GRAMMIE'S NO-CRUST APPLE PIE
A very easy and quick recipe for a GREAT apple pie!

- Preheat oven to 350 degrees F (175 degrees C.)
- In a large bowl, combine apples, cinnamon, nutmeg, white sugar and 1/2 cup baking mix. Stir together the milk and eggs and mix into apple mixture, Pour filling into pie plate and dot with butter.
- To make the Topping: In a large bowl, combine 1 cup baking mix, walnuts, brown sugar and margarine. Mix until crumbly and sprinkle over top of apples.
- Bake in the preheated oven for 60 minutes, or until apples are cooked and topping is golden brown.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Whisk together the cornstarch, cinnamon and 1/4 of the apple juice.
- In a saucepan over medium heat, simmer the apples in the remaining apple juice until tender. Add the cornstarch mixture and stir until thickened.
- Pour into bottom crust and cover with top crust. Bake for 45 minutes.

This is a recipe for apple pie made without apples. It has all the characteristics of an apple pie with apples. If you didn't know better, you'd think that there really were apples in it. This is an old chemistry lab experiment to teach the limits of human senses.

Steps:
- Preheat oven to 450 degrees F (225 degrees C).
- Roll out pastry and set aside. Bring water to a boil in a large saucepan.
- In a small bowl mix together sugar and cream of tartar. Add mixture to boiling water. Stir, then add crackers, one at a time. Boil for 3 minutes, but do not stir.
- Pour cracker mixture into pastry-lined pie pan. Sprinkle crackers with cinnamon and dot with butter or margarine. Cover with top pastry. Seal edges and cut steam vents in top.
- Bake in preheated oven for 30 minutes, until crust is golden brown. May need to cover top pastry partway through baking to prevent overbrowning.

- Heat a skillet over medium to medium-high heat. Add the ginger and apples to warm butter, squeeze a little lemon juice over the pan and saute 4 to 5 minutes. Add brown sugar, cinnamon, nutmeg to the apples and cook another 2 minutes. Spoon apples into dessert dishes and top with ice cream and whipped cream. Garnish whipped cream with a pinch more cinnamon or nutmeg.

- In a large saucepan, mix gelatin, cinnamon, nutmeg and 1-1/2 cups water. Add apples; bring to a boil. This is a delicious apple pie without a bottom crust. It has a brown sugar crumble on top and very good. This pie was devoured by the three of us at one sitting, so I will make two next time. Southern Living

- Combine 6 or 7 large cooking apples with the sugar, water, cinnamon, ground allspice in a large saucepan; bring to a boil.
- (I also add fresh grated nutmeg and a squeeze of lemon juice.)
- Cover, reduce heat, and simmer 8 to 10 minutes or until apples are almost tender.
- Spoon mixture into a deep-dish 9-inch pie-plate.
- Combine flour, brown sugar, baking powder, and salt; cut in butter with a pastry blender or use finger tips until mixture resembles coarse meal.
- (Next time I will use only 1/8 tsp of salt in the crumble.).
- Crumble brown sugar mixture over apples.
- Bake at 350°F for 30 minutes or until top is browned.
- Serve with ice cream, if desired.
- Yield: one 9-inch pie.
APPLE PIE WITH NO APPLES
This recipe is one that my mother, grandmother and great grandmother made. I thought it had been lost when my mother died. Imagine my surprise when I found it written on the inside of her favorite cookbook, which I inherited. I had no idea whether or not it would taste as good as my childhood memories when I made it. It does. One can use either pre-made unbaked pie shells and/or crusts, or homemade. I used a pre-made, unbaked shell and then cut up a premade (boxed) unbaked crust for the lattice top. The extra pie crust I sprinkled with sugar and baked along with the pie. I remember the "pie crust cookies" from my childhood too. This pie has the taste and texture of a real apple pie, and it's a lot of fun to see the expressions when it's revealed that the 'secret ingredient' is Ritz crackers. It's a quick and easy recipe that tastes good.

- In a saucepan mix water, sugar and cream of tartar.
- Cook over medium heat until sugar dissolves.
- Add Ritz crackers.
- Bring to a hard boil for 2 minutes.
- DO NOT STIR.
- Remove from heat and pour into pie crust.
- Sprinkle with nutmeg and cinnamon and place butter pats on top.
- Put pie crust strips on top to form a lattice.
- Bake at 450 degrees for 10 minutes, then at 350 degrees for 20 minutes.
