NUTTY APRICOT MUFFINS



Nutty Apricot Muffins image

I tried apricots when I didn't have the usual muffin ingredients one time - and this recipe is the result! We enjoyed them, and I've made them often since.

Time 45m

Yield 12 muffins.

Number Of Ingredients 13

1 cup dried apricots, cut up
1 cup boiling water
1/2 cup butter, softened
1 cup sugar
3/4 cup sour cream
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated orange zest
1/2 cup chopped nuts
TOPPING:
1/4 cup sugar
1/4 cup orange juice

Steps:

  • In a small bowl, combine apricots and water. Let stand 5 minutes. Drain well and set aside. In a large bowl, cream butter and sugar until fluffy. Add sour cream and mix well. Combine dry ingredients and add to butter mixture. Mix on low only until combined. Fold in orange peel, nuts and apricots. Batter will be very stiff. Spoon into well-greased muffin tins, filling each cup almost to the top. Bake at 400° for 18-20 minutes or until done. Combine sugar and orange juice; dip tops of warm muffins in mixture.

1 jar (10 to 12 ounces) apricot preserves

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In a small bowl, whisk flour and baking powder; gradually add to creamed mixture, mixing well. Fold in coconut and walnuts., Press two-thirds of dough onto the bottom of a greased 13x9-in. baking pan. Spread with preserves; crumble remaining dough over preserves. Bake 30-35 minutes or until golden brown. Cool completely in pan on a wire rack. Cut into bars.

These cookies have a great tart and sweet taste. These are not just a Christmas cookie, but they get asked for every year! You can substitute cranberry sauce for apricot preserve, or try doing half apricot and half cranberry, yum!

1 cup butter
1 cup white sugar
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 egg
1 teaspoon vanilla extract
1 cup apricot preserves
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter and sugar in a medium size mixing bowl. Mix flour, baking powder, salt, egg and vanilla extract into the butter-sugar mixture. Cool dough in the refrigerator for 1 hour.
  • On a lightly floured surface roll dough out to 1/4 inch thick. Cut the dough into rounds with a round cookie cutter or glass. Using the tip of a teaspoon place a small drop of apricot preserves into the middle of the circle. Brush edges with water and fold the dough over so that the cookie is in the shape of a half moon; seal edges Arrange on ungreased cookie sheets.
  • Bake for 8 to 12 minutes, or until golden brown. Dust the cookies with powdered sugar while still hot.

½ cup pecan halves
1 cup old-fashioned oats
1 cup all-purpose flour
¼ cup brown sugar
½ teaspoon ground cinnamon
¼ teaspoon baking soda
¼ teaspoon salt
½ cup chilled unsalted butter, cut into cubes
¾ cup apricot preserves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray bottom and sides of an 8-inch square baking dish with cooking spray.
  • Pulse pecans in a food processor until coarsely chopped, 3 to 5 times. Add oats, flour, brown sugar, cinnamon, baking soda, and salt; pulse 3 to 4 times.
  • Sprinkle butter cubes over the top of the flour-oat mixture. Pulse until butter is the size of small peas, 3 to 5 times.
  • Spread 1/2 of oat mixture into the bottom of the prepared baking dish, pressing down lightly. Spread apricot preserves over oat mixture to 1/4-inch of the edge. Top with remaining oat mixture and press down lightly.
  • Bake in preheated oven until golden brown, 35 to 40 minutes. Cool before cutting.

Crisco® Original No-Stick Cooking Spray
1/2 cup firmly packed light brown sugar
1 Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening, cut into slices
1 1/2 tsps. vanilla extract
1/4 tsp. salt
2 cups Pillsbury BEST® All Purpose Flour
2 cups finely chopped pecans
1/2 cup Smucker's® Caramel Flavored Topping
or 1 cup Crisco® Butter Flavor All-Vegetable Shortening
3 large eggs, separated
2 tbsps. water
1/2 cup Smucker's® Orchard's Finest® Coastal Valley Peach Apricot Preserves

Steps:

  • HEAT oven to 350 degrees F. Adjust rack to middle position. Coat two cookie sheets lightly with no-stick cooking spray.
  • BEAT brown sugar and shortening in medium bowl with an electric mixer at medium speed for 2 minutes or until fluffy. Scrape down sides of bowl. Add egg yolks, water, vanilla and salt. Beat until well combined. Add flour on low speed until well blended.
  • BEAT egg whites in a shallow bowl until foamy. Place pecans in a separate shallow bowl. Measure about two teaspoons dough for each cookie. Form into balls by rolling between your palms. Dip each dough ball into egg whites, then roll into pecans. Place on prepared cookie sheet. Using the back of a teaspoon or your thumb, make a rounded indentation in the top of each cookie.
  • BAKE 10 minutes. Remove from oven. It may be necessary to create the indentation once again with a spoon. Place about 1/2 teaspoon caramel topping into the indentation of each cookie. Then place about 1/2 teaspoon preserves on top of the caramel. Bake an additional 5 to 7 minutes or until lightly browned. Remove from oven. Allow cookies to cool on baking sheet for several minutes. Remove to cooling rack to cool completely.

