Easy and made with ingredients you can actually pronounce, this keto-friendly bread is perfect for all of your bread needs, and has only a few carbs per slice.

Number Of Ingredients 5

1 stick (8 tablespoons) unsalted butter, melted, plus more for buttering the pan
1 3/4 cups blanched almond flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
6 large eggs, at room temperature, separated

Steps:

  • Preheat the oven to 350 degrees F and butter a 9-by-5-inch loaf pan. Line the pan with a piece of parchment paper long enough to have a 2-inch overhang on 2 sides (this will help you lift the bread out of the pan).
  • Whisk the almond flour, baking powder and salt together in a large bowl. Whisk in the egg yolks and butter.
  • Beat the egg whites in another large bowl with an electric mixer on medium-high speed until they hold soft peaks. Stir about a third of the whipped egg whites into the almond flour mixture. Then gently fold in the remaining egg whites, being careful not to overmix (it's okay if there are some egg white streaks in the batter).
  • Pour the batter into the prepared pan and bake until golden brown and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Let cool completely in the pan on a rack. Use the parchment to help lift the bread out. Slice for sandwiches or toast or eat with a slather of butter. Wrap and store at room temperature for up to 5 days.

This is a delicious and healthy bread based on a recipe that came in the Recipe Booklet accompanying my Christmas present: the Cuisinart Convection Bread Maker! I cannot guarantee that this will work in a non-convection bread machine. This is for the large 2 pounder; the medium 1.5 pounder ingredients are in parens. Make sure that all ingredients are at room temperature, unless noted otherwise.

1 1/2 cups water, 80 - 90 F (1.25 cups)
2 1/2 tablespoons heavy cream, 90 F (2 tablespoons)
1 1/4 tablespoons molasses (1 tablespoon)
3/4 teaspoon salt (1/2 teaspoon)
1 1/4 cups whole wheat flour (1 cup)
2/3 cup vital wheat gluten (1/2 cup)
2/3 cup barley flour (1/2 cup)
2/3 cup oat flour (1/2 cup)
2/3 cup almond flour (1/2 cup)
2 1/2 tablespoons soy protein (2 tablespoons)
1/3 cup sunflower seeds (1/4 cup)
1/3 cup pumpkin seeds (1/4/ cup)
1/3 cup walnuts, chopped (1/4 cup)
1/3 cup pecans, chopped (1/4 cup)
2 1/4 teaspoons instant yeast (2.25 teaspoons) or 2 1/4 teaspoons bread machine yeast (2.25 teaspoons)

Steps:

  • Place ingredients into machine in the order recommended by its manufacturer.
  • Select the Low Carb setting.
  • Select Medium crust (or to taste).
  • Select dough size.
  • Press Start.
  • When cycle is completed, transfer bread to wire rack to cool.
  • Bread slices best when allowed to cool.

I made this bread this morning and it is very good. I like that its low carb. It doesn't have any sugar in it either, which is great for my diet. I used non-dairy ingredients as well. If you plan to add any seeds or nuts to your bread add them to the flour mixture before you put it into the machine as it only has one rising cycle when using this recipe.

1/2 cup water (warm 95-100'F)
1/2 cup soy coffee creamer (I used silk)
1 tablespoon vegetable oil
1/4 cup liquid egg substitute (room temperature)
1/4 teaspoon sea salt
1 cup vital wheat gluten, plus
2 tablespoons vital wheat gluten
1/2 cup oat flour
1/2 cup powdered soy protein concentrate
1/4 ounce fast rising yeast

Steps:

  • Mix the one cup plus the two tablespoons of wheat gluten, oat flour, salt and soy protein powder in a large bowl. You want to sift and combine the ingredients well. I put mine in the bowl of my stand mixer and used the whisk to sift them together.
  • Heat the silk creamer to slightly warm and then add the warm water and egg, mixing well as you add the egg so it doesn't cook.
  • Add the oil to the bottom of the bread machine. Then add into that your cream, water and egg mixture.
  • Carefully add the flour mixture to it floats on the top of the liquid. I sprinkled some of it on top so it wouldn't go into the liquid, then I slowly spooned the rest on top.
  • Sprinkle the yeast packet evenly on top of the flour mixture.
  • Set according to your bread machine instructions. I have a Breadman and I used setting 7 which is a 59 minute cycle. It has only one rising and is perfect for this bread.
  • Cool completely on a metal rack.
  • Bon Appetit.

  • Combine sunflower seeds, pumpkin seeds, flaxseeds and sesame seeds in a medium dry skillet; toast over medium heat, stirring, until light brown and starting to pop, 5 to 7 minutes.
