RICH NUT COOKIES
Steps:
- Preheat oven to 350 degrees F. In a mixer with a paddle attachment combine all the ingredients except confectioners' sugar and mix until smooth. Roll dough into balls about 1-inch in diameter, place on a greased cookie sheet 2 inches apart, and bake for 15 to 20. They should just be turning golden brown. Roll in powdered sugar while still hot.
PINE NUT COOKIES

Steps:
- Using an electric mixer, beat the butter, sugar, vanilla, fennel seed, and salt in a large bowl until light and fluffy. Beat in the egg. Add the flour and mix just until blended.
- Transfer the dough to a sheet of plastic wrap. Shape the dough into an 8-inch-long log. Wrap the dough in plastic and refrigerate for 2 hours.
- Preheat the oven to 350 degrees F. Line heavy large baking sheets with a silpat or parchment paper. Cut the dough log crosswise into 1/8 to 1/4-inch thick slices. Transfer the cookies to the prepared baking sheets, spacing evenly apart. Press the pine nuts decoratively atop the cookies. Bake until the cookies are golden around the edges, about 15 minutes.
FRUIT AND NUT COOKIES
Here is one of my favorite cookies. My Mom used to tell me that these were healthy breakfast cookies and would pack a couple in my lunch if I didn't have time to eat breakfast before school.

- Preheat oven to 350 degrees Fahrenheit.
- Combine brown sugar, sugar and vegetable oil thoroughly.
- Add egg and vanilla and beat well.
- Blend in banana, walnuts, coconut and raisins.
- Sift together flour, baking soda and salt.
- Add to first mixture along with oats.
- Blend until well combined.
- Shape dough into 1" balls; place on parchment paper lined baking sheet and press down with a fork which has been dipped in warm water.
- Bake for 12 to 14 minutes.
SPICE NUT COOKIES
From a free Penzey's recipe card. I haven't tried this recipe yet, but it sounds good! Note that the cookie dough (formed into a log) needs to rest in the refrigerator overnight.

- Sift together the dry ingredients, gradually add to the butter mixture and mix well.
- Stir in the nuts.

- The next day, preheat the oven to 375 degrees F. Slice cookies very thin (about 1/4 inch thick) and bake for 10 minutes or until lightly browned.

- Preheat the oven to 350°F Cream the butter and sugar together until light and fluffy. Add the egg and continue to beat until the mixture is light and fluffy.
- In a bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.
- Mix the banana mixture into the butter mixture. Mix together the flour, salt, and spices and sift into the butter and banana mixture and mix until just combined.
- Fold into the batter the pecans or chocolate chips if using. Drop in dollops onto parchment paper-lined baking sheet. Bake for 11-13 minutes or until nicely golden brown. Let cool on wire racks.
- Makes about 30 cookies.
CHERRY NUT COOKIES
A PRETTY cookie which will make your cookie tray at Christmas look good! The cherry and nut combination in a buttery base is delicious! A rolled type dough which can be made and baked later. These cookies freeze very well for make ahead plans. This basic cookie dough I have tried many times substituting different ad-ins.

- Mix softened butter and sugar until fluffy. Add eggs and vanilla, mixing well.
- Combine flour, baking soda and salt in a separate bowl and add to creamed mixture. Stir in candied cherries and pecans.
- Shape dough into long rolls about 2 inches in diameter. Wrap in wax paper and chill at least 4 hours. (May be made days ahead before baking and stored in refrigerator or freezer. Let dough thaw slightly before slicing.).
- Unwrap and cut into 1/4 inch slices; place on ungreased cookie sheet.
- Bake in a 350 degree oven for approximately 10 minutes.

I know everyone has their own version of the Classic Chocolate Chip Cookie, but in our house this is the ultimate Chocolate Chip Cookie recipe. - CREAM shortening and sugar with electric mixer at medium speed until light.
- ADD egg, milk and vanilla, beating until thoroughly blended.

- STIR in semi-sweet chocolate chips and walnuts with a spoon.

- Cream together the shortening and the sugar. Add the eggs and beat for 2 minutes. Beat in the vanilla, salt, sour milk, flour, cream of tartar, baking soda and cinnamon. Stir in the chopped walnuts. Drop cookies 3 inches apart on a baking sheet.
- Bake at 350 degrees F (175 degrees C) for 12 minutes. Chopped dates can be added for extra flavor.
