CREAMY GUACAMOLE SALSA (LIKE MAMA NINFA'S)
A creamy guacamole salsa that's a mashup of guacamole and salsa verde. This is the famous Mama Ninfa's green sauce recipe tweaked to give it more of a flavor punch!

Steps:
- cook: add the ingredients to a medium saucepan over medium-high heat along with a big pinch of salt and stir to combine. When you hear it start to sizzle, lower the heat to medium-low and let it cook for 12-15 minutes or until everything softens. If around the 10-minute mark you see a lot of liquid leftover in the pan, kick the heat up to medium-high to help evaporate all the liquid, stirring as needed to prevent sticking. Allow the mixture to cool for 20 minutes before proceeding.
- blend: add the avocados, cooled tomatillo mixture, and cilantro to a food processor and pulse until smooth. Add the sour cream and continue to mix until it reaches a mostly smooth consistency. Drizzle in a couple tablespoons of lime juice and pulse to combine. Taste and adjust with additional lime juice and salt as desired. Pour the guacamole salsa into a bowl, cover and refrigerate for at least 3 hours before serving.
NINFA'S GREEN SAUCE
This green sauce is popular in many Mexican restaurants around Houston. Ninfa's was one of the first to serve this sauce. The recipe has been printed in the Houston Chronicle several times. I've adapted it slightly. Mama Ninfa Rodriquez Laurenzo opened the original Ninfa's Restaurant on Navigation street in 1973. Her food differed from the usual Tex-Mex restaurants in town. She seemed to achieve fame in the kitchen overnight. Some of her famous guests included George Bush, Michael Douglas, John Travolta, Rock Hudson, and Aerosmith! Mama Ninfa lost her battle with cancer last year, but her much loved Mexican food lives on. The original Ninfa's is still there, and there are several other locations here in Houston as well.

- Peel avocados and place them in a blender.
- In a medium saucepan, boil tomates, tomatillos, garlic, and jalapenos for 15 minutes.
- Remove from saucepan and place all ingredients in a blender with avocados.
- Add sour cream and blend until smooth.

GREEN CHILE CREAMY AVOCADO SALSA

Steps:
- Roast the chiles and tomatillos under the broiler until blackened on both sides, about 10-12 minutes, turning once. Once blackened, place the chiles in a paper sack or plastic food-storage bag, close it tight and let the chiles steam for 20 minutes. Place the tomatillos in a blender.
- After the chiles have steamed, remove from the bag and rub off the skin. Remove the stems and seeds from both the chiles and add to the blender.
- Add the avocado, garlic, cilantro, lime juice, and water to the blender. Puree until smooth, then add salt to taste (I usually start with 1/2 teaspoon kosher salt). If too thick, feel free to thin it with more water.
- Will keep in the refrigerator for 3 days.
NINFA'S GREEN SAUCE

- Combine chopped tomatoes, tomatillos, jalapeños, and garlic in a saucepan. Bring to a boil (tomatoes provide the liquid), reduce heat and simmer 10 to 15 minutes.
- Remove from heat and let cool slightly.
- Place tomato mixture with the avocados, cilantro and salt in food processor or blender and blend until smooth.
- Pour into a bowl and stir in sour cream.
NINFA'S NACHOS
This is a fabulous recipe from our school secretary where I work. My family loves it. My DD had me make this twice last week.

Steps:
- Brown hamburger in large skillet and drain off liquid.
- Make a space in middle of ground beef and put in garlic, then olive oil.
- Cook for 2 minutes then mix up well with beef.
- Add burrito mix, cumin, and oregano, and salt to taste.
- Add green onions, olives, and bell pepper.
- Last add beans and mix well.
- Preheat oven to 350 degrees F.
- Start by putting a thin layer of meat in 9 x 13 pan.
- Spread 1/2 of nacho cheese chips, pressing down gently to crush slightly.
- Spread 1/2 of meat mixture across evenly over chips.
- ***Spread 1/2 of avocado dip and 1/2 of sour cream across meat.
- Spread 1/2 of cheese across avocado/sour cream mixture.
- Repeat layers starting with chips.
- Bake for 20 minutes. Serve with salad on side.
- ***My DS doesn't like either sour cream or Avocado and I made this without this layer and it turned out just as great. I had avocado dip and sour cream on side.

NINFA'S RED SALSA
I have loved Ninfa's for a long time. Recently I found a book with handwritten recipes from several Texas area restaurants, so I'm sharing them.

Steps:
- Place the dried chiles on a cookie sheet and toast in a 325-degree oven for 3 to 4 minutes. Stem and seed them, and then set aside.
- In a medium skillet, simmer the tomatoes and garlic, in just enough water to prevent scorching until softened-about 20 minutes. Transfer to a blender and puree along with the cilantro, salt, toasted chiles, and if desired, jalapenos, for 1 to 2 minutes.
- Sauté the pureed salsa in a skillet with hot oil for 1 to 2 minutes.
- If the salsa is pale, you may wish to add some tomato sauce to deepen the color.
- This salsa may be made in advance and either refridgerated or frozen.

- Add the green or yellow tomatoes (or the salsa verde and water) to a heavy-bottomed saucepan along with the tomatillos, jalapenos, and garlic. Bring to a boil, then lower heat and simmer for 10 to 15 minutes, or until the tomatillos are tender. Remove the pan from the burner and let the mixture cool for about 15 minutes.
- Transfer the contents of the pan into a food processor or blender with a metal blade. Add the avocados, cilantro and salt and blend until completely smooth. Use a rubber or silicone spatula to scrape the sauce from the food processor or blender into a mixing bowl and whisk in the sour cream or Greek yogurt until evenly coloured. Serve immediately or store in a jar or other container with a tightly fitting lid for up to a 4 days.
