BOSTON BAKED BEANS

- Sort beans and rinse in cold water. Place beans in a 3- or 4-qt. slow cooker; add 4 cups water. Cover and let stand overnight., Drain and rinse beans, discarding liquid. Return beans to slow cooker; add salt pork., In a small bowl, combine the onion, brown sugar, molasses, sugar, mustard, salt, cloves, pepper and remaining water. Pour mixture over beans; stir to combine., Cover and cook on low for 10-12 hours or until beans are tender.

BOSTON BAKED BEANS
Boston baked beans are a hearty dish, of Native American origin, of slow baked beans with bacon, molasses, brown sugar and maple syrup.

Steps:
- Preheat the oven to 250 F (120°C).
- Spread the onion in an even layer on the bottom of a Dutch oven or heavy cast iron pot (6 quarts / 6 liters).
- Spread the salt pork over the onion, then the beans.
- In a large bowl, whisk together the molasses, brown sugar, maple syrup, ground mustard seeds, salt, pepper and water.
- Gently pour this mixture over the beans.
- Place the pot on the heat and bring to a boil over medium to high heat.
- Cover the pot and place it on a rack in the middle of the oven.
- Bake for about 4 hours or until the beans are tender, stirring once after 2 hours.
- Remove lid and continue cooking until liquid has thickened to a syrupy consistency, about 1½ to 2 hours longer.
- Let stand at room temperature for at least 30 minutes and up to 2 hours to continue to thicken the liquid before serving.
- Serve or let cool and refrigerate in an airtight container for up to 4 days.

Steps:
- In a large skillet, brown ground beef and onion. Drain any grease.
- In a 9 x 13 inch baking dish, combine meat mixtured and remaining ingredients. Bake at 350° for 1 hour.

FRENCH CANADIAN (NOT BOSTON) BAKED BEANS
Steps:
- Pour the beans onto a plate, and pick-over looking for bad beans, or stones. Place beans in bowl, cover with water by at least 2 inches, and soak overnight.
- Preheat oven to 250 degrees F.
- Drain beans and place in 4-quart bean pot. Add onion, dry mustard, pepper, salt, and maple syrup. Add water to cover. Cut salt pork into 1-inch pieces and place on top of beans. Bake covered, approximately 8 hours. Check each hour to see if water needs to be added. You can add more maple syrup in place of water for flavor, if desired.
- Serve the beans with brown bread, franks, or ham. For breakfast, serve with eggs, bacon, and home-fries.
BOSTON BAKED BEANS
This recipe is for good old fashioned Boston Baked Beans. You can use Pea Beans or Navy Beans. You can't be in a hurry when making these. The beans should not be watery at all but on the thick side when finished so be careful how much water you add. Cook time does not include soaking beans overnight. These are great for a Saturday night meal in the Fall and Winter served with hot dogs and home fries. If you really want to make the meal complete then serve it with Boston Brown Bread.

- Soak the beans overnight in water.
- The next morning par boil for 10 minutes then add the baking soda, don't worry it will foam up, that's okay.
- Drain the beans well and rinse.

- Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
- Preheat oven to 300 degrees F (150 degrees C).
- Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
- Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
- Raise oven heat to 350; bake beans uncovered in oven until top develops a flavorful crust, 20 to 30 more minutes.