Steps:

  • In a large bowl, combine the flour, sugar and baking powder. Cut in butter and cream cheese until mixture resembles coarse crumbs. Add coconut and preserves; mix well. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheet. Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks to cool completely. , In a small bowl, combine all the glaze ingredients. Spoon over cookies.

3/4 cup sugar, divided
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract

1-1/2 cups finely chopped dried apricots or dates
2/3 cup water
1 tablespoon hazelnut liqueur, optional
1 cup finely chopped pecans, optional

Steps:

  • In a large bowl, cream the butter, 1/2 cup sugar and brown sugar until light and fluffy. Beat in egg and vanilla. In another bowl, mix the flour, baking soda and salt; gradually beat into creamed mixture. Divide dough in half. Shape each half into a thick rectangle; wrap in plastic. Refrigerate until firm or overnight., In a small saucepan, combine the apricots, water, remaining sugar and, if desired, liqueur; bring to a boil, stirring occasionally. Reduce heat to medium; cook until liquid is almost evaporated, about 5 minutes. Stir in pecans if desired; cool completely., On a floured surface, roll each portion of dough into a 12x9-in. rectangle. Evenly spread half of the apricot mixture over each rectangle to within 1/2-in. of edges. Roll up jelly-roll style, starting with a long side; wrap in plastic. Refrigerate for 2 hours or until firm., Unwrap and cut into 1/4-in. slices. Place 1 in. apart on greased baking sheets. Bake at 350° for 9-12 minutes or until golden brown. A sticky, spicy and moreish pudding - brilliant way to round off a winter meal

6 medjool dates , stoned and roughly chopped (see try below)
handful chopped dried apricots
1 tsp ground spice
2 tbsp honey
150ml orange juice
handful chopped mixed nuts
1 madeira cake (loaf)

Steps:

  • Put the dates in a small pan with the apricots, spice and honey, then pour over the orange juice. Bring to the boil and cook for 5 mins, until the dates have broken down and you have a thick, syrupy sauce. Stir in the nuts.
  • Cut the cake in half lengthways, on the horizontal. Use a 150ml ramekin to cut out 4 circles from the cake. Divide the date mix between the 4 ramekins, then top with the circles of cake, pressing them down gently. Cover with cling film and microwave on high for 3 mins, then turn out onto a plate and serve with cream or ice cream.

1/2 cup finely chopped almonds

  • In a large bowl, cream shortening and 1 cup sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, salt and baking soda; gradually add to the creamed mixture and mix well. Number Of Ingredients 12

1 (1/4 ounce) package active dry yeast
1/4 cup warm water
4 cups flour
1 1/2 cups butter or 1 1/2 cups margarine
4 eggs
1/4 cup milk
3 1/2 cups ground walnuts
1 1/2 cups sugar
2 teaspoons cinnamon
2 (10 ounce) jars apricot filling
1/4 teaspoon baking powder
1/4 teaspoon almond extract

Steps:

  • Separate egg yolks from egg whites setting aside both.
  • Dissolve dry yeast in 1/4 cup warm water.
  • Work together flour and butter with a pastry cutter until the mixture resembles course meal.
  • Add egg yolks,yeast mixture and milk and mix well to combine (using your hands works best).
  • Divide dough into 3 portions, one slightly larger for bottom crust.
  • Cover& let sit in a draft free place to raise for 1/2 hour.
  • Meanwhile mix 3/1/2 cups ground walnuts with 1 cup of sugar and 2 tsp cinnamon.
  • Mix well and reserve 1/2 cup of the nut mixture for the topping.
  • Roll out larger portion of dough to fit a 15 x 10 sheet pan with 1 inch sides.
  • Place the dough in the bottom of the sheet pan and cover with the nut mixture.
  • Roll second sheet of dough to a 15x 10 rectangle and place on top of the nut layer.
  • Evenly spread 2 jars of apricot filling on the second layer of dough.
  • Roll third crust and place on top of the apricot layer.
  • Score the top layer of the dough into 1 1/2 inch squares.
  • Bake 350°F for 35 minutes and let cool on baking rack.
  • Meanwhile beat 4 egg whites with 1/2 cup of sugar until stiff peaks form.
  • Add almond extract and combine well.
  • Spread on top of cooled, baked crust being sure to spread to all edges of the pan to prevent shrinking a sweating of the meringue.
  • Sprinkle with reserved nut mixture.
  • Bake at 325°F for 15 minutes and let cool.
  • Store covered in the refrigerator, slicing into squares before serving.
