6 tablespoons butter
2 shallots, finely chopped (about 3 tablespoons)
8 ounces portobello mushrooms, sliced
8 ounces white mushrooms, sliced
2 sprigs fresh thyme
1 tablespoon chopped fresh sage leaves, or 1 teaspoon dried sage
3 tablespoons all-purpose flour
3/4 cup sherry
3/4 cup heavy cream
2 pounds fresh green beans, trimmed
Frizzled leeks, recipe follows
Vegetable oil, for deep frying
1 leek
Superfine flour, for dredging (recommended: Wondra Flour)
Salt and freshly ground black pepper

Steps:

  • Melt 4 tablespoons butter in a large skillet over medium heat. Add the shallots and saute until translucent, about 3 minutes. Add the mushrooms, thyme and sage and saute until most of the liquid has evaporated, about 10 minutes. Stir in the flour and cook 5 more minutes. Next add the sherry and stir until thickened. Add the cream and simmer an additional 5 minutes. Set sauce aside. (Recipe can be made to this point up to 2 days before, refrigerated.)
  • Melt the remaining butter in a large skillet over high heat. Add the beans, toss to coat with the butter and saute until bright green, about 7 minutes. They'll still be crispy. Season with salt and pepper and place on a platter.
  • Bring the sauce to a simmer and spoon over the beans. Top with the frizzled leeks.
  • Heat a couple inches of oil to 350 degrees F in a large, heavy pot. To check the oil temperature, drop a bread cube into it. If the cube browns within 30 seconds the oil is hot enough.
  • Trim leek, slice in half lengthwise, and wash well under running water. Cut the root end off the leek and then cut each half lengthwise into long, thin strips.
  • Season flour with salt and pepper. Dredge leek strips in flour. Fry leeks for 1 to 2 minutes, or until crisp and golden. Drain on paper towels.

2 pounds fresh green beans, ends cut off
4 tablespoons butter, plus more for buttering the casserole dish
4 slices bacon, cut into 1/4-inch pieces
3 cloves garlic, minced
1/2 large onion, chopped
1/4 cup all-purpose flour
2 1/2 cups whole milk
1/2 cup half-and-half
1/4 cup chicken broth, plus more if needed
3 tablespoons sherry
1/8 teaspoon cayenne pepper
Freshly ground black pepper
3/4 cup grated sharp Cheddar cheese
3/4 cup grated Monterey Jack cheese
3 large jarred piquillo or roasted red peppers, diced
Onion Strings, recipe follows
1 large onion, very thinly sliced
2 cups buttermilk
1 to 2 quarts (4 to 8 cups) canola oil
2 cups all-purpose flour
1 scant tablespoon kosher salt
1/4 to 1/2 teaspoon cayenne pepper
Freshly ground black pepper

Steps:

  • Bring a pot of lightly salted water to a boil; prepare a bowl of ice water.
  • Cut the green beans in half if you like the pieces a little smaller. Blanch the green beans by dropping them into the boiling water and cooking them for about 1 1/2 minutes. Remove from the boiling water with a slotted spoon and immediately plunge them into the ice water to stop the cooking process. Drain the beans once they're cool and set aside.
  • Preheat the oven to 350 degrees F. Butter a casserole dish.
  • Add the bacon pieces to a skillet over medium heat. Cook for 2 minutes, then add the garlic and onion and continue cooking until the bacon is done (but not crisp) and the onions are golden brown, 4 to 5 minutes. Remove from the skillet and set aside.
  • In the same skillet, melt the butter over medium heat. Sprinkle the flour into the skillet and whisk immediately to evenly mix it into the butter. Cook for a minute or two, then stir in the milk, half-and-half, chicken broth and sherry. Cook, whisking constantly, until the sauce thickens, about 2 minutes. Add the cayenne, 1 1/2 teaspoons salt and some pepper, then the grated Cheddar and Monterey Jack. Stir until the cheese melts. If the sauce is too thick, splash in some chicken broth as needed. Add the peppers along with the reserved bacon/onion mixture and stir to combine.
  • Put the green beans in the prepared casserole dish. Pour the sauce over the green beans and stir gently to combine. Bake until the sauce is bubbly, about 30 minutes. Top with the Onion Strings.
  • Put the onion slices in a baking dish, cover with the buttermilk and soak for at least 1 hour.
  • Heat the oil in a Dutch oven or heavy-bottomed pot until a deep-frying thermometer registers 375 degrees F.
  • Combine the flour, salt, cayenne and some black pepper in a bowl. Grab a handful of the onions, throw them into the flour mixture, tap to shake off the excess and plunge into the hot oil. Fry until golden brown, a few minutes, then remove immediately to a paper towel-lined plate. Repeat until all the onions are cooked.

