Steps:
- Preheat the oven to 375 degrees F. Spread the oats into a single layer on a baking sheet. Bake until lightly toasted, about 20 minutes. Cool the oats for 2 to 3 minutes on the sheet. Grind 8 ounces of the toasted oats in a food processor until they have the consistency of whole-wheat flour, about 3 minutes. Add the baking powder, cinnamon and salt to the food processor and pulse 2 to 3 times to combine. Set aside.
- Line baking sheets with parchment paper. Combine the butter and sugars in the bowl of a stand mixer and mix on medium speed using the paddle attachment until light in color, about 3 minutes. Stop once to scrape down the sides of the bowl. Reduce the mixer speed to the lowest speed and add the vanilla extract and egg. Mix to combine. Slowly add the flour mixture until just combined. Stop once to scrape down the sides of the bowl. Add the remaining toasted oats and the raisins, if using, and mix to combine.
- Scoop the dough with a 1 1/2-tablespoon disher onto the baking sheets, leaving 2 inches between each mound. Bake until the cookies begin to brown around the edges, 12 to 14 minutes, rotating the baking sheets halfway through. Cool on the sheets for 2 minutes, and then move to a cooling rack to cool completely.

This is an oatmeal raisin cookie developed to use vegetable oil instead of solid fats. It is a slight modification of one with which I won first place in a company sponsored contest where I work.

OATMEAL COOKIES #236
When I decided to post this recipe I thought there must be several oatmeal cookie recipes already posted. I was right! I went thru 235 oatmeal cookie recipes already posted but none of them, I found, have these same ingredients. These are truly delicious, moist and chewy oatmeal cookies. And you can interchange the baking chips. Try them with white chocolate chips or peanut butter chips. This recipe makes 6 dozen cookies but bake half and freeze the other half for another day. I lay out film wrap and roll part of the prepared dough into logs and then wrap again in foil. Freeze until ready to use and then slice and bake.

Steps:
- Pre-heat oven to 375 degrees.
- In large mixing bowl beat butter and brown sugar until smooth and creamy.
- Add eggs, molasses and vanilla and combine well.
- In another bowl combine oats, flour, baking powder, salt, baking soda and cinnamon, stirring to mix together.
- Add dry ingredients slowly to the butter mixture, mixing until all dry ingredients are incorporated.
- I do this using a wooden spoon because the dough becomes too thick for an electric mixer.
- Add pecans, both kinds of baking chips and dried cranberries last.
- Continue mixing by hand until all ingredients form a stiff dough.
- Measuring about a tablespoon of dough for each cookie, place on lightly greased cookie sheet.
- This cookie dough will not spread while baking so you might want to flatten each mound of dough just slightly with fingers or back of spoon.
- Bake at 375 for 8 to 10 minutes or until cookie begins to brown.
- Carefully Remove baked cookies from baking sheet as soon as they come out of the oven.
CHEWY OATMEAL COOKIES

LOW FAT APPLE-PECAN OATMEAL COOKIES
This recipe is the result of my tinkering with other lowfat oatmeal cookie recipes in an effort to make them moister. The addition of milk results in a softer, cakier cookie. Great for snacks or even breakfast!

H.O. 'S OATMEAL COOKIES
I guess I'm showing my age when I remember H.O. oatmeal? I don't know if that brand exists anymore, but the recipe came from the box panel and boy were they good. Nothing fancy, just pure and simple ingredients make these wonderful oatmeal cookies. HO oats were quick cook oats and that they were small and powdery in texture. Maybe that's why there was no flour in the recipe??? Since I use whole oats which are hard to stick together; I put my oats in the food processor and pulse a few times which breaks them down and makes a kind of flour out of them.
