1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
3 cups quick cooking oats

Steps:

  • In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
  • Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

75g wholemeal flour
1 tsp baking powder
75g porridge oats
50g caster sugar
75g butter
1 tbsp golden syrup
2 tbsp milk

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a baking tray with baking parchment.
  • Sift the flour into a bowl. Mix in the baking powder, porridge oats and sugar.
  • Melt the butter, syrup and milk in a small saucepan or in the microwave and stir.
  • Add to the dry ingredients. Mix until the liquid covers all the oat mixture and until well combined.
  • Spoon onto a baking tray and shape into rounds, leaving space between each biscuit as they will spread whilst cooking.
  • Bake for 10-15 mins, or until golden brown. Leave to cool for 5 mins before removing from tray.

2 cups (200 g) One Degree Organics Sprouted Rolled Oats, half of them blended into oat flour (1 cup oat flour, 1 cup rolled oats)
1 tbsp (7 g) ground One Degree Organics Flax Seeds
4 tbsp water
¼ cup (60 g) tahini (or another nut or seed butter of choice)
¼ cup (80 g) maple syrup
½ tsp sea salt
½ tsp baking powder
¼ cup One Degree Organics Hemp Seeds
¼ cup raisins
¼ cup dairy-free chocolate chips

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix the ground flax and water together in a medium to large-sized mixing bowl.
  • Blend half of the rolled oats into fine oat flour.
  • Add the tahini and maple syrup to the flax mixture and whisk together until smooth.
  • Add the rolled oats, oat flour, sea salt and baking powder to the mixing bowl with the wet ingredients.
  • Fold in the hemp seeds, raisins and chocolate chips.
  • Spray a baking tray with non-stick cooking spray or line with parchment paper or a silicone baking-mat.
  • Shape the dough into 12 equal-sized cookies and place on the baking tray.
  • Bake for 14 minutes.
  • Let the cookies cool on the pan for 5-10 minutes before handling then transfer to a cooling rack to cool completely before storing.
  • Once cooled, the cookies can be stored in a sealed container at room temperature for up to 4 days, in the fridge for up to 1 week or in the freezer for up to 3 months.

Steps:

  • Preheat your oven to 375°F (190°C). Then line to large cookie sheets with parchment paper and set aside.
  • In a medium bowl combine the dry ingredients, apart from the sugars. Set aside.
  • In a large bowl cream together the butter, white and brown sugar. Once light and fluffy add the egg and the vanilla and whip until combined
  • Add the dry ingredients into the wet and mix with a spatula until the flour has just absorbed, do not over mix.
  • Lastly, fold in the oats and the raisins.
  • using a tablespoon measure scoop heaped tablespoons of the cookie dough onto your lined cookie sheet, leaving about 1 1/2 to 2 inches between the cookies.
  • Bake for about 9-10 minutes or until the cookies are golden brown and slightly risen. Don't be tempted to bake for longer or you will lose the gooey center.
  • Allow the cookies to cool slightly before transferring onto a wire rack to cool fully. Enjoy!
  • Store in an airtight container for up to 3 days at room temperature.

1 cup quick oats
3/4 cup whole wheat flour (spooned and leveled)
1 & 1/2 teaspoons baking powder
1 & 1/2 teaspoons cinnamon
1/2 teaspoon kosher salt (scant)
2 tablespoons butter (melted and cooled)
1 teaspoon vanilla
1 large egg
1/2 cup honey
1/2 cup to 3/4 cup dark chocolate chips (divided)

Steps:

  • Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper or a silpat.
  • Pull out 2 medium bowls, one for dry ingredients, one for wet.
  • In one bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
  • Melt the butter in the other bowl. You don't have to melt it all the way, if there are a couple lumps it's okay. Let cool slightly.
  • Whisk in the vanilla, then the egg. Whisk in the honey.
  • Add the wet ingredients to the dry ingredients and use a wooden spoon to stir until it has just come together (don't overdo it).
  • Save out about half of the chocolate chips. Use a sharp knife to roughly chop the remaining chocolate, then fold it into the dough.
  • Refrigerate the dough for about 30 minutes, or freeze for about 15 minutes.
  • Use your hands to shape the dough into roughly 15 cookies (or 12 if you eat a lot of dough like me...)
  • Place on the prepared baking sheet about 2 inches apart.
  • Bake in the preheated oven for about 12-13 minutes, or until they have just started to brown on the edges.
  • Once you remove them from the oven, immediately press the remaining chocolate chips into the tops of the cookies.
  • Let cool on the pan for a few minutes before removing to a cooling rack.
  • Drink with lots of milk!

175 g self raising flour
75 g porridge oats
175 g granulated sugar
1 teaspoon bicarbonate of soda
1 teaspoon baking powder
175 g butter
2 tablespoons golden syrup

Steps:

  • Preheat the oven to Gas 4/180°C.
  • Grease 2 large baking sheets.
  • Put flour, oats, sugar, bicarb and baking powder in a bowl.
  • Put the butter and syrup into a pan over a low heat, stirring until the butter combines with the syrup. Pour into the bowl with the dry ingredients, and stir until well combined, using your hands to keep the dough together.
  • Turn the mixture out of the bowl and divide into 28. Shape it into balls about 2 cm thick.
  • Arrange on the baking sheets, but not too close as they spread! Press the tops to flatten a little.
  • Bake for 12-15 minutes until golden and firm.

