CHICKPEA & NUT BURGERS WITH SWEET POTATO CHIPS



Chickpea & nut burgers with sweet potato chips image

These veggie burgers taste delicious hot or cold. Roll into small balls, making them into falafel if you prefer

1 small red onion , roughly chopped
1 large garlic clove , peeled and halved
25g mixed nuts , such as brazils, almonds, hazelnuts, walnuts and pecans
1 tsp ground cumin
1 tsp ground coriander
400g can chickpeas , drained and rinsed
25g plain wholemeal flour
1 small pack coriander
1 lemon , 1/2 juiced plus 1/2 cut into wedges, to serve
2 tsp cold-pressed rapeseed oil
300g sweet potatoes , peeled and cut into long wedges
1 tsp cold-pressed rapeseed oil
50g bag mixed spinach, watercress and rocket salad
2 ripe tomatoes , cut into wedges
1/3 cucumber , sliced
2 spring onions , trimmed and finely sliced
2 tsp balsamic vinegar
50g full-fat natural bio-yogurt
2 tbsp finely chopped mint

Steps:

  • To make the yogurt sauce, stir together the yogurt and mint in a bowl and cover and chill until needed.
  • Heat oven to 220C/200C fan/gas 7. Half fill a medium saucepan with water and bring to the boil. Add the sweet potato wedges and cook for 4 mins then drain through a colander and return to the saucepan. Pour over the oil, tossing until lightly coated then season with ground black pepper.
  • Scatter the potatoes onto a small baking tray and roast for 15 mins. Take out of the oven and turn over, then cook for a further 10 mins or until tender and lightly browned.
  • While the chips are cooking, make the burgers. Put the onion, garlic, nuts and spices into a food processor and add lots of freshly ground black pepper. Blitz until as smooth as possible. Add the chickpeas, flour, coriander and lemon juice and blitz until the mixture comes together to make a thick paste. It shouldn't be too smooth as you are looking for some texture to give the burgers a bit of bite. Form the mixture into 4 balls and flatten into burgers, just under 2cm/ 3/4in deep.
  • Heat 1 tsp of the oil in a medium non-stick pan over a low heat and cook the burgers on one side for 5 mins. Add the remaining 1 tsp of oil to the pan and turn over. Cook on the other side for a further 5 mins or until nicely browned and cooked throughout, keeping the heat low, so they don't burn.
  • Divide the salad leaves, tomatoes, cucumber and spring onions between two plates. Add the burgers, chips and mint sauce, plus a couple of lemon wedges for squeezing. Drizzle the balsamic vinegar over the salad and serve.

1 1/2 cups nuts
1 onion
2 tbsp olive oil
1 cup breadcrumbs
2 tbsp soy sauce
2 tsp dried herbs
1 cup vegetable stock
1 tbsp chia seeds

Steps:

  • In a frying pan, saute the diced onion in olive oil until soft, translucent and just starting to brown.
  • Pulse the nuts in a food processor until fine, and just sliightly grainy.
  • Make the vegetable broth with boiling water and stock powder/bouillon.
  • In a mixing bowl, combine the ground nuts, sauteed onion, breadcrumbs, soy sauce, herbs, chia seeds and vegetable broth.
  • Set the mixture aside for five minutes to allow it to cool a little and the chia seeds to soak.
  • Shape the mixture into round patties. If the mixture is a little too sticky, add some more breadcrumbs.
  • In a frying pan, heat up a little oil on medium high heat, and fry for 3-5 minutes on each side until crisp and brown.

1/3 cup plain dried bread crumbs
1 tablespoon grill seasoning (recommended: McCormick)
1 teaspoon smoked paprika
1/4 teaspoon red pepper flakes
1 tablespoon cider vinegar
1 tablespoons olive oil
1 large egg
4 hamburger buns
Lettuce, tomato, avocado
Honey mustard

Steps:

  • Set up grill for direct cooking over high heat. Oil grate when ready to start cooking.
  • In a food processor, combine walnuts, garbanzo beans, bread crumbs, grill seasoning, paprika, pepper flakes, oil and vinegar and pulse until coarsely ground.
  • In a small bowl whisk egg, add to food processor and pulse for 10 seconds, just enough to incorporate egg. Divide into 4 equal-size parts; roll into balls, and flatten with the palm of your hand into 3/4-inch-thick patties.
  • Place burgers on oiled grill. Cook 4 minutes per side.
  • Serve hot on toasted buns with lettuce, tomato, avocado and honey mustard.

  • Preheat oven to 375˚F (190˚C).
  • In the bowl of a food processor, add sunflower seeds. Process until finely ground.
  • Add onion, brown rice, thyme, salt, and water and process until combined.

  • Using a ½ cup (120 ml) measuring cup, portion 5 patties from the mixture. Place onto a lightly greased parchment-lined sheet pan.

A wholesome combination of rice and lentils with veges, spices and herbs. This is from 'Great Vegetarian Dishes' by Kurma Dasa. I use brown rice, rye breadcrumbs and all-natural peanut butter (sometimes I add some cashew or almond butter too). A good recipe for OAMC. The recipe says it yields 16 burgers, but I make my patties bigger! Prep time does not include cooking time for rice and lentils.

