BUTTERED NOODLES WITH EGGS AND PARMESAN CHEESE
A very quick and easy recipe to use as a side or main dish. On the table in no time and so delicious!

Steps:
- Cook noodles in a large pot of lightly salted water until al dente.
- While the pasta is cooking, place the eggs, grated cheese, parsley, salt and pepper into a mixing bowl and beat with a whisk until well combined.
- When the noodles are almost cooked, melt the butter in a large nonstick skillet over medium heat.
- Quickly drain the pasta and add it to the skillet.
- Toss briefly to coat it with the butter.
- Add the egg mixture to the skillet and using a flat wooden spoon, mix quickly together for less than a minute until the eggs and noodles become creamy and thick.
- Do not cook the eggs too long or they will scramble and ruin the dish.
- Serve immediately.

BUTTERED EGG NOODLES
Steps:
- Cook 12 ounces wide egg noodles in salted boiling water until al dente. Transfer 1/4 cup cooking water to a skillet. Stir in 4 tablespoons butter, one at a time. Add some chopped parsley and/or dill, a squeeze of lemon juice, and salt and pepper. Drain the noodles and toss with the sauce.

- Bring a large pot of water to a boil over high heat and salt generously.
- Add the noodles and cook, stirring occasionally, until al dente, about 5 minutes.
- Ladle 1/4 cup of the noodle cooking water into a medium skillet. Whisk in the butter bit by bit over low heat, letting each piece melt completely before adding the next, to make a creamy sauce.
- Stir in the parsley and season with salt and pepper.
- Drain the noodles, toss with the sauce, and serve immediately. Enjoy!
NOODLES WITH EGG AND PARSLEY TOPPING

- Heat the remaining 2 tablespoons of butter in a skillet over medium-high heat, and add the chopped egg and nutmeg. Cook briefly, shaking the skillet. Add the parsley, and cook for 30 seconds. Pour over the noodles and toss. Serve immediately.

- Bring a large pot of water to a boil. Cook the pasta according to the package instructions. (If using angel hair, stop just short of the al dente stage.) Drain and set aside.
- Melt the butter in a large skillet over medium-high heat, then add the olive oil. Add the parsley, garlic and lemon zest and stir. Throw in the drained pasta and cook, tossing and coating it in the mixture, so that a few of the pieces get a little bit of a pan-fried texture to them, 2 to 3 minutes. Add the lemon juice and some salt and pepper and toss again.

- Combine 1 1/2 cups all-purpose flour and semolina flour on a clean large wooden work surface. Form a 6-inch well in center. Add eggs, egg yolks, parsley, and oil to well.
- Using a fork, beat egg mixture until combined; gradually incorporate flour mixture from inner edges of well into wet ingredients until a smooth batter forms. Once batter is too stiff to mix with fork, use hands to work in remaining flour to form a shaggy dough. Add water, 1 tablespoon at a time, as needed to bring dough together.
- Knead until dough is smooth, about 10 minutes. Wrap dough in plastic wrap, and let rest at room temperature 2 hours. Unwrap dough, and cut dough into quarters. Keep 3 dough portions covered while proceeding with next steps.
- Roll 1 dough piece out on floured wooden work surface into a roughly 20- x 12-inch rectangle (about 1/16 inch thick). The dough should be thin enough to read through.
