- Put all ingredients in blender/food proccessor and process until smooth.
- You could also chop a small amount of cilantro and put it in after your dressing has been blended for"chunks" of cilantro.
- Store in the refrigerator.
- This is one of those things that gets better as the flavors are allowed to blend, so you probably want to make ahead of time.

- Chipotle chilies should be in adobe sauce and can be found in the Mexican section of your store.
- -Chop Cilantro and set aside.
- - Mince garlic and set aside.
- - Puree Chipotle chilies in food processor.
- - Add all ingredients except oil and cilantro to processor and blend.
- - Slowly add stream of oil to form emulsion.
- - Add cilantro to processor and pulse to combine.
- Toss this dressing with baby greens, corn, chicken breasts, plum tomatoes, jack cheese, roasted red pepper and toasted pumpkin seeds.

- Place the jalapeno pepper, garlic clove, and ginger into a food processor or blender; pulse until the jalapeno and garlic are finely chopped.
- Pour in the lime juice, honey, balsamic vinegar, and salt, add the cilantro leaves; pulse a few times to blend.
- Turn the food processor or blender on, and slowly drizzle in the olive oil until incorporated into the dressing.
- Season to taste with salt before serving.
