1 ½ cups milk
3/4 cup plain, nonfat Greek yogurt
1/2 cup vegetable oil
4 cups Raisin Bran cereal
1/2 cup granulated sugar
1/2 cup brown sugar (, packed)
2 large eggs
1 ¾ cups all-purpose flour
1/2 cup rolled oats
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup dried cranberries
1/2 cup dried apples (in small pieces)
1/4 cup chopped pecans or walnuts ((optional))
2 tablespoons raw sugar ((optional))

Steps:

  • Preheat oven to 400 F. Grease 2 12-cup muffin tins.
  • In a large bowl, stir together milk, yogurt, and oil.
  • Stir in cereal, and let stand for 5-10 minutes to soften.
  • Stir in sugars until combined.
  • Add eggs, and stir until incorporated.
  • Add flour, oats, baking soda, salt, and cinnamon; stir until just combined.
  • Stir in dried cranberries and apples.
  • Divide batter evenly among prepared muffin cups.
  • If using, sprinkle nuts and sugar evenly over muffin batter.
  • Bake for 15-20 minutes, or until muffins spring back when lightly touched.
  • Cool in pan for 5-10 minutes before removing.

The original recipe comes from one of my mom's many muffin cookbooks, wish I remembered which one. I've played with it a bit but this is close.

1/2 cup whole wheat flour
1/4 cup all-purpose flour
2 tablespoons all-purpose flour
2 tablespoons Splenda sugar substitute or 2 tablespoons Equal Spoonful
1/4 teaspoon salt
1 tablespoon baking powder
1/4 teaspoon cinnamon
1 1/2 cups unprocessed natural bran
1 1/2 cups quick-cooking oatmeal
3/4 cup low-fat buttermilk
1 tablespoon low-fat buttermilk
1/4 cup apple juice concentrate
2 tablespoons vegetable oil
2 egg whites
1 tablespoon honey
1/2 cup currants or 1/2 cup regular raisins
1/2 cup hot water

Steps:

  • Preheat oven to 400°F.
  • Sift flours, Splenda/Equal, baking powder, cinnamon and salt together mixing well; add in the bran and oatmeal.
  • In a second bowl, use a mixer to blend the buttermilk, apple juice concentrate, egg whites, honey about 2 minutes.
  • Pour dry ingredients into wet stirring until just moist; gently mix in golden raisins and hot (not boiling) water.
  • Spoon batter into muffin tins with cups or lightly sprayed with cooking spray.
  • Bake 20 minutes until just browned and firm.

1 tablespoon baking powder
1 teaspoon cinnamon
2 ounces brown sugar or 2 ounces honey
1 tablespoon vegetable oil
1 eggs or 2 egg whites
1/2 cup raisins
1/2 teaspoon salt (optional)
11 ounces milk

Steps:

  • Combine the oat brain, baking powder and cinnamon.
  • Add the remaining ingredients and mix well.
  • Let stand for 5 minutes to allow the batter to thicken.
  • Spoon into a prepared muffin tin.

Steps:

  • Preheat oven to 375°F with rack in middle. Butter muffin pan.
  • Whisk together flour, oat bran, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  • In a separate bowl, whisk together buttermilk, honey, butter, and eggs. Add to dry ingredients along with raisins and stir until just combined.
  • Divide batter among muffin cups. Bake until a wooden pick inserted into center of a muffin comes out clean, about 20 minutes. Turn out onto a rack to cool.

This recipe is from a Williams-Sonoma catalog, which I (of course!) tweaked to suit my own tastes. I love it--it's my favorite "bran" muffin. You can make the mix and keep it in the fridge for 2 weeks if you need to, making as few or as many muffins as you like each day.

1/2 cup chopped toasted pecans
1 cup 100% all-bran cereal
1 cup boiling water
4 ounces unsalted butter, room temp
1 1/2 cups sugar
2 cups buttermilk
2 large eggs, beaten
1 teaspoon vanilla or 1 teaspoon orange extract
2 cups all-purpose flour
2 cups all-bran cereal
1/2 cup old fashioned oats
2 1/2 teaspoons baking soda
1/2 teaspoon kosher salt
3/4 cup raisins (or craisins, or dried cherries, or currants, or dried blueberries...)

