Oat and Apple Cake image

This soft oat and apple cake is easy to make and can be served with honey or as-is with tea, cider or a glass of milk. A simple, sweet treat.

1 cup instant Oats
1/2 cup whole wheat flour
1 large apple
4 tbsp. honey
1/2 cup yogurt
1/4 cup raisins
3 tbsp. oil
1 tsp. cinnamon powder
1 tsp. baking powder
1/2 tsp. baking soda

Steps:

  • Preheat oven to 180C and grease a flat baking tray.
  • Grind oats into a fine powder.
  • Add ground oats, wheat flour, cinnamon powder, raisins, baking powder, baking soda in a large bowl and combine well.
  • Grate apple (I did not remove the peel, you can if you wish to).
  • Add grated apples, yogurt, honey and oil in another bowl and combine well.
  • Add dry ingredients in the wet ingredients, fold and mix with a spatula.
  • Pour the batter into the baking tray and bake for 25-30 minutes or till done.

When Gemma Stafford was growing up in Ireland, her mom always had a cake or crumble on hand just in case someone dropped by for a cup of tea and a chat. Like many traditional Irish desserts, her mom's weren't particularly complicated: What made them so good were ingredients like Irish butter, rhubarb from the garden and sour apples picked from a tree near the house. "In Ireland, everything is local," the chef says. When Gemma started cooking and baking professionally, she became known for over-the-top treats like birthday pound cake and peanut butter fudge ice cream pie (check out her recipes at biggerbolderbaking.com), but she still loves a simple, classic dessert like this one from her mom. 6 tablespoons cold salted butter, plus more for the pan
3/4 cup all-purpose flour
1/4 cup rolled oats
1/2 cup granulated sugar
Pinch of salt
1 stick salted butter, at room temperature
1/2 cup granulated sugar
2 teaspoons pure vanilla extract
2 large eggs
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/8 teaspoon salt
3 tablespoons milk
3 Granny Smith apples, peeled and thinly sliced
Confectioners' sugar, for serving

Steps:

  • Preheat the oven to 350˚ F. Butter a 9-inch round cake pan and line the bottom with parchment paper.
  • Make the streusel topping: In a medium bowl, combine the flour, oats, granulated sugar and salt. Next, rub in the cold butter until fully incorporated and you've reached the texture of coarse breadcrumbs. Set aside in the fridge while you make the cake.
  • Make the cake: Cream the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy. Add the vanilla, then beat in the eggs one at a time. In a medium bowl, combine the flour, baking powder, cinnamon and salt. Fold the dry ingredients into the wet ingredients with a rubber spatula along with the milk. Once the batter has formed, transfer it to the prepared pan and lay on the sliced apples, making sure they are arranged in one even layer. Cover the apples with all the streusel topping.
  • Bake the cake until the top is golden brown and crisp, 60 to 70 minutes. Remove from the oven and let cool slightly before turning out of the pan onto a rack. When ready to serve, dust the cake with confectioners' sugar.

VEGAN APPLE CAKE

Make this apple and almond cake to fill your cake tin. It's an ideal treat for anyone following a dairy-free or vegan diet, and is delicious for afternoon tea with a cuppa

150g dairy-free spread, melted, plus extra for the tin
300ml oat milk
1 tbsp lemon juice
350g self-raising flour, plus 1 tbsp to coat the apples
100g caster sugar
100g light brown soft sugar
1 tsp baking powder
1 tsp almond extract
300g Granny Smith apples, peeled, cored and chopped into 2cm cubes
2 tbsp flaked almonds

Steps:

  • Use the spread to butter a 20cm deep cake tin and line with baking parchment. Heat the oven to 180C/160C fan/gas 4. Pour the oat milk into a jug, add the lemon juice and leave to sit for 5 mins at room temperature.
  • Put the flour, both sugars and the baking powder in a large bowl, pour over the thickened oat milk mixture and almond extract, then add the butter and ½ tsp salt. Beat everything together using an electric whisk. Tip the apples into a second large bowl, sprinkle over the extra 1 tbsp flour and toss to coat. Fold the apples through the cake batter using a spatula, then spoon the mixture into the prepared tin and sprinkle over the almonds.
  • Bake in the centre of the oven for 1 hr-1 hr 20 mins, or until golden and firm to the touch. Leave to cool for a few minutes in the tin. Serve warm, or turn out onto a wire rack and leave to cool completely. Once cool, will keep in an airtight container for up to three days.

1/3 cup brown sugar, packed
1/8 teaspoon salt

1/4 cup margarine or 1/4 cup butter, cut into small pieces
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/3 cup apple juice
1 teaspoon vanilla
1 egg
1 1/2 cups apples, peeled and chopped

Steps:

  • Preheat oven to 350.
  • Combine flour, oats, sugar, brown sugar, salt and nutmeg in a bowl.
  • Cut in margarine with a pastry blender until mixture resembles coarse meal.
  • Reserve 1/2 cup of flour mixture for topping; set aside.
  • Add baking powder, soda, apple juice, vanilla and egg to remaining flour mixture.
  • Beat mixture at medium speed until blended; fold in chopped apple.
  • Spoon batter into a greased 8-inch round cake pan and sprinkle with the reserved 1/2 c flour mixture over top.
  • Bake for 30 minutes or until cake springs back when touched lightly in the center.
  • Cool on wire rack.

Steps:

  • Lightly spray cake tin (round or square medium size) with spray vegetable oil. Preheat oven to 180 degrees celsius (moderate heat).

500ml semi-skimmed milk
2 small cinnamon sticks
6 cardamom pods , bashed
2 Gala apples , peeled, cored and cut into 1cm cubes
200g jumbo porridge oats
1 egg , beaten
1 tsp vanilla extract
1 tsp baking powder
100g pecans , roughly chopped
320g blackberries
milk or fat-free yogurt and maple syrup, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the milk, spices and apple in a small saucepan. Cover, gently bring to the boil and simmer for 10-12 mins. Set aside to infuse for at least 15 mins.
  • Remove and discard the spices, then pour the apples and milk into a large bowl and roughly crush the apples with the back of a fork. Mix in the oats, egg, vanilla, baking powder, pecans and blackberries.
  • Tip into a 2-litre ovenproof dish and bake for about 30-35 mins until piping hot in the middle. Serve with milk or yogurt and maple syrup, if you like.
