinkle streusel on top.
  • Reduce heat to 375 degrees F (190 degrees C). Bake an additional 30 to 35 minutes, until streusel is browned and apples are tender. Cover loosely with aluminum foil to prevent excess browning.

Steps:

  • For topping:
  • Combine brown sugar, oats, flour, and salt in large bowl; toss to blend. Add butter and rub in with fingertips until mixture comes together in moist clumps. Cover; chill while preparing filling. (Topping can be prepared 1 day ahead; keep chilled.)
  • For filling:
  • Preheat oven to 375°F. Generously butter 13x9x2-inch glass baking dish. Combine cranberries, apples, sugar, and apple juice in heavy large pot. Bring to boil over medium heat, stirring often. Boil until cranberries are tender and juices thicken slightly, about 5 minutes. Transfer filling to prepared dish. Sprinkle topping over.
  • Bake crisp until filling bubbles thickly and topping is crisp and deep golden brown, about 40 minutes. Let cool 10 minutes. Serve with ice cream.

Steps:

  • To make the molten chocolate filling, add the chocolate and butter to a small microwave safe bowl or glass measuring cup. Microwave on 30 second intervals, stirring after each until melted and smooth. This took me about 1 minute. In a separate bowl, whisk together the egg and sugar until very pale in color, about 3 minutes. Stir the melted chocolate into the egg mixture. Now stir in the salt. Place the bowl of chocolate in the fridge while you prepare the bread. Preheat the oven to 350 degrees F. Spray a 9x5 loaf pan thoroughly with nonstick spray.
  • Whisk together the pumpkin puree, canola oil, eggs, molasses, vanilla, and coffee in a medium size mixing bowl until smooth. Fold in the whole wheat flour, brown sugar, baking soda, salt and pumpkin pie spice until just combined. If the dough seems too dry, stir in the buttermilk. Pour the mixture into the prepared greased bread pan. To make the streusel, add the brown sugar, whole wheat flour, pecans, oatmeal and cinnamon to a mixing bowl. Add the softened butter and, using your hands, work the butter into the dry ingredients until everything is moist. Set aside.
  • Now grab the molten chocolate from the fridge, it should be slightly stiff by now. Using a spoon, push the pumpkin bread dough from the middle of the loaf pan to the sides. You want to create a little pocket in the middle of the pumpkin bread dough for the chocolate. It will want to sink back in, but just do your best. Spoon the chocolate into the middle of the bread, creating a row of chocolate right down the center of the loaf. Using another clean spoon, carefully lift the pumpkin dough that is on the side of the chocolate up and over the chocolate to inclose the molten layer. Don't worry if it is not perfect, the main goal is just to have one long row of chocolate running through the loaf. Once the chocolate is enclosed, spread the streusel over top of the bread dough. Bake for 50-55 minutes or until the top is lightly golden. Remove from the oven and let sit 5-10 minutes, then invert the bread out onto a clean surface. Sprinkle with powdered sugar if desired, slice and enjoy warm with cold milk or hot coffee!

2 (1/4 ounce) packages quick-rising yeast
1/2 cup water (110 degrees)
1 1/4 cups boiling water
1 cup quick-cooking rolled oats
1/2 cup light molasses
1/3 cup butter
1 tablespoon salt
5 3/4-6 cups all-purpose flour
2 beaten eggs
quick-cooking rolled oats
1 beaten egg white
1 tablespoon water

Steps:

  • Soften yeast in the warm water.
  • Combine the boiling water, 1 cup oats, molasses, butter and salt.
  • Cool to lukewarm.
  • Stir in 2 cup of the flour, beat well.
  • Add the softened yeast and 2 beaten eggs, beat well.
  • Stir in enough of the remaining flour to make a soft dough.
  • Turn out onto a lightly floured surface and knead until smooth and elastic about 8-10 minutes.
  • Shape into a ball.
  • Place in a lightly oiled bowl, turning once to grease the surface of the dough.

  • Punch dough down, turn out onto a lightly floured surface.
  • Divide dough in half and cover with the bowl.
  • Let rest 10 minutes.
  • Coat 2 well greased loaf pans with about 2 Tbsp of rolled oats per pan.
  • Shape dough into loaves.
  • Place the loaves into the pans.
  • Cover and let rise in a warm place until double (about 30- 45 minutes).
  • Mix the beaten egg white with the tablespoon of water.
  • Brush the tops of the loaves with this mixture.
  • Sprinkle the tops of the loaves with a few more rolled oats.
  • Bake at 375°F till done, about 40 minutes.
  • Cover loosely with foil during the last 15 minutes if the tops are browning too quickly.
  • Remove from pans and cool on a rack.