Steps:

  • In a bowl, combine the 100% Bran cereal with the boiling water and let stand until cool.
  • In the bowl of your mixer on high speed, beat the butter and sugar until light and fluffy.
  • Add the buttermilk, eggs, extract, and soaked bran, mixing well and scraping down the bowl after each addition.
  • Add the flour, All-Bran, oatmeal, baking soda and salt.
  • Mix well.
  • Fold in the raisins and pecans.
  • Cover the mixture tightly and refrigerate for at least 2 hours, but you can refrigerate for up to 2 weeks.
  • Preheat the oven to 425°F.
  • Grease or line with paper liners 18 muffin cups.
  • Spoon the batter into each, filling them full.
  • Bake until browned on top and the edges are starting to pull away from the sides, about 25 minutes.
  • Remove from the oven and turn out onto a rack to cool for 10 minutes before serving.
  • Note: This recipe is great for when company comes--I make up a batch, and keep in the fridge.
  • Make as few or as many muffins as I like each morning.
  • My husband likes to have this in the fridge sometimes so he can bake himself a few muffins for breakfast or the commute into work.
  • Good "do ahead" mix.

A hearty, dense muffin that is healthier than most. Be sure to run the oat bran thru the blender before measuring; it makes it more like flour. Grind the nuts in a nut grinder. Do NOT use white, unbleached flour. It is hard to tell from looking at them if they are done, as they do not turn golden brown. They are similar to the color of milk chocolate both baked and unbaked.

1 cup whole wheat flour
1 teaspoon baking soda
1 1/4 teaspoons cinnamon

1/4 cup canola oil
3/8 cup honey
1/8 cup light molasses
1 cup buttermilk
3/4 cup raisins
1/2 cup walnuts

Steps:

  • Preheat oven too 375 degrees.
  • Grease and flour 12 holes of a large muffin tin.
  • Mix the first six ingredients in a bowl; set aside and work on the wet items.
  • In a second bowl beat the eggs, add the vanilla.
  • Mix in the oil and then honey and molasses. Stir until well mixed. Add buttermilk. Mix.
  • Pour wet ingredients into the bowl containing the dry ingredients. Mix until combined, but don't over stir it.
  • Blend in walnuts that have been chopped small and raisins.
  • Spoon into the tins about 3/4 full.
  • Bake 15 minutes. If unsure of the exact temperature of your oven, try 13 minutes. They get 'dry' if you over bake them.
  • Serve warm with butter.

6 tablespoons unsalted butter, melted, plus more for pans
2 cups unprocessed wheat bran
1 1/2 cup giant raisins
1 cup prune juice
1 cup plain nonfat yogurt
6 tablespoons unsulphured molasses
2 large eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Heat oven to 375 degrees. Lightly butter six giant-size muffin cups, or line them with paper liners.
  • Combine wheat bran, raisins, prune juice, yogurt, molasses, butter, eggs, and vanilla in a large bowl. Let stand for 10 minutes.
  • Whisk together flour, baking powder, baking soda, and salt in a small bowl. Stir dry ingredients into the bran mixture just until dry ingredients are moistened. Do not overmix.
  • Spoon 1 cup batter into each of the giant muffin cups. Bake in the center of the oven until a cake tester comes out clean, 27 to 30 minutes.
  • Turn muffins out of the pan, and let them cool on a rack.

  • Meanwhile, coat a regular pan of 12 muffins with cooking spray.
  • Make a hole in the center of the cereal preparation where you can beat your 2 eggs. Mix them with the preparation. Add the oil, the chocolate and the walnuts. Mix until well blended.

1 cup flour
1 tablespoon baking powder
1/2 cup brown sugar
1/4 cup honey
1 teaspoon cinnamon
1/2 cup dried apricot (or raisins, or nuts, or whatever)
1 egg, beaten (or 2 egg whites)
2 tablespoons oil
1 1/4 cups skim milk
1 teaspoon vanilla

Steps:

  • Preheat oven to 425 degrees.
  • In a large bowl combine oat bran, flour, chopped apricots, baking powder, brown sugar (save 2 tbs), and cinnamon.
  • Separately beat the egg with 2tbs of sugar until fluffy and light.
  • Warm up milk (just until lukewarm) and dissolve honey in it.
  • Mix milk, egg, oil and vanilla.
  • Blend together with dry ingredients, adding a bit more skim milk if the mixture seems too thick.
  • Line a muffin pan with paper baking cups.
  • Bake 18 to 20 minutes.
  • NOTE: It's almost foolproof, but you can test for doneness with a toothpick if you like: they should be moist but not wet.
  • To retain moisture, store in a plastic bag.
  • They're best served warm; reheating with the microwave works just fine.