1 1/2 cups cooked brown lentils, thoroughly drained
1/2 cup carrot, grated

1/3 cup quick-cooking barley
3 tablespoons extra-virgin olive oil
1 small onion, chopped
1 small stalk celery, chopped
Kosher salt
2 cloves garlic, chopped
5 tablespoons barbecue sauce
1 medium carrot, finely grated
1 cup canned pinto or black beans, drained and rinsed
1/3 cup breadcrumbs
1/3 cup walnuts, chopped
2 teaspoons soy sauce
2 large egg whites
2 tablespoons chopped fresh parsley
6 soft buns, split
Onion rings, for topping

Steps:

  • Prepare the barley as the label directs. Let cool completely.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the onion, celery and a pinch of salt; cook, stirring occasionally, until golden, 12 to 14 minutes. Add the garlic, 3 tablespoons barbecue sauce and the carrot; cook, stirring, until the mixture dries out slightly, 1 to 2 minutes. Transfer to a food processor and let cool completely.
  • Add the barley, beans, breadcrumbs, walnuts, soy sauce, egg whites, parsley and 1/2 teaspoon salt to the food processor. Pulse until finely ground with some chunks. Form into six 4-inch-wide, 1/2-inch-thick patties and place on a baking sheet lined with parchment paper. Cover and refrigerate until firm, 1 to 4 hours.
  • Preheat the broiler. Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium heat. Working in batches, cook the patties until golden brown, about 6 minutes per side. Meanwhile, place the buns, cut-side up, on a broiler pan and broil until toasted, 1 to 2 minutes. Serve the patties on the buns; top with the remaining 2 tablespoons barbecue sauce and onion rings.

This is an interesting and addictive veggie burger. There is a little natural foods drive-in near where i live that serves something like this.I talked to a lady who at one time worked at the drive-in and she told me that they used the left over carrot pulp from making carrot juice in the burger. After years of trying to figure out the ingredients i came up with this, and it is pretty close. I hope you like it. Don't be put off by the long list of ingredients, it goes together quickly and freezes well uncooked. I have guessed at the prep and cooking time. I have not timed myself making this.

  • Do not pulse so long as to make nut butter.
  • You want to have something to chew on.
  • Dump the nut mixture into a mixing bowl and add the whey powder, eggs, dry mustard powder, curry powder, poultry seasoning, cumin,and mild chili powder.
  • Mix the ingredients together until well incorporated.
  • Form into 12 small patties or 6 large.
  • Fry in a pan over medium heat until brown on each side.
  • Serve as is or on buns with your favorite burger toppings.

Steps:

  • Grind onion in food processor.

  • Let mixture rest a few minutes then shape into 4 burgers. (This can be refrigerated for up to a day, but be sure to bring it up to room temperature before cooking or they'll fall apart when you cook them.)
  • Put oil in a nonstick skillet and turn fire to medium.
  • When hot, add burgers.
  • Cook 5 mins each side or until browned. Do not poke at them or they will fall apart.
  • Lower heat a bit and cook another 3-4 mins so that they firm up.
  • Serve on buns as you like. Chutney is suggested. I'm a blue cheese lover myself. Voila!

4 ounces extra-firm tofu, drained
Olive oil
1/2 pound cremini mushrooms, trimmed and sliced
3/4 teaspoon kosher salt, more as needed

1 (15-ounce) can kidney beans, drained
1 medium beet, peeled and coarsely grated (3/4 cup)
3/4 cup tamari almonds or cashews
1/3 cup panko bread crumbs
2 ounces Cotija cheese or queso blanco, crumbled or grated (about 1/2 cup)
2 large eggs
2 tablespoons mayonnaise
2 scallions, sliced
3 garlic cloves, finely chopped
3/4 teaspoon dulce pimentón or sweet smoked paprika
4 ounces tempeh, crumbled
1/2 cup cooked brown rice

Steps:

  • Heat oven to 425 degrees. Slice tofu into 1/4-inch-thick slabs and pat dry with paper towel. Arrange tofu on one half of a rimmed baking sheet; brush both sides with oil. Spread mushrooms on the other half of the baking sheet; toss with 2 tablespoons oil and salt and pepper.
  • On a second rimmed baking sheet, toss beans and grated beet with 1 tablespoon oil and salt and pepper, then spread the mixture into one layer.
  • Transfer both baking sheets to the oven. Roast bean-beet mixture, tossing occasionally, until beans begin to split and beets are tender and golden, about 15 minutes. Roast mushrooms and tofu until golden and most of the liquid has evaporated, about 25 minutes. Let everything cool.
  • Place nuts in a food processor and pulse until coarsely ground. Add cooled bean-beet mixture, mushrooms, tofu, panko, cheese, eggs, mayonnaise, scallion, garlic, pimentón and 3/4 teaspoon salt. Pulse until ingredients are just combined. Pulse in tempeh and rice but do not overprocess. You want small chunks, not a smooth mixture. Scrape mixture into a bowl and chill at least 2 hours or up to 5 days (you can also freeze the burger mix).
  • When you are ready to make the burgers, divide mixture into 6 equal portions and form each portion into a patty about 1 inch thick. Return to the fridge until just before grilling. They grill better when they start out cold.
  • Heat the grill. Cook the burgers over a low fire until they are charred on both sides and firm when you press on them, 4 to 6 minutes per side. If they start to burn before they firm up, move them to the sides of the grill to finish cooking over indirect heat. Alternatively, you can cook these on a grill pan or in a skillet over low heat.

Besides adding flavor, the cheese helps hold the burgers together. Serving suggestions: The Sunflower (restaurant) serves their nut burgers on whole wheat buns with traditional condiments such as ketchup, mustard, mayonnaise, tomatoes, etc.
