3 INGREDIENT NO BAKE OATMEAL BARS
Steps:
- Line the bottom of an 8 inch by 8 inch (can also use a 9 x 9) baking pan with parchment paper.
- Add peanut butter and honey into a large bowl. Place into microwave and heat at 30 second intervals, stirring in between, until the two ingredients are melted and smoothly blended together. You can also do this on the stove using the double boiler method.
- Add rolled oats. Stir until evenly combined.
- Spread evenly into prepared pan. Apply some light pressure across the surface. Place bars into fridge to set (at least 1 hour). Cut into bars with a sharp knife. Store uneaten bars at room temperature or in the fridge.

- For the oatmeal: Preheat the oven to 350 degrees F. Grease a 2-quart baking dish or an 8-inch square baking pan with the butter.
- Stir together the oats, sugar and salt in a large bowl. Whisk together the almond milk, vanilla and egg in a medium bowl. Pour the milk mixture into the oat mixture and stir to combine.
- For the topping: In a medium bowl, stir together the walnuts, oats, sugar, butter, flour, pumpkin pie spice and salt.
- Pour the oatmeal into the prepared baking dish. Scoop heaping tablespoons of the pumpkin puree directly into the oatmeal, and sprinkle the topping over the dish. The mixture will be very wet at this point, but the oats will soak up the liquid. Bake until lightly browned and just set, about 50 minutes.
- Cool on a rack for 10 to 15 minutes. Serve warm.

- Line a baking sheet with wax paper. Combine the oats, peanut butter, bitter and semisweet chocolate chips, toffee bits, butter and salt in a medium saucepan. Cook over medium heat, stirring frequently, until the chocolate chips melt, 3 to 5 minutes.
- Scoop heaping tablespoons of batter onto the baking sheet and sprinkle each cookie with extra toffee bits. Freeze for 15 minutes before serving. The cookies can be stored in the refrigerator in an air-tight container for 1 week.
