Crumbly Strawberry Oatmeal jam bars made with a delectable oat crust and topping and filled with Smucker's® Fruit & Honey Strawberry Fruit Spread. This breakfast bar boasts a superior taste, one that will be enjoyed over and over again.

¾ cup cold butter (cut into pieces)
1½ cups all-purpose flour
1½ cups old fashioned oats
1 cup packed brown sugar
1 teaspoon baking powder
¼ teaspoon salt
pinch of cinnamon (optional)
¼ cup pecans (chopped - optional)
9 ounces strawberry honey jam (or any flavor) (Smucker's® Fruit & Honey Strawberry Fruit Spread OR any jam flavor)

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 x 9 pan with butter; set aside.
  • Slice cold butter into little pieces; set aside. In a medium bowl, combine flour, brown sugar, salt, baking powder and old fashioned oats. Add chopped pecans and cinnamon if using.
  • Whisk together until combined. Add sliced butter. Use a pastry blender to blend in the butter OR using a stand mixer with the paddle attachment, turn on low and allow mixture to crumb together. Don't over mix the batter, you want the mixture to be crumbly.
  • Spread just enough dough mixture on the bottom to cover it and gently press it in.
  • Spread Smucker's® Fruit & Honey Strawberry Fruit Spread onto crust then gently press remaining oat topping over the jam.
  • Bake in oven for 40-50 minutes or until golden brown.
  • Allow to cool. Slice and serve.

1-1/4 cups all-purpose flour
1-1/4 cups quick-cooking oats
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butter, melted
2 teaspoons vanilla extract
1 cup strawberry preserves
1/2 cup sweetened shredded coconut

Steps:

  • In a bowl, combine first five ingredients. Add butter and vanilla; stir until crumbly. Set aside 1 cup. Press remaining crumb mixture evenly into an ungreased 13-in. x 9-in. baking pan. Spread preserves over crust. Combine coconut and reserved crumb mixture; sprinkle over preserves. , Bake at 350° for 25-30 minutes or until coconut is lightly browned. Cool.

I knew I had butter, sugar and old-fashioned oats on hand, so I started brainstorming on what I could create with those simple ingredients. 1/2 c light brown sugar - firmly packed
1/2 c salted butter - softened
1/2 tsp vanilla
1 c all purpose flour
1/4 tsp baking soda
1/8 tsp salt
1 c old fashioned oats
3/4 c strawberry jam

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Using cooking spray, grease one 9x9 inch pan. (You could also line with greased parchment paper.)
  • 3. In a mixer combine all ingredients except butter and strawberry jam until well combined.
  • 4. Mix in softened butter until you have a nice crumbly mixture.
  • 5. Press about 2/3 of the mixture (about 1 1/2 to 2 cups) into the bottom of the baking dish.
  • 6. Heat jam in the microwave (in a microwave safe dish) for about 20 seconds, then stir. This will make step seven MUCH easier.
  • 7. Spread the strawberry jam evenly over the top, allowing room for a small border of oats at the edge. (about 1/4 to 1/2 inch)
  • 8. Sprinkle the remaining oat mixture over the top.
  • 9. Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.

1 cup flour
1 cup rolled oats
1/2 cup butter, softened
1/3 cup light brown sugar, firmly packed
1/4 teaspoon baking powder
1/8 teaspoon salt
3/4 cup strawberry jam

Steps:

  • Preheat oven to 375°F.
  • In a large bowl, mix everything together but the jam.
  • Measure out 2 cups of this mixture. Leave the rest in the bowl and set aside.
  • Take the 2 cups of the mixture and press it into the bottom of an 8 inches square pan, coated with cooking spray. Using a large spoon, distribute jam on top of the mixture in the pan. Spread it evenly all over. (I used the squeeze-bottle spread for this and it made this part of the process a lot quicker).
  • Take the remaining mixture and spread it over the jam. Press down lightly.
  • Bake 25 minutes.
  • Remove the pan from the oven and allow to cool for at least 15 minutes before cutting into bars.

1 teaspoon cornstarch
1 tablespoon freshly squeezed lemon juice from about 1/2 small lemon

1 tablespoon milk or 1 tablespoon cream

Steps:

  • Place a rack in the center of your oven and preheat to 375 degrees F. Line an 8×8-inch baking pan with parchment paper so that the paper overhangs two sides like handles.
  • In a medium bowl, combine the oats, flour, brown sugar, ginger, and salt. Pour in the melted butter and stir until it forms clumps and the dry ingredients are evenly moistened. Set aside 1/2 cup of the crumble mixture, then press the rest into an even layer in the bottom of the prepared pan.
  • Scatter half of the strawberries over the crust. Sprinkle the cornstarch evenly over the top, then sprinkle on the lemon juice and 1/2 tablespoon of the granulated sugar.   • While the bars cool, prepare the glaze: In a medium bowl, briskly whisk together the powdered sugar, vanilla, and milk until smooth. Feel free to add more milk if a thinner consistency is desired. Using the parchment-paper handles, lift the bars from the pan. Drizzle with glaze, slice, and serve.
