handful cilantro
juice of 1 lime
1/4 teaspoon kosher salt

Steps:

  • Place everything in the chopper of food processor and pulse a few times until combined and chunky. Don't over process.

10 pounds fresh tomatillos, husks removed
1 pound roasted green chile peppers, stems removed
½ pound celery
½ pound onion
½ cup lime juice
¼ cup dried parsley
3 tablespoons kosher salt
2 tablespoons fresh oregano leaves
2 tablespoons ground black pepper
2 tablespoons minced garlic
2 tablespoons dried sage
2 tablespoons crushed dried rosemary leaves
1 tablespoon ground cumin

Steps:

  • Blend tomatillos, chile peppers, celery, and onion together in a food processor to desired consistency, working in batches. Pour into a 2-gallon stockpot as you go. Add lime juice, parsley, salt, oregano, pepper, garlic, sage, rosemary, and cumin; stir thoroughly.
  • Cover and allow to sit 8 hours to overnight outside of the refrigerator. Serve or spoon into plastic freezer bags and freeze.

This recipe was given to me by a friend. It is easy and fast to whip up for parties or for dinner. And is great for pickey eaters that do not like onions in their salsa. Feel free to add more vegetables such as onion to the recipe. also be careful with the cilranto because it is such a strong flavor add as much or as little cilrantro you would like. for more guest double recipe

10 ounces diced tomatoes with mild green chilies
1 piece garlic clove
1 bunch fresh cilantro
1 small lime, cut in half
1 teaspoon salt

Steps:

  • Cut the stems off cilrantro and cut the lime in half.
  • In a Food processor or blender combine (10oz) Tomatoes and green chilies,Piece of garlic clove,Cilranto with out the stems and salt also add prefered vegetables if youd like.
  • Squeeze the juice of one half lime into the food processor.
  • Blend or Process for as short or as long as you would like depending on how chunky you would like it.

1 (15 ounce) can crushed tomatoes
2 lbs roma tomatoes
4 whole serrano peppers
2 whole jalapeno peppers
1 cup fresh cilantro leaves
1 large onion
10 garlic cloves
1/2 cup white vinegar
2 teaspoons ground cumin
1 teaspoon salt

Steps:

  • Pour canned tomatoes in large bowl.
  • Peel, seed and dice roma tomatoes and add to bowl.
  • Seed and dice peppers and add to bowl.
  • Finely chop cilantro and add to bowl.
  • Dice onion and add to bowl.
  • Dice or press garlic and add.
  • Add the vinegar, cumin and salt.
  • Stir all ingredients well. Eat right away or refrigerate. This makes a large bowl of salsa that keeps for about a week in the refrigerator.

1 (28 ounce) can chopped tomatoes, with juices (this is best if mixed with fresh tomatoes)
3 jalapenos (fresh or substitute bell pepper, Serrano, Anaheim, etc.)
1 medium onion
3 garlic cloves
1 tablespoon cumin seed (ground or toasted and crushed)
1 tablespoon coriander seed (ground or toasted and crushed)
1/2 tablespoon oregano
1/2 tablespoon cayenne (Optional is used for color and heat. You could also use with chipotle powder or smoked paprika inste)
1 tablespoon olive oil
1 tablespoon pepper sauce (Yucatan- habeneros, carrots, lime, spices, vinegar, water OR use just lime juice as needed)

Steps:

  • Finely chop jalepenos, garlic and onions and combine in a bowl.
  • Add tomatoes and juice to bowl.
  • Add remaining ingredients to bowl.
  • Add olive oil to bowl and toss all ingredients.
  • Drizzle water over bowl until salsa reaches a desired consistency.
  • Add salt (and optional fresh ground black pepper) to taste.
  • Add (optional sugar) to balance acidity.
  • Refrigerate for at least an hour.

This will put any store-bought salsa to shame lol! This is a must using just-picked garden tomatoes and it is a fat-free recipe! Plan ahead this must be refrigerated a minimum of 8 hours even better 24 hours to blend flavors, don't even think about serving this before the chilling time! The tomatoes must be ripe and red for this and will need to be drained for a couple of hours over a strainer before using for this recipe. If you prefer a milder salsa then omit the jalapeno pepper. This complete recipe may be doubled. Don't omit the cilantro it is what makes the salsa! If desired you may use canned Mexican diced tomatoes drained in place of the fresh tomatoes, but the fresh is much better! Prep time includes chilling time.

6 green onions, chopped (or use 1 small white onion, chopped)

Steps:

  • Place the chopped seeded tomatoes over a strainer and allow to drain for 1-2 hours (or up to 24 hours).
  • Place the tomatoes, onions, green bell pepper, yellow bell pepper (if using) and cilantro in a processor; pulse until desired consistency.
  • Place into a glass bowl then add in all remaining ingredients; mix to combine and season with salt and Tabasco to taste and add in a small amount of sugar if desired.
  • If desired you may add in the variations of you choice.
  • Refrigerate for a minimum of 8-24 hours before serving.

I've experimented with a lot of salsa recipes and this is, by far, my favourite. It doesn't take too long to make (especially if you have a food processor to do the chopping) and is just right for spice -- a little kick but not so much that your tongue falls off!

1 tablespoon olive oil
6 jalapenos, chopped
2 sweet peppers, chopped
8 -10 cloves garlic, minced
1 cup onion, chopped
9 cups seeded and chopped tomatoes (about 40 whole, small, tomatoes)
3 tablespoons red wine vinegar
4 tablespoons fresh cilantro, chopped
salt, to taste

Steps:

  • In a large pot, heat the oil and add the jalapenos, sweet peppers, garlic and onion.
  • Sauté until everything is soft but not browned.
  • Add the tomatoes and cook until the tomatoes are quite soft and starting to pack down in the pot, about 5 minutes.
  • Add the remaining ingredients and cook for about 10 minutes more to give the flavours a chance to mix together and the water to boil off.
  • When the salsa is as thick as you like it, add salt to taste if needed and let stand for at least one minute.
  • Stir well before serving.

FREEZER SALSA



Freezer Salsa image

This recipe is a great reason for growing tomatoes and peppers in your garden. It was published in Chatelaine and I made a few small changes. Place a cup or two in freezer bags, press flat and freeze. Thaws quickly for snack attacks.

10 -12 large very ripe tomatoes
2 large cooking onions or 2 medium Spanish onions
1 tablespoon vegetable oil
8 cloves garlic, minced
8 jalapeno peppers or 1 can diced green chilis
2 -3 sweet green peppers (or mix of green and red)
2 (5 1/2 ounce) cans tomato paste
1/4 cup cider vinegar or 1/4 cup lime juice
1 tablespoon paprika
2 teaspoons granulated sugar
1 1/2 teaspoons salt
1/2 teaspoon cayenne pepper

Steps:

  • Peel,core, seed and coarsely chop tomatoes.
  • You should have 10 cups.
  • Peel and finely chop onions.
  • Heat oil in a large pot over medium heat.
  • When hot, add onions and garlic.
  • Cook, stirring often, until onions are soft.
  • Meanwhile, seed and finely chop jalapenos.
  • Seed and coarsely chop sweet peppers.
  • When onions are soft, stir in tomato paste.
  • Add tomatoes, peppers, vinegar, paprika, sugar and salt.
  • For extra heat stir in cayenne.
  • Bring to boil and lower heat until it gently boils.
  • Cook uncovered stirring occasionally until thickened, about 30 minutes.
  • Store covered in refrigerator for 1 week or freeze.
  • Flavor improves in the refrigerator or freezer.
