I have been making this recipe since my daughter was small. I love to serve it warm with home-made strawberry or blackberry jam. So yummy. Makes great sandwiches too.

2 (1/4 ounce) packages quick-rising yeast
1/2 cup water (110 degrees)
1 1/4 cups boiling water
1 cup quick-cooking rolled oats
1/2 cup light molasses
1/3 cup butter
1 tablespoon salt
5 3/4-6 cups all-purpose flour
2 beaten eggs
quick-cooking rolled oats
1 beaten egg white
1 tablespoon water

Steps:

  • Soften yeast in the warm water.
  • Combine the boiling water, 1 cup oats, molasses, butter and salt.
  • Cool to lukewarm.
  • Stir in 2 cup of the flour, beat well.
  • Add the softened yeast and 2 beaten eggs, beat well.
  • Stir in enough of the remaining flour to make a soft dough.
  • Turn out onto a lightly floured surface and knead until smooth and elastic about 8-10 minutes.
  • Shape into a ball.
  • Place in a lightly oiled bowl, turning once to grease the surface of the dough.
  • Cover and let rise in a warm place until double (about 1 hour).
  • Punch dough down, turn out onto a lightly floured surface.
  • Divide dough in half and cover with the bowl.
  • Let rest 10 minutes.
  • Coat 2 well greased loaf pans with about 2 Tbsp of rolled oats per pan.
  • Shape dough into loaves.
  • Place the loaves into the pans.
  • Cover and let rise in a warm place until double (about 30- 45 minutes).
  • Mix the beaten egg white with the tablespoon of water.
  • Brush the tops of the loaves with this mixture.
  • Sprinkle the tops of the loaves with a few more rolled oats.
  • Bake at 375°F till done, about 40 minutes.
  • Cover loosely with foil during the last 15 minutes if the tops are browning too quickly.
  • Remove from pans and cool on a rack.

1-1/2 cups boiling water
1 tablespoon butter
2 teaspoons salt
1/2 cup sugar
1 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
1/4 cup molasses
1/4 cup packed brown sugar
6 to 6-1/2 cups all-purpose flour, divided

Steps:

  • In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth. Stir in oat mixture and enough remaining flour to make a stiff dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a ball. Cover and let rest for 10 minutes; Shape into loaves. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until nearly doubled, about 1 hour. , Bake at 375° for 30-35 minutes (cover loosely with foil if top browns too quickly). Remove from pans to wire racks to cool.

360g home-milled rye berries or whole grain rye flour (2 ¾ cups flour)
100g home-milled oat groats or oat flour (1 heaping cup flour)
200g ripe sourdough starter (2/3 cup)
300g water (1 ¼ cups)
90g plain yogurt (⅓ cup)
22g honey (1 Tbsp)
10g salt (1 ¾ tsp)

Steps:

  • Starter/Levain
  • I made 200g of almost all-rye sourdough starter by feeding 40g starter with 80g water and 80g whole grain rye flour, and I used it when it was a little more than doubled in size. Other ways of building up this large amount of ripe starter are fine too.
  • Mixing and Bulk Fermentation
  • Combine all the ingredients in a large bowl and mix well. If possible, scrape the batter into a straight-walled dough bucket or separate out a tiny amount of dough to put in an aliquot jar to help track fermentation (explanation above, photo in the gallery below).
  • Cover and let the batter rise until it has expanded by about 75%. In my ~80°F lit oven, this was about five hours.
  • Shaping and Final Proof
  • Grease a non-stick loaf pan or line a regular loaf pan with parchment paper. I used a medium USA pan, which is 9 x 5 x 2.75 inches.
  • Scrape the batter out of your bowl or bucket directly into the loaf pan.
  • Repeatedly wet a spatula with water to smooth out the surface of the batter, dipping between the edges of the batter and the pan to create the curved edges of a loaf shape.
  • Sprinkle with rye flour if desired, cover, and let the batter rise about 2 centimeters. (See the gallery below for a sense of the expansion.)
  • Baking
  • Preheat your oven to 450°F for about 20 minutes with a pan on the bottom shelf. You'll pour boiling water into the hot pan when you load the bread into the oven. An alternate option for steam is to make a tight foil tent around the loaf pan and leave it on for the first 15-20 minutes of the bake.
  • Boil a cup of water.
  • Place the loaf pan in the oven and pour the boiled water on the hot pan below it, then quickly close the oven door.
  • Bake for 20 minutes, then lower the oven temperature to 390°F, and bake another 25-30 minutes. Rotate the pan if needed for even browning. The internal temperature of the bread should be over 208°F when it's done.
  • If possible, wait 24 hours before cutting the bread to let the inside set. You might want to rotate the loaf onto one long side and then the other during this setting period, so it doesn't get dense at the base. If you can't wait for the loaf to set, toast each slice to solidify the crumb.

Quick rye flour bread that is PERFECT for toasts and sandwiches.

500 ml lukewarm water
1 Tbsp apple cider syrup*
1 Tbsp active dry yeast
500 g rye flour
¾ cup oats, divided
1 ½ tsp sea salt

Steps:

  • Dissolve the yeast and apple cider syrup in the water, and let it sit aside for 10 minutes to become bubbly.
  • Grease loaf tin (10 x 27 cm / 4 x 10") with butter or oil, and coat the inside with ¼ cup of oats (leave some for topping).
  • Combine rye flour and ½ cup of oats with salt in the mixing bowl. Add yeast mixture and mix until you get smooth dough.
  • Transfer the dough to the prepared loaf tin and top with the remaining oats. Leave at warm place for 10-15 minutes to rest.
  • Turn the oven on to 180°C (350°F) and place the loaf in straight away (no preheating needed).
  • Bake your bread loaf for 90 minutes. Don't open the oven! If you do, the heat will escape, so you will need to add 10 more minutes to the baking time. When done, the crust should be golden brown.
  • Let the loaf cool in the tin for 5-10 minutes, then remove it to the cooling rack to cool down completely.
  • Slice it with the serrated knife and use for toasts, french toasts (my favorite!) or any way you like.** Enjoy!