50 g (1/4 cup) rolled oats
1 egg
2 tablespoons coconut oil or vegetable oil
80 ml (1/3 cup) pure maple syrup
2 tablespoons milk (any kind)

Steps:

  • Preheat the oven to 180°C (350°F) (without fan).
  • Line a baking tray with baking paper.
  • Place all of the ingredients into a food processor.
  • Blitz until everything is well-combined.
  • Pinch off a tablespoon of the mixture and roll it into a ball. Alternatively, use a small ice-cream scoop with 15 ml (1 tablespoons) capacity (which I recommend as the mixture is very sticky).
  • Place the balls of dough onto the lined baking tray.
  • Place the extra flour onto a small plate and dip a fork into the flour.
  • Gently flatten the balls of dough with the floured fork.
  • Sprinkle with extra dessicated coconut.

1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
1 teaspoon ground cinnamon (optional)
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
1 cup (200g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
2 large eggs, at room temperature
1 Tablespoon unsulphured or dark molasses*
2 teaspoons pure vanilla extract
3 cups (240g) old-fashioned whole rolled oats
1 and 3/4 cups semi-sweet chocolate chips*

Steps:

  • Whisk the flour, cinnamon, baking soda, and salt together in a medium bowl. Set aside.
  • In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter on medium-high speed until smooth, about 1 minute. Add the brown sugar and granulated sugar and beat on medium-high speed until creamed, about 2 minutes. Add the eggs, molasses, and vanilla and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, beat in the oats and both types of chocolate chips. Dough will be thick and sticky. Cover and chill the dough for at least 45 minutes in the refrigerator (and up to 4 days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.
  • Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • Use a large cookie scoop to scoop the cookie dough, about 3 Tablespoons of dough per cookie, and place 4 inches apart on the baking sheets. Bake for 13-14 minutes or until lightly browned on the sides. The centers will look very soft.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. While the cookies are still warm, I like to press a few more chocolate chips into the tops- this is only for looks!
  • Cookies stay fresh covered at room temperature for up to 1 week.

Steps:

  • In a small bowl, whisk flaxseed and water. Let sit for about 10 minutes while you are getting other ingredients ready.
  • Preheat oven to 350 degrees F, line large baking sheet with unbleached parchment paper and spray with cooking spray.
  • In a large bowl, mash bananas. Add coconut oil, vanilla extract, cinnamon, baking soda and salt.
  • Add flaxseed mixture and whisk really well.
  • Add oats and oat flour; stir to combine. Add nuts and dried fruit; mix well. Dough will be very thick.
  • Using large ice cream scoop, place batter on previously prepared sheet and flatten with the back of a scoop into large size cookies. Cookies do not spread. I had about 6 cookies per sheet. Bake in batches for 20 minutes or until nuts start to brown a bit.
  • Remove from the oven and let cookies cool for a minute, then transfer onto a cooling rack to cool off completely. Enjoy for breakfast, snack or a healthy dessert!

1/2 cup unsalted butter
1/2 cup maple syrup

Steps:

  • Preheat oven to 350ºF. Line a baking sheet with parchment paper and set aside.
  • Place oats into a food processor and blend for 15-20 seconds to lightly pulverize, shredding them into smaller pieces. If you're using quick cooking oats, omit this step.
  • Add oats, flour, baking powder, cinnamon, and salt to a bowl and mix well. Set aside.
  • Using a standing mixer, cream butter and brown sugar together on medium/high speed until light and fluffy.
  • Scrape the sides of the bowl and then turn the mixer on low speed and slowly add the maple syrup to the butter and sugar. Beat on medium/high until light and fluffy.
  • Add egg and continue mixing. Scrape the sides of the bowl, add vanilla, and mix until light and fluffy.
  • Slowly add dry ingredients (everything but the chocolate chips) to wet ingredients, 1/4 cup at a time, mixing on low. Last, fold in mini chocolate chips.
  • Place the cookie dough in the refrigerator for 30 minutes to harden and to allow the flour in the cookie dough to hydrate.*
  • Using a tablespoon cookie scoop, roll dough into ball and slightly flatten between your palms. Place on cookie sheet and bake for 8-10 minutes.

Steps:

  • Preheat oven to 350 degrees. Line rimmed 18 by 13-inch baking sheets with parchment paper or silicone baking mats.
  • In a mixing bowl whisk together flour, cinnamon, baking soda, baking powder and salt for 20 seconds, set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment cream together butter, brown sugar, and granulated sugar until combined.
  • Mix in one egg, then blend in second egg and vanilla.
  • Add flour mixture and mix just until combined then mix in oats, raisins and walnuts.
  • Scoop dough out and shape into 1 1/2-inch balls (or 40 grams each), transfer to prepared baking sheet fitting 12 per sheet and spacing 2-inches apart.
  • Bake in preheated oven until golden brown on edges and nearly set (center should look under-baked), about 12 - 14 minutes.
  • Let cool on baking sheet for a few minutes then transfer to a wire rack to cool completely. Repeat with remaining dough.
  • Store in an airtight container at room temperature.

Steps:

  • Preheat oven to 325 degrees. Line two light-colored baking sheets with parchment paper and set aside.
  • In a large bowl, cream butter and sugars together until light and fluffy, about 3-4 minutes. Stir in eggs and vanilla until well combined.
  • Slowly incorporate remaining ingredients until the dough has just come together. Scoop into cookies and place on prepared sheets. Bake 9-12 minutes or until edges are golden brown and the centers are soft but not gooey.
  • Cool 5 minutes on the hot baking sheet before transferring to cooling racks. Store in airtight containers for up to 3 days.
