Steps:
- Line a baking sheet with parchment paper and set aside.
- Combine the brown sugar, cocoa powder, butter and almond milk in a large saucepan. Bring to a simmer over medium heat, stirring often with a rubber spatula, then simmer for 1 minute. Remove from the heat and stir in the almond butter and salt until smooth. Fold in the oats and almonds and stir until the mixture has thickened, about 2 minutes. Scoop tablespoon-sized mounds onto the lined baking sheet. Press a few chocolate chips on the top of each cookie, flattening slightly. Place the baking sheet in the freezer for 1 hour to set. Store in the refrigerator for up to 3 days or store in the freezer for up to a month for easy snacking.
NO-BAKE CHOCOLATE OATSIES
You can use either old-fashioned oats or quick oats for this recipe. I prefer old fashioned because the end result is a chewier cookie.

Steps:
- Line two rimmed baking sheets with parchment or wax paper, and set aside.
- Bring the sugar, butter, milk, and cocoa powder to a rolling boil in a medium saucepan over medium-high heat. Let boil for 1 to 2 minutes, stirring often, until mixture measures 230° on an instant read thermometer. Remove from the heat.
- Stir in the oats, coconut, peanut butter, chocolate-hazelnut spread, vanilla, and salt until everything is combined.
- Working quickly before the mixture sets up, drop tablespoons of the mixture onto the prepared pans, flattening slightly, if you like. Immediately sprinkle with more coconut; press gently to help the coconut stick to the cookies. Let stand at room temperature until firm, about 30 minutes. Store in an airtight container in a cool, dry place for up to 1 week-if they last that long!
PEANUT BUTTER-CHOCOLATE NO-BAKE COOKIES
What could be better than an indulgent dessert made from ingredients you have sitting in your pantry and that never needs to go into the oven? These cookies take just minutes of work; most of the time is spent waiting for them to harden into the rich, nutty, chocolaty delights that they are.

THE BEST NO BAKE CHOCOLATE OATMEAL COOKIES
I've been experimenting with several versions of this recipe and I think I've found the best variation. The others I've tried are either too juicy and you have to keep them cool to keep their shape, or they're just too crumbly and don't stay together well. This combination has (in MY opinion) the best consistency.

HEALTHIER NO-BAKE CHOCOLATE OATMEAL COOKIES
This is a healthier version of the no-bake cookies we all know and love. Lots of cocoa, more oatmeal (we use regular instead of the quick-cook kind for even more oaty texture), and less sugar and butter make us feel a little less guilty for indulging!

- Add peanut butter, butter, and vanilla to hot mixture; stir until combined.
- Stir in oats thoroughly and drop by spoonfuls (I use a small cookie scoop) onto waxed paper. Cool thoroughly before removing from paper.
- (Note: the new nasty-tasting flaxseed peanut butters taste just fine in this recipe; add that and increase the healthiness even more!).
