NILAGANG BAKA
Nilagang Baka is the ultimate comfort food! Loaded with fork-tender beef shanks, tendon, and vegetables, this Filipino-style boiled soup is hearty and tasty.

Steps:
- In a pot, combine beef shanks, beef tendon, and water. Over medium heat, bring to a boil, skimming scum that floats on top.
- When clear of froth, add onions, peppercorns, and fish sauce.
- Lower heat, cover and cook at no more than a simmer for about 2 to 2 1/2 hours or until shanks are tender and tendons are soft. Add more water as needed during cooking to maintain about 6 to 7 cups.
- Add corn and cook for about 5 to 7 minutes.
- Add potatoes and cook for about 5 minutes or until almost tender.
- Add green beans and cabbage and cook for another 2 to 4 minutes or until vegetables are tender yet crisp.
- Season with salt to taste. Ladle into serving bowls and garnish with chopped green onions, if desired. Serve hot.

Steps:
- In a soup pot, brown garlic and onion.
- Add in beef, water and bring to a boil, lower the fire and let simmer until beef is tender for about an hour or two (longer for more flavor).
- Remove all the resulting scum that will rise to the top of the pot and keep the stock clear.
- Add potatoes and bring up to a boil to cook potatoes.
- Season with salt, pepper and patis.
- Lower heat and add in vegetables and cook uncovered.
- Serve hot with rice, soy sauce/patis and calamansi to taste.

- Pour 2 1/2 liters of water into a large pot. Stir in the beef, onion, pepper corn and fish sauce. Bring to a boil. While boiling, skim off the foam and fat that accumulates on the surface.
- Reduce heat to simmer gently and cook covered for approximately 2 hours or until meat is tender. If the water gets a little low, add more water. The meat should be submerged in water while simmering.

- Boil beef tendons and shank. In a pot on medium heat, boil 3 L of water. Once boiling, add in beef tendons and shanks together with 1 tbsp of black peppercorns. Let it cook for 45 minutes until tender.
- Cook yellow onions, cabbage, potatoes, long beans and season . Once tender, add yellow onions and letitcook for 10 minutes. Add cabbage, potatoes and let it cook for another 10 minutes before adding the long beans. Let the long beans cook for 2 to 3 minutes until desired doneness. Season with 4 tbsp fish sauce and mix well.
