SOFT OATMEAL COCONUT CHOCOLATE CHIP COOKIES

These cookies are soft and chewy and didn't last a day after making them! Once I thought I HATED coconut, but these made me realize I just didn't like overly sweet coconut. These are fabulous! Made with whole wheat flour and oatmeal, it's a better alternative to the traditional cookie.

1 ½ cups brown sugar
1 cup solid vegetable oil-butter spread (such as Smart Balance® sticks), softened
1 egg
1 teaspoon vanilla extract
1 teaspoon baking soda
¼ teaspoon salt
2 cups shredded unsweetened coconut
1 ½ cups whole wheat flour
1 cup rolled oats
1 cup dark chocolate chips
1 cup chopped unsalted almonds
1 tablespoon plain Greek yogurt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat brown sugar, vegetable oil butter spread, and egg with an electric mixer in a bowl until smooth. Stir in vanilla extract, baking soda, and salt. Add coconut, flour, and oats; stir until just moistened. Fold in chocolate chips, almonds, and yogurt.
  • Drop spoonfuls of the dough 2 inches apart onto ungreased baking sheets.
  • Bake in the preheated oven until golden brown, 9 to 11 minutes.

1 cup sweet unsalted butter
1 cup brown sugar, packed
6 tablespoons sugar
2 large eggs
1 1/2 teaspoons vanilla
1/2 teaspoon salt (optional)
1/2 teaspoon baking soda
1 cup flour
2 1/2 cups oatmeal (rolled oats)
1 1/2 cups coconut (more or less to taste if you'd like)
2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 325F.
  • Beat butter and sugars together at High speed until fluffy.
  • Add eggs and beat on medium speed until blended.
  • Beat in vanilla, baking soda and salt until mixed in fully.
  • Add flour and mix at low speed until blended.
  • Stir in oats, coconut and chocolate using spoon.
  • Arrange in mounds on baking sheets. Pat down if desired.
  • Cook 12-14 minutes.
  • Cool one minute before transferring to cooling rack.

1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2-1/2 cups quick-cooking oats
1 package (11-1/2 ounces) milk chocolate chips
2 cups chopped walnuts
1-1/2 cups All-Bran cereal

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the remaining ingredients. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

1 cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the milk and vanilla. Combine the flour, baking soda and salt; stir into the sugar mixture until well blended. Stir in the oats, chocolate chips. walnuts and coconut until evenly distributed. Drop by rounded tablespoons onto ungreased cookie sheet.
  • Bake 10 to 12 minutes in the preheated oven for a chewy cookie or 14 minutes for a firmer cookie.
  • Cool for 1 minute on the cookie sheet and then remove to wire rack. Cool completely and then store in tightly sealed container.

I saw someone else with somewhat of a similar recipe and I tweaked everything. It's much healthier than the recipe I looked at originally. Make sure to take out the cookies immediately when they are ready. If they stay in the oven, they will quickly become too hard.

1/2 cup shortening
3/4 cup light brown sugar
3/4 cup granulated sugar
1 large egg
2 egg whites
1 teaspoon vanilla extract
1/2 cup butter (I used a little less than that... like 1/3ish)
1 cup all-purpose flour
1 cup wheat flour
2 cups rolled oats
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup shredded coconut
1/2 cup cranberries
1/2 cup white chocolate chips

Steps:

  • Preheat oven to 350.
  • Cream shortening, butter, and the sugars.
  • Add eggs and vanilla then blend well.
  • In a new bowl, mix all of the dry ingredients except for the coconut.
  • Mix the coconut.

I also feel that for a cookie it is almost good enough to eat for breakfast!!!! It was adapted from The Mason Jar Cookie cookbook. For a mason jar gift - mix the flour and baking soda and powder together really well and then layer dry ingredients into jars.

1 cup unbleached white flour (sifted not packed)
1 cup all-bran cereal (crushed after measuring)
1 cup quick-cooking oatmeal
1/2 cup chocolate chips
1/2 cup dried fruits (raisins, cranberries and or or apricots) or 1/2 cup white chocolate chips
3/4 cup brown sugar
1/2 cup white sugar
2 tablespoons desiccated coconut
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, softened
1 egg
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350°F.
  • Place all of the dry ingredients in a medium-sized bowl, and stir until well combined. Set aside.
  • Place the butter, egg and vanilla extract in a large bowl and cream with an electric mixer set on low speed or with a fork.
  • Add the dry ingredients to the butter mixture and mix with a spoon or hands (for best results) until well combined. At this point add water if dough is dry.
  • Drop the dough by heaping teaspoonfuls, or larger to suit your taste, onto an ungreased baking sheet, spacing the cookies about 2 inches apart to allow for spreading.
  • Bake for 9 to 11 minutes, or until light brown in color. Allow to cool for 5 minutes on the baking sheet. Then transfer to wire racks and cool completely.
  • Serve immediately, or store in airtight container for up to 2 weeks.
