This quick Ninja Foodi spaghetti squash recipe has "cheesy" in its name for a reason—stir in any kind you have in your fridge. -Jean Williams, Stillwater, Oklahoma

1 large spaghetti squash (3-1/2 pounds)
4 bacon strips, chopped
3 tablespoons butter
1 tablespoon brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup shredded Swiss cheese, divided

Steps:

  • Halve squash lengthwise; remove and discard seeds. Place wire rack with handles and 1 cup water into inner pot of large multi-cooker. Place squash on rack. Lock pressure lid. Press pressure function; select vegetables setting. Set to long cook time (12 minutes). Start., Quick-release pressure. Remove squash, rack and water from inner pot; wipe dry. Separate squash into strands with a fork., Press saute function; select pork setting. Press timer; set to 15 minutes. Add bacon; cook and stir until almost crisp. With a slotted spoon, remove bacon to paper towels. Stir butter, brown sugar, salt and pepper into drippings. Add squash. Cook and stir until heated through. Press cancel. Stir in 1/2 cup cheese. , Transfer squash mixture to a 1-1/2 qt. baking dish; top with bacon and remaining cheese. Clean inner pot. Place dish on wire rack with handles; lower into inner pot. Cover with air frying lid. Press air fry function; select custom. Press timer; set to 7 minutes. Start. Cook until cheese is melted.

1 lb ground beef
10 lasagna noodles, uncooked and broken into 2 in pieces
1 (24 ounce) jar pasta sauce
1 1/2 cups water
6 ounces Baby Spinach, fresh
1 cup mozzarella cheese, shredded
1/2 cup ricotta cheese
1/4 cup parmesan cheese, shredded

Steps:

  • Place beef into pot.
  • Set to STOVETOP HIGH.
  • Cook uncovered 10 minute or until beef is browned, stirring often.
  • Arrange noodle pieces over beef.
  • Pour sauce and water over noodles.
  • Set to STOVETOP MED.
  • Cover and cook 15-20 minutes or until noodles are tender.
  • Turn off pot.
  • Stir in spinach.
  • Stir cheese in bowl.
  • Spoon cheese mixture over noodle mixture.
  • Cover and let stand.

1 3 3/4- to 4-pound spaghetti squash, halved lengthwise, seeded
1 pound bulk pork sausage
1 cup chopped green bell pepper
1 cup chopped onion
2 garlic cloves, minced
1 1/2 cups purchased marinara sauce
1/2 cup grated Parmesan cheese

Steps:

  • Wrap squash halves in plastic wrap. Cook 1 at a time in microwave on high until tender, about 8 minutes. Pierce plastic to allow steam to escape. Cool. Meanwhile, sauté sausage, bell pepper, onion and garlic in heavy large skillet over medium-high heat until sausage browns and vegetables are tender, breaking up sausage with back of spoon, about 12 minutes. Mix in marinara sauce.
  • Using fork, pull out squash strands from shells, leaving shells intact. Mix squash strands into sausage mixture. Season filling to taste with salt and pepper. Spoon filling into squash shells. (Can be prepared 1 day ahead. Cover; refrigerate.)
  • Preheat oven to 400°F. Arrange filled squash halves on baking sheet. Sprinkle each with 1/4 cup Parmesan. Bake uncovered until heated through, about 20 minutes (30 minutes if previously chilled). Cut each squash half in two and serve.

1 (4 lb) spaghetti squash
4 Italian turkey sausage links, casings removed (about 12 oz.total)
2 tablespoons parmesan cheese, shredded
2 teaspoons garlic and herb seasoning (I use Mrs. Dash)
1 medium tomatoes, diced
1 cup chopped Baby Spinach

Steps:

  • Preheat oven to 350 degrees. Mist a 9x13 baking pan with Pam. Cut squash in half lengthwise, scoop out seeds and place cut side down in baking pan. Bake 45 minutes until tender.
  • Remove squash from oven and let cool slightly. Remove squash from pan, and using a fork, scrape out flesh back into pan. Spread out slightly.
  • Mist a large skillet with Pam. Crumble sausage into skillet and cook over med-high heat until no longer pink, breaking into small pieces with spoon. Remove from heat.
  • Sprinkle 1 tbsp parmesan cheese and 1 tsp Mrs. Dash over squash. Top with tomato spinach and crumbled sausage; sprinkle with remaining 1 tbsp parmesan and remaining 1 teaspoons seasoning. Lightly coat the mixture's surface with Pam.
  • Bake 20-25 minutes more, or until casserole heats through and cheese melts.

Steps:

  • Set pot to STOVETOP HIGH. Add sausage to pot. Cook uncovered for 10 minutes or until browned, stirring often. Remove sausage from pot. Spoon off fat.
  • Pour water into pot. Place roasting rack into pot. Place squash, cut side down, on rack. Set OVEN to 425 degrees F for 25 minutes.
  • Using fork, scrape flesh from squash and add to pot. Sprinkle with 1 tablespoon Parmesan cheese and 1 teaspoon garlic and herb seasoning. Top with sausage, tomato, spinach and remaining Parmesan cheese and seasoning. Set OVEN to 425 degrees F for 15 minutes. Cover and cook until mixture is hot and bubbling. Sprinkle with mozzarella cheese.

  • Cut spaghetti squash in half lengthwise. Scoop the seeds out with a spoon. Lay squash, cut-side-down in a 9 by 11-inch baking dish. Pour the boiling water in the dish and cover tightly with foil. Carefully transfer to the oven. Bake 40 to 45 minutes until the squash is tender. To check if it is done, remove foil, carefully flip the squash over, and drag a fork over the flesh.   • Meanwhile, fit food processor with steel blade attachment, close lid and turn motor on. Drop garlic through feed spout and continue processing until the garlic is minced. Open lid and add carrot and celery. Process until the carrot and celery are finely chopped. Open lid, add onions and pulse until the onions are roughly chopped. Alternatively, use a knife to mince garlic, finely chop carrot and celery and dice onions.
  • If turkey sausage is in links remove the casings by slicing along the length of each sausage and slipping the casing off. Heat oil in a large skillet over high heat. Crumble in sausage, and cook, stirring and breaking up chunks of meat until browned, 4 to 5 minutes. Stir in the vegetable mixture, Italian seasoning, salt and pepper and cook, stirring occasionally until the vegetables are cooked down and browned slightly, 8 to 12 minutes. Pour in wine and cook until mostly evaporated, 2 to 3 minutes. Stir in tomato and bring to a simmer. Reduce heat to maintain simmer and cook, stirring occasionally until the vegetables are tender, about 5 minutes.