2 cloves garlic, smashed
Salt
2 Yukon gold potatoes, peeled and cut into 1-inch chunks, peels reserved
1 pound fresh green beans, trimmed and cut into thin strips on an angle
1 pound fresh green beans, trimmed and cut into thin strips on an angle
2 tablespoons olive oil
1/2 cup chopped Vidalia onion
1/2 serrano chile, seeded and chopped
8 to 10 sprigs fresh thyme
Freshly ground black pepper
1/2 teaspoon Hungarian paprika
1 pound baby bella mushrooms, sliced
1 tablespoon Worcestershire sauce
1 cup heavy cream, at room temperature
1/2 cup Mexican crema or sour cream
8 pickled jalapeno slices, finely chopped
6 ounces white Cheddar, shredded
Reserved potato peels, cut into thin strips and soaked in water at least 20 minutes
6 fresh sage leaves, finely chopped
6 sprigs fresh thyme, leaves stripped and gently chopped
Pinch Hungarian paprika
2 teaspoons olive oil
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8-by-8-inch baking dish and set aside.
  • For the casserole: Fill a large pot with water. Add the garlic and a small handful of salt. Bring to a boil and add the potatoes. Cook until fork tender, 6 to 8 minutes. Remove the potatoes and garlic with a slotted spoon to a sieve to let drain. To the same water, add the green beans. Bring back to a boil if needed, then simmer until the green beans are bright and tender, 6 to 8 minutes. Remove to a sieve.
  • In a saute pan on medium heat, add the olive oil, onions, serrano chile and thyme. Season with a pinch of salt, a grind or 2 of pepper and paprika. Cook until the onions are tender, and then add the mushrooms and Worcestershire sauce, and season again with salt and pepper. Cook until the mushrooms release some of their moisture and become tender, about 10 minutes. Remove the thyme sprigs and slowly stir in the heavy cream. Raise the heat until things begin to bubble. Cook at this temperature, while stirring, until the cream thickens a bit, 6 to 8 minutes. Once thickened, turn off the heat and stir in the crema.
  • In one large bowl, add the potatoes. In another large bowl, add the green beans. Add the jalapenos to the potatoes. Then, add three-quarters of the mushroom mixture to the potatoes and the rest to the green beans. Divide the cheese the same way into both bowls. Mash the potatoes until combined. Press into the bottom of the prepared baking dish. Stir the green beans until combined, and spread evenly over the top.
  • For the topping: Rinse the potato peels and dry as much as possible with paper towels. In a bowl, add the potato strips, sage, thyme, paprika and olive oil. Season with a pinch of salt and a grind or 2 of pepper. Toss and sprinkle evenly over the top of the green beans. Bake until the potatoes brown and begin to crisp on the edges, about 30 minutes.

1/4 cup all-purpose flour
2 tablespoons panko bread crumbs
1 teaspoon kosher salt
Nonstick cooking spray
2 tablespoons plus 1 teaspoon kosher salt, divided
1 pound fresh green beans, rinsed, trimmed and halved
2 tablespoons unsalted butter
12 ounces mushrooms, trimmed and cut into 1/2-inch pieces
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
1/4 teaspoon freshly ground nutmeg
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup half-and-half

Steps:

  • Preheat the oven to 475 degrees F.
  • Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick cooking spray and evenly spread the onions on the pan. Place the pan on the middle rack of the oven and bake until golden brown, approximately 30 minutes. Toss the onions 2 to 3 times during cooking. Once done, remove from the oven and set aside until ready to use. Turn the oven down to 400 degrees F.
  • While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Add the beans and blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
  • Melt the butter in a 12-inch cast iron skillet set over medium-high heat. Add the mushrooms, 1 teaspoon salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the half-and-half. Cook until the mixture thickens, stirring occasionally, approximately 6 to 8 minutes.
  • Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.

