DARK CHOCOLATE PROTEIN BARS (NO BAKE, PALEO, VEGAN)



Dark Chocolate Protein Bars (No Bake, Paleo, Vegan) image

Healthy, homemade dark chocolate protein bars! These no bake Paleo and Vegan protein bars are low in sugar, great for snacking and tasty enough for dessert.

28g cacao butter, melted*
1/2 cup sunflower seed butter
1/4 cup water (room temperature)
1 Tbsp maple syrup
1/2 tsp vanilla extract
1/2 cup Nuzest chocolate pea protein** (45g)
1/4 cup cacao powder (20g)
1/8 tsp salt
1/4 cup dark chocolate chips
1 tsp coconut oil

Steps:

  • Line an 8" x 4" baking pan with parchment paper (aluminum foil works too). Set aside.
  • Combine the melted cacao butter***, sunflower seed butter, water, maple syrup and vanilla. Whisk until smooth.
  • Add in the chocolate protein powder, cacao powder and salt. Mix with a spatula until well combined.
  • Firmly press the dough into the lined baking pan.
  • Freeze for 20 minutes, or until set.
  • Remove the bars from the freezer and cut into 8 protein bars****
  • For the chocolate drizzle, melt the chocolate chips and coconut oil in a small sauce pan, over low heat. Drizzle the melted chocolate over the protein bars.
  • Place back in the freezer a few minutes for chocolate to fully set.

1 cup of old-fashioned oats
2 scoops of chocolate protein powder
2 tablespoons of chia seeds
½ cup of milk
1 cup of peanut butter
3 tablespoons of honey

Steps:

  • Combine the milk, peanut butter, and honey in a large bowl. Microwave for 15 seconds. Stir and microwave for an additional 15 seconds.
  • Add the remaining ingredients to the bowl.
  • Line a 8x8 pan with parchment paper and press the mixture evenly in the pan.
  • Freeze for at least 15 minutes. Cut into bars [I made 8].
  • Store in an air-tight container in your freezer or fridge for up to one week.

2 2 2 cups of nuts (I used almonds and cashews that I roasted)
2 2 2 big handfuls of shredded coconut
1/2 1/2 1/2 cup raw cacao powder
2 2 2 tbsp chia seeds
1/3 1/3 1/3 cup nut butter
1/2 1/2 1/2 cup coconut oil or butter (if you're not Paleo or vegan)*
1/2 1/2 1/2 cup protein powder
stevia (natural sweetener)
2 2 2 tsp cinnamon
1/2 1/2 1/2 tsp vanilla essence
1-2 1-2 1-2 tbsp rice malt syrup or liquid sweetener of your choice (I use rice syrup as it's fructose-free)

Steps:

  • Blend the nuts in a small food processor or blender until finely chopped - as opposed to 'roughly' chopped. See below for a pic. I find if the pieces are too big the bars won't stick together. But don't blend for too long otherwise you'll end up with nut meal. And if you blend even longer it will turn into nut butter, which is delicious, but not quite what we're aiming for here... Pop the blended nuts into a mixing bowl, add the rest of the dry ingredients and mix until combined Melt the coconut oil/butter and syrup (if using) in a small bowl in the microwave, or over the stove if you can be bothered (I can't) Add to the dry ingredients, and mix around until everything is combined. Have a little taste, and add stevia and/or extra sweetener to reach your desired sweetness levels. If the mixture is really wet, add some extra chia seeds (or almond meal, psyllium husks etc) to thicken it up. If it's too dry, add some extra coconut oil. Line a small square (about 21 x 21cm) baking pan with baking paper (no need to grease it). Tip the mixture in, press it down and smooth out with the back of a spoon. Pop in the fridge for 30 minutes or so to set. When set and hard enough to cut, lift the whole lot out on to a chopping board. Cut into squares, rectangles, triangles (they will definitely taste better), trapezoids, or maybe even a congruent geometrical double helix? It's up to you, really. But I highly recommend squares for easy sharing and friend-making. One final tip I like to keep these bad boys in the freezer. They actually taste really good when semi-frozen! If you take them out, they will eventually get a bit soft at room temperature. And please don't take one as a snack for during your next fun run; if you keep them in your pocket they'll turn to goop and you'll have people wondering if you missed the halfway toilet stop. Many are low in fiber and need to be fortified in order to offer any vitamins and minerals at all. Making your own is easy, and is considerably less expensive than what you can buy in a store. Bars like these make excellent snacks and can also be used as a a part of a quick meal on-the-go.

2 large ripe bananas
1 teaspoon ground cinnamon
2 tablespoons unsweetened cocoa powder
3 large raw egg whites
4 ounces nonfat milk
2 1/2 cups old fashioned oats
1/3 cup Splenda granular
1 tablespoon olive oil
60 g chocolate whey protein powder

Steps:

  • Mix ingredients in a large bowl. Pour into non-stick cake pan. Bake at 300o F for 25 minutes or until firm. Let cool slightly before cutting.
  • We have made these into 8 small bars, but you could easily make into 4 larger ones, with double the protein (e.g., 23 g protein per bar).
  • If you don't want the fat replace the oil with unsweetened applesauce. It will taste just as good and still retain the moist but firm texture.
