Nigerian Pancakes With Shrimp image

The pancakes are a meal in themselves, and require no other accompaniment than a green salad. I found this on the internet. Posted for ZWT7-Africa. Note: Soak time is not included. Cook time is approximate to cook all the panckes in batches.

Number Of Ingredients 10

1 lb pea beans, soaked in water to cover overnight (any white beans will do)
1 tablespoon salt
1/2 lb fresh tomato, cut in 1/4 inch cubes
1/2 lb yellow onion, finely chopped
1 lb cooked shrimp, in 1/2 inch pieces
1 tablespoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
6 large eggs, beaten lightly
1/2 cup peanut oil

Steps:

  • Drain the water from soaked beans. In a 1 quart saucepan, put beans in and cover again with fresh water and 1 Tblsp. salt. Simmer slowly until tender.
  • Drain and put through a food mill or sieve into a 3 quart bowl.
  • Add tomatoes, onions,shrimp, 1 Tblsp. salt, black pepper, cayenne pepper, and eggs.
  • In a large skillet: Heat peanut oil. Drop the mixture by heaping tablespoons in the hot fat. It will spread out like a pancake. Turn when bottom is brown and firm. Serve 2 pancakes as a portion.

2 garlic cloves
3/4 cup water
2 large eggs, beaten
1 tablespoon Asian sesame oil
3/4 cup all-purpose flour
1 bunch scallions, cut into thin matchsticks
1/2 red bell pepper, cut into thin matchsticks
1/2 pound medium shrimp, peeled and halved lengthwise
1/4 cup vegetable oil, divided
Accompaniment: soy-pickled jalapeños including liquid

Steps:

  • Preheat oven to 200°F. Set a rack in a 4-sided sheet pan and put in oven. Mince and mash garlic with 3/4 teaspoon salt, then whisk together with water, eggs, and sesame oil. Whisk in flour until smooth. Stir in scallions, bell pepper, and shrimp.
  • Heat 1 tablespoon oil in a 12-inch nonstick skillet over medium-high heat until hot. Stir batter, then cook pancakes in batches of 4 (2 tablespoons each, with some vegetables and 1 or 2 pieces shrimp), pressing down lightly with a large spatula to flatten and evenly distribute vegetables, turning once, until golden and cooked through, 3 to 5 minutes per batch. Drain on paper towels, then transfer to rack in oven to keep warm. Add oil to skillet between batches as needed.