50g butter
2 tbsp olive oil
250g chestnut or button mushrooms, sliced
500g green beans, trimmed
50g flour
500ml milk
100g crispy onions

Steps:

  • Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
  • Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
  • Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.

2 tablespoons unsalted butter, softened
1/4 teaspoon salt

3 cups French-fried onions
2 tablespoons salt
1 teaspoon salt
2 lbs fresh green beans, ends trimmed, cut on the diagonal into 2 inch pieces
1/2 ounce dried porcini mushrooms, rinsed well
6 tablespoons unsalted butter
1 onion, minced
12 ounces white button mushrooms, cut into 1/4 inch slices
12 ounces cremini mushrooms, cut into 1/4 inch slices
2 tablespoons fresh thyme, minced
1/4 teaspoon pepper
3 garlic cloves, minced
2 tablespoons all-purpose flour
1 cup low sodium chicken broth
2 cups heavy cream

Steps:

  • For the topping: pulse the bread, softened butter, salt and pepper in a food processor until the mixture resembles coarse crumbs, about ten 1-second pulses. Transfer to a large bowl and toss with the onions; set aside.
  • For the beans: Adjust an oven rack to the middle position and heat the oven to 375 degrees. Bring 4 qt water to a boil in a large pot. Add 2 tbsp salt and the beans. Cook until bright green and slightly crunchy, 4 to 5 minutes. Drain the beans and plunge immediately into a large bowl filled with ice water to stop cooking. Spread the beans out on a paper towel-lined baking sheet to drain.
  • Meanwhile, cover the dried porcini mushrooms with 1/2 cup hot tap water in a small microwave-safe bowl; cover with plastic wrap, cut several steam vents with a paring knife, and microwave on high power for 30 seconds. Let stand until the mushrooms soften, about 5 minutes. Lift the mushrooms from the liquid with a fork and mince using a chef's knife (you should have about 2 tablespoons). Pour the liquid through a paper towel-lined sieve and reserve.
  • Melt the butter in a large nonstick skillet over medium-high heat until the foaming subsides, about 1 minute. Add the onion, button and cremini mushrooms and cook until the mushrooms release their moisture, about 2 minutes. Add the porcini mushrooms along with their strained soaking liquid, thyme, 1 tsp salt and pepper; cook until all the mushrooms are tender and the liquid has reduced to 2 tablespoons, about 5 minutes. Add the garlic and saute until aromatic, about 30 seconds. Add the flour and cook for about 1 minute. Stir in the broth and reduce the heat to medium. Stir in the cream and simmer gently until the sauce has the consistency of a dense soup, about 15 minutes.
  • Arrange the beans in a 3-quart gratin dish. Pour the mushroom mixture over the beans and mix to coat the beans evenly. Sprinkle with the breadcrumb mixture and bake until the top is golden brown and the sauce is bubbling around the edges, about 15 minutes. Serve immediately.

  • In a 1 1/2 quart casserole, mix soup, milk, soy sauce, pepper, green beans and 2/3 cup fried onions.

6 cups fresh trimmed and cut green beans (about 2 lbs) or 2 (16 ounce) packages frozen cut green beans
4 -6 cups fresh red potatoes, sliced about 1/4 inch
1 large onion, sliced
1 teaspoon dried dill weed
1 teaspoon salt
1/2 teaspoon pepper
1 can cream of chicken soup or 1 can other cream soup, undiluted
butter

Steps:

  • Spray the crockpot with cooking spray or lightly grease with butter.
  • Layer sliced potatoes, sliced onion and green beans, sprinkling with dill and salt and pepper as you go.
  • Dot with butter, about 1 tablespoon total, and add about 2 tablespoons of water.
  • Cover and cook on high for 4 hours (low, about 8 hours).
  • Stir in soup or sauce; turn to low and cook an additional 30 minutes or leave on warm until serving time or up to 4 hours.
