STIR-FRIED GINGER NOODLES
Steps:
- Bring a large heavy-based saucepan of salted water to a boil and blanch the noodles for about 2 minutes. Refresh under cold water.
- Peel and finely chop the ginger and garlic. Cut the chile in half lengthwise, deseed, and finely chop. Shred the spring onions and pick the leaves from the cilantro. Wipe and slice the shiitake mushrooms.
- Heat the sunflower oil in a large heavy-based wok. When hot, fry the garlic, ginger, chile, and mushrooms until brown, about 3 minutes. Add the noodles and spring onion; stir to combine, about 3 minutes.
- To serve, arrange the noodles in a serving dish and garnish with cilantro leaves.
EASY NOODLES IN GARLIC-GINGER PEANUT SAUCE

Very versatile, I've even made it with dollar store ramen when the budget's tight - just boil the noodles (2 packs) with the flavor packets in the boiling water and drain, then cool the noodles thoroughly in ice water as the recipe suggests. Chen says, "This is a bold peanut vinaigrette that's bursting with garlic and ginger flavor. It's excellent on either Asian noodles or Italian pasta and is a perfect side dish to almost any grilled fish or meat. If using Italian noodles, I prefer the thinner vermicelli." Meant as a side dish, we enjoy it as a dinner also - toss in some shredded cabbage and carrots and it really is a great summer evening meal!

- In a pot of boiling water, cook the noodles until a little softer than al dente. Drain, rinse in cold water, and set aside to drain again.
- In a small bowl, combine the peanut butter, vinegar, soy sauce, sesame oil, sugar, ginger, and garlic. Stir until smooth.
- Transfer the noodles to a serving bowl. When ready to serve, pour the peanut dressing over the noodles and toss well. Sprinkle scallions on top and serve at room temperature.

SPICY NOODLES WITH GINGER-GARLIC SHRIMP AND WASABI SAUCE
Spicy, fresh, delicious! This recipe takes a bit of prep, but if you have two sets of hands, it's a fun dish to prepare! We're pretty new to Asian cooking, but this recipe seems unique to us because it's cool in temperature but hot in flavor; you get both types of spicy: "mouth spicy" from the jalapenos and "nasal spicy" from the wasabi! I got this recipe from a random magazine at the gym...I HAD to try it and proceeded to text it to my e-mail in a series of like, 10 text messages... we totally enjoyed the fruits of my labors, and now you can too. Prep time is approximate...we were multi-tasking so it's hard to say how much we spent on this individual dish. Anyway, hope you enjoy! :)

- In a skillet, sauté the shrimp, ginger, and garlic in the oil for 3 minutes or until shrimp is cooked. Set aside.
- Meanwhile, cook noodles according to package directions. Drain; rinse in cold water and drain again.
- To serve, layer noodles, shrimp, cabbage, carrots, radishes, basil, and jalapeno in individual bowls. Pour dressing over top of each serving and sprinkle cashews or wasabi peas over top.
- A Word of Caution: I highly suggest using the recommended 1 1/2 tsp of wasabi paste to start. Only add more if, after mixing it with the rest of the ingredients in the individual bowls, additional heat is desired. The sauce by itself never seemed hot to us, so we used almost an entire tube of wasabi -- and subsequently cried our way through dinner.

- Boil a salted pot of water for the noodles (I used spaghetti but feel free to use rice noodles or something else). Cook the spaghetti al dente according to package directions.
- Meanwhile, add all the other ingredients except for salt & pepper to a skillet. Once the pasta is a few minutes from being ready, turn the burner on medium heat. Let everything melt together and give it a good stir. It'll soon start to bubble. Let it bubble gently for a minute or so until the garlic cooks and the sauce thickens a bit.
- Once the pasta is done, drain it and then add it to the skillet and toss it with the sauce. Season with salt & pepper as needed.

- Soak the rice noodles in a large bowl of cold water. Wash and cut all the vegetables. Mix the ingredients for the sauce in a small bowl and set aside.
- Heat the oil in a large skillet over high heat. Add the peppers, shallots, and bean sprouts, and curry powder; stir fry for 3-5 minutes. Add the mushrooms and the peas; stir fry for 2 minutes. The vegetables should be bright and tender-crisp.
- Drain the water from the rice noodles and add the noodles to the pan with the vegetables. Add a little splash of sauce – about 2-3 tablespoons – and stir fry, moving the noodles around in the pan continuously so they don’t stick together in one big lump – they should move freely and easily. After a few minutes of stir frying, remove the pan from heat.
- Once off the heat, add the sauce in small increments, tossing/stirring the noodles in between each addition, until the desired “sauciness” level is reached. The goal is for the sauce to thicken slightly when combined with the other ingredients and cling to the noodles instead of soaking into the noodles. Top with scallions and more sauce. I LOVE SAUCE.
