NO-CHURN COFFEE-CARAMEL CRUNCH ICE CREAM

- Whisk the condensed milk, espresso powder, 1 tablespoon heavy cream and the salt in a large bowl until smooth. (The espresso powder may look speckled.)
- Beat the remaining 1 1/2 cups heavy cream in a separate large bowl with a mixer on medium-high speed until stiff peaks form, 1 to 2 minutes. Fold about half of the whipped cream into the condensed milk mixture with a rubber spatula until combined, then fold in the remaining whipped cream until no white streaks remain.
- Dot the mixture with the dulce de leche and sprinkle with all but a few teaspoons of the toffee bits; drag a rubber spatula through the mixture to lightly swirl.
- Spoon the mixture into a freezer-safe 9-by-5-inch loaf pan or 2-quart baking dish. Dot with more dulce de leche and sprinkle with the remaining toffee bits; drag a rubber spatula through the top to lightly swirl. Cover with plastic wrap and freeze until firm and scoopable, at least 6 hours or overnight.

- Put a 9-by-5-by-3-inch metal loaf pan in the freezer to chill.
- Preheat the oven to 350 degrees F.
- Put the rolls on a baking sheet and brush the cut sides with the butter. Sprinkle 4 halves with 1 tablespoon of the purple sugar, 4 halves with 1 tablespoon of the gold sugar and the remaining 4 halves with 1 tablespoon of the green sugar. Bake until golden around the edges, about 10 minutes. Let cool completely, then cut into 1-inch cubes.
- Whisk together the condensed milk, vanilla, cinnamon and salt in a large bowl; set aside.
- Whip the cream in a large bowl with a mixer on medium-high speed until firm peaks form, about 2 minutes. Fold about 1 cup of the whipped cream into the condensed milk mixture with a rubber spatula until combined, then fold the lightened mixture into the whipped cream until well blended. Gently fold in the bread cubes and sour gummy kid. Pour into the chilled loaf pan and top with the remaining purple, gold and green sugar. Freeze, covered, until solid and scoopable, about 5 hours.

- Put a 9-by-5-by-3-inch loaf pan in the freezer to chill. Preheat the oven to 375 degrees F. Sprinkle the pie shell with the sugar and cinnamon and bake until the crust is golden brown, 12 to 14 minutes. Set aside to cool, then crumble.
- Meanwhile, whisk together the pumpkin pie filling, condensed milk and salt in a large bowl and set aside.
- Whip the cream with an electric mixer on medium-high until firm peaks form, about 2 minutes. Fold 1 cup of the whipped cream into the condensed milk mixture with a rubber spatula until combined, then fold the lightened mixture into the whipped cream until well blended. Pour half of the ice cream into the chilled loaf pan and layer all but 1 cup of the pie crust over it. Top with the remaining ice cream. Cover with plastic wrap and freeze until solid and scoopable, about 3 hours or up to overnight. Serve with a drizzle of caramel sauce and the reserved pie crust.

FRIED PICKLE ICE CREAM
One of a kind, never done or seen before. There's plenty of pickle ice cream recipes out there, but I'm the only one to make fried pickle ice cream. I've always loved savory and sweet mixed together and nothing says that more than mixing ice cream with pickles, throwing it in the fryer and putting it on top of a juicy burger. Gets no better than that.

- For the fried pickle ice cream: Add the pickle chips and spears, cream, oil, eggs, salt and creamer into a blender and blend until smooth. Transfer to a tabletop ice cream machine and process for 20 minutes. Then transfer to an airtight container to freeze overnight.
- For the burgers: Put some dry ice on a baking sheet and another baking sheet on top. Once the ice cream is frozen, scoop it onto the top baking sheet and squash the scoop down with a spatula to make a puck shape about the size of the cheeseburgers. Place in the freezer and freeze overnight.
- Fill a tabletop fryer to the recommended level of oil and heat until the oil reaches 375 degrees F.
- Once ready to prepare the burgers, dredge each ice cream puck in flour, egg wash and breadcrumbs.
- Fry the ice cream pucks, as many as will fit at a time, until golden brown and delicious, about 1 minute.
- Place a puck on top of each burger and enjoy.
NO-CHURN PEACH ICE CREAM
This summery and flavorful peach ice cream comes together easily without an ice cream maker. A base of fresh peach puree flavored with sweetened condensed milk, vanilla and ginger is lightened with whipped cream before freezing. For the best peach flavor, seek out ripe seasonal peaches. If they're unavailable, thawed frozen peaches are a great substitute.

- In a food processor, puree the peaches until nearly smooth. Scrape the puree into a large bowl and whisk in the sweetened condensed milk, vanilla bean paste, salt, ginger and peach extract if using.
- In a stand mixer fitted with the whisk or in a large bowl using a handheld electric mixer, beat the heavy cream until stiff peaks form.
- Stir 1/3 of the whipped cream into the peach mixture to lighten it, then gently fold in the remaining whipped cream in 2 or 3 batches until no streaks remain. Scrape the mixture into a chilled 6-cup freezer-proof pan (a loaf pan works well). Press a piece of plastic wrap directly on the surface of the ice cream. Freeze for at least 6 hours or overnight before serving.
