OAT AND VANILLA SHORTBREAD COOKIES - RACHEL ALLEN
These Oat and Vanilla Shortbread Cookies are from Rachel Allen's book Bake. These roll and slice cookies fill the kitchen with that gorgeous buttery aroma while they bake, these soft, buttery, golden melt-in your mouth cookies are additive!!

Steps:
- Preheat the oven to 180oC (350oF), Gas mark 4.
- Cream the butter in a large bowl or in an electric food mixer until soft.
- Add the icing sugar and vanilla extract and beat until the mixture is light and fluffy.
- Sift in the flour and baking powder, then stir in the oats and bring the mixture together to form a dough.
- Using a sheet of cling film to cover the dough, roll it into a log about 30cm (12in) long and 6cm (2 ½in) in diameter.
- Allow to chill in the fridge, covered in the cling film, for about 30 minutes until firm.
- Remove the cling film; slice the log into rounds about 5mm (¼in) thick and place slightly apart on a baking tray lined with parchment paper.
- Bake in the oven for 15 minutes or until light golden brown and dry to the touch.
- Carefully transfer the cookies to a wire rack to cool.

I cut this from the Winnipeg Free Press Food section on February 25, 2004 and decided to post it here for safe keeping! I plan to try this soon! Cook time does not include the 1 hour chill time for the dough.

Steps:
- Cream butter and sugar, add vanilla and beat until fluffy.
- Blend flour, baking soda, and rolled oats and then add to butter mixture.
- Mix well.
- Chill dough for 1 hour.
- Roll dough into balls and flatten with a fork.
- Bake on ungreased cookie sheet at 350 dgrees for 13 to 15 minutes until lightly browned.

MUM'S OATMEAL SHORTBREAD COOKIES
This was another of those treats that only showed up at Christmas :) I liked these. Very plain and dry so I could dunk them in a glass of milk. Now I like them with a hot chocolate or cup of tea.

Steps:
- 1. Pre-heat oven to 325F Cream butter, add sugar and vanilla and mix.
- 2. Sift and add flour, soda and salt.
- 3. Mix in rolled oats last
- 4. Form into two narrow rolls (in waxed paper) and place in the refrigerator to chill for a couple of hours.
- 5. Unroll the dough and slice fairly thick cookies. About 3/4". Bake on lightly greased cookie sheet for 30 minutes or less, depending on your oven. Finished cookies are very lightly browned.

This is our family recipe for shortbread oatmeal cookies, handed down through the Scottish side of the family. There is nothing better. They are definitely not low in fat.

- Preheat oven to 375 degrees F (190 degrees C).
- Dissolve the baking soda in the water.
- Combine the oats, flour and brown sugar. Cut in the butter until the mixture resembles coarse crumbs. Stir in the baking soda mixture and form dough into a ball. Either roll dough out to 1/4 inch thick and cut with cookie cutters or press dough into the bottom of one 9x13 inch baking pan.

- Whiz the oats in a food processor until they are quite fine. Then add the remaining ingredients and whiz again until the dough comes together.
- Roll out the dough on a floured work surface to a thickness of about 5mm (1/4 in). Cut into squares, circles or shapes with biscuit cutters and place on baking trays (no need to grease or line).
- Bake in the oven for 15-20 minutes or until pale golden and slightly firm. Remove from the oven and carefully transfer onto a wire rack to cool. These will keep for five or six days in an airtight container, and they freeze well too.