1 large potato
140 ml warm water, from cooking potatoes
280 ml milk
1 1/2 teaspoons dried yeast
1 teaspoon sugar
1 1/2 tablespoons oil
700 g flour
1 tablespoon salt
150 g rolled oats

Steps:

  • Cook potato in enough water to cover.
  • Drain, retaining the water.
  • Measure 140 ml of potato water into a small bowl and set aside to cool to lukewarm. Don't discard the rest of the potato water - to this add the oats to soften.
  • Mash the potato well with a little of the milk.
  • When the potato water in the small bowl has cooled to lukewarm, add the yeast. Set this aside until it has a good frothy "head".
  • Mix remainder of milk and oil together.
  • Sift flour and salt into large bowl and make a well in centre.
  • Add the milk and oil, the mashed potato, frothy yeast, and the softened oats.
  • Mix well and knead until smooth and elastic - more flour may be needed but try to keep the dough as soft as possible.
  • Set aside to rise until double in size.
  • Knock back and knead very lightly.
  • Allow to rise a further 30 minutes and then divide into three and form into cob loaves.
  • Glaze with beaten egg and sprinkle with your choice of topping. I use either sesame seeds, poppy seeds or oats.
  • Bake 220 celsius for about 40 minutes.

Note: This calls for 2 cups whole wheat flour and 2 cups all purpose flour - I was out of whole wheat flour when I made this and used 4 cups of white instead and it was delicious, still plenty hearty from the oats and rye. Passive work time/cooking time includes rising time.

2 (1/4 ounce) packages yeast
3 cups warm water
1/4 cup molasses
2 cups flour
2 cups whole wheat flour
1 tablespoon salt
2 cups dark rye flour
2 cups rolled oats

Steps:

  • Stir the yeast into warm water in a large bowl, add molasses and stir till dissolved.
  • Add the white flour and the whole wheat flour, about 1 cup at a time, stirring well after each addition.
  • When all four cups of flour are stirred in, beat the mixture with a wooden spoon for about 10 minutes. It should be smooth and very soft.
  • Cover bowl with a towel and put in a warm place for 45 minutes.
  • The yeast sponge should rise considerably and be rather bubbly at the end of this time.
  • Now sprinkle salt over the sponge and fold together.
  • Add the rye flour and the oats, a little at a time and fold them together. The dough should be quite thick.
  • Add enough white flour to make the dough manageable and turn onto a floured board, and knead for about 20 minutes till smooth and elastic.
  • Cover and let rise till doubled.
  • Punch down and divide into two parts, forming each into a loaf. put into buttered medium loaf pans and let rise till doubled.
  • Bake at 350°F for 40-60 minutes (depends on your oven and how crusty you like your bread - my loaves were just right at about 40-45 minutes. I brushed the loaves with butter after baking to soften the crust).

1/2 cup oatmeal
1/2 cup whole wheat flour
1 cup water (boiling)
1 tablespoon honey
Optional: 1 tablespoon molasses
1 tablespoon oil
1 teaspoon salt
1/4 cup water (warm, about 110 F)
2 teaspoons yeast
Pinch of sugar
1 1/2 to 2 cups all-purpose flour or bread flour
Optional: oatmeal for sprinkling on top

Steps:

  • Gather the ingredients.
  • Mix the oats and whole wheat flour in a bowl.
  • Add the boiling water and stir.
  • Stir in the honey, molasses, if using, oil, and salt and let cool, about 1/2 hour.
  • In a small bowl, mix the warm water with the yeast and a pinch of sugar, stirring to dissolve yeast. Place in a warm spot for about 10 minutes until foam forms on the top of the mixture.
  • Add the yeast to the oat mixture and mix well.
  • Start adding the all-purpose flour 1/2 cup at a time until a firm dough forms.
  • Turn out on a lightly floured board and knead 4 to 5 minutes, until the dough is elastic and somewhat smooth.
  • Form the dough into a ball and place in a clean, oiled bowl, turning once to coat.
  • Cover the bowl with plastic wrap and place in a warm spot (70 to 85 F) until doubled in bulk, about 1 hour.
  • Shape the bread into a sandwich loaf and place it in the pan.
  • Spray the top of the loaf with water and sprinkle oatmeal or other desired topping on the bread.
  • Cover with a towel and let rise until almost double. (If steaming your bread, skip to the steaming instructions.)
  • Meanwhile, heat your oven to 450 F for 1/2 hour; if using a baking stone, heat for 1 hour.
  • Slash the top of the loaf with a sharp razor blade.
  • Place the loaf pan in the oven and turn down to 400 F. Bake for 30 to 40 minutes, or until the bread's internal temperature reaches 190 F.
  • Let the bread cool for about 1 hour or so before serving.
  • Place an old roasting pan on the rack below the baking stone (if using) or the rack below where the loaf pan will go. After you put the bread in the oven, fill the roasting pan with 2 cups of boiling water.
  • Using a squirt bottle, spray water on the sides of the oven two or three times within the first 5 minutes of baking.
  • Turn the oven down to 400 F and bake for 30 minutes or more, until the internal temperature of the bread reaches 190 F.
  • Bread steams itself dry, so let the loaf cool for at least 2 hours before slicing or it may seem gummy inside.
  • Enjoy!
