No-Bake Pumpkin Oatmeal Cookies are always a good idea.

Steps:
- Combine sugar, butter and milk in a pan on top of the stove. Bring to a hard rolling boil and then boil for 1 minute, stirring to make sure ingredients do not stick.
- Remove from heat and stir in vanilla extract, pumpkin pie spice and pumpkin until mixture is melted and smooth. Fold in oats and drop by spoonfuls onto wax paper.
- Let cool in refrigerator for several hours. This is not a hard cookie but more of a chewy, gooey pumpkin cookie. Store in an air tight container in the refrigerator.

- Mix sugar, butter, and milk together in a large pan and bring to a boil; continue to boil for 2 minutes. Turn off heat and add pudding mix. Stir very well; add oats and vanilla extract. Let mixture stand for 5 minutes.
- Drop mixture onto waxed paper by the teaspoon. Allow to cool completely, about 30 minutes. Store in an airtight container.

- Add dry vanilla pudding powder and pumpkin pie spice and mix well.
- Add vanilla and quick oats, half cup at a time until completely mixed in.
- Let mixture sit for 5 minutes then using a small cookie scoop or a spoon, spoon out mixture onto wax paper until cool.
