Thai Pasta with Spicy Peanut Sauce image

We love how the whole wheat pasta and crisp, raw vegetables blend with the rich and creamy peanut sauce. The addition of fresh lime juice really brightens the flavor of the dish. Some eat it hot, but my husband and I prefer to wait until it's closer to room temperature. -Donna McCallie, Lake Park, Florida

Number Of Ingredients 9

1 package (12 ounces) whole wheat linguine
1 jar (11-1/2 ounces) Thai peanut sauce
2 tablespoons lime juice
2 cups bean sprouts
1 large cucumber, peeled, seeded and chopped
2 medium carrots, julienned
5 green onions, sliced
1 small sweet red pepper, julienned
1/2 cup minced fresh cilantro

Steps:

  • Cook linguine according to package directions. Drain; return to pan., In a small bowl, combine peanut sauce and lime juice. Add peanut sauce mixture, vegetables and cilantro to pan; toss to coat.

Deliciously spicy with hints of sweetness, these noodles are an amazing addition to your dinner table

1 lb linguine pasta (or fettuccine (spaghetti, etc))
1/2 - 1 1/2 Tbsp red pepper flakes (amount depends on how spicy you want it)
2 Tbsp vegetable oil
1/3 - 1/2 cup toasted sesame oil
1 1/2 tsp chili paste
6 Tbsp soy sauce
6 Tbsp honey
Scallions (carrots, peanuts, cilantro, Sriracha, and sesame seeds to garnish)

Steps:

  • Chop garnishes and set aside.
  • Boil pasta, drain.
  • While pasta is boiling, heat oils in a large skillet with red pepper flakes.
  • Once oil is hot, strain pepper flakes, reserving the oil in a bowl. Add reserved oil back into the skillet and add the chili paste. Whisk in soy sauce and honey.
  • Toss pasta in the skillet with the sauce.
  • Can be served hot, room temperature or cold. Top with garnishes and enjoy!

For some who like it hot, hot, hot, this tomato pasta sauce will be a welcome treat. Six chilies make a pleasant version.

Number Of Ingredients 14

1 lb spaghetti
12 large thai dried red chili peppers (to taste)
6 garlic cloves, peeled
1 teaspoon salt
2 tablespoons vegetable oil
1 1/2 lbs lean pork, ground finely
4 tomatoes, ripe, fresh, peeled and chopped
4 green onions, chopped
2 tablespoons nam pla (Thai fish sauce)
fresh coriander leaves, chopped
cucumber, peeled and finely diced
green beans, snapped into short lengths
carrot, sliced thinly
celery, sliced thin

Steps:

  • Soak the chilies in hot water for about 15 minutes and then reduce them to a paste by pounding them in a mortar with the garlic and salt. You can use a blender if you wish, but a mortar and pestle do a better job.
  • Heat the oil in a heavy saucepan and sauté the chili-garlic mixture for about 5 minutes, making sure that it does not stick to the pan. Add the pork, saute it until it is well browned and then add the tomatoes. Add the chopped green onions and the nam pla and cook the mixture for about half an hour uncovered, stirring when necessary to make sure that it does not stick. Cook pasta to your taste and place it in a serving bowl. Spoon the sauce over it and serve it garnished with the coriander leaves and the fresh vegetables. Makes 4 servings.
