NIGERIAN KIDNEY BEAN STEW WITH A PEANUT SAUCE
This recipe is from Madhur Jaffery's World Vegetarian. It is very easy to make, and has a wonderfully rich flavour, or as she says "an unctuous sense of creaminess." Serve it over rice, or with a good bread.

Steps:
- Soak the beans overnight. Drain. Place beans with 6 cups of water into a large pot. Bring to a boil. Reduce heat and simmer, stirring occasionally, for 2 - 2 1/2 hours or until beans are tender.
- Heat the oil in a skillet over medium heat. Add the onion, garlic and green pepper. Saute until the onion is just translucent, turning the heat down as needed.
- Then, add the cumin and stir once or twice. Add the tomato paste, cayenne, lemon juice & 1/2 cup of water. Stir and bring to a simmer. Turn the heat down and simmer for about 15 minutes.
- Meanwhile, put the peanut butter in a small bowl. Slowly add about 6 tbs of the liquid from the beans, mixing as you go. Stir this mixture back into the beans.
- When the tomato mixture has finished cooking, pour it into the pot of beans. Add the corn. Stir and bring to a simmer. Cover, turn the heat to low and simmer gently for 10 minutes, stirring occasionally.
- Serve hot over rice, or with a good bread.
KIDNEY BEAN STEW WITH SWEET POTATOES AND ORANGES

The stew can be eaten alone or with rice and it tastes perfectly spiced both ways. The fresh roasted coriander and the addition of oranges makes this a surprisingly light stew compared to the heavier texture and feel of traditional Indian Rajma/Chhole dishes.

Steps:
- Place the oil in a Dutch oven or large pot over medium-high heat.
- Add the ginger and garlic and cook for 2 minutes. Add the bay leaves, cumin seeds, garam masala, fenugreek seeds, oregano, rosemary, and turmeric, and cook, stirring for about 2 minutes. Add the tamarind pulp, tomatoes, sweet potatoes, and water and bring to a boil.
- Reduce the heat and simmer until the potatoes are tender, about 15 minutes.
- Add the kidney beans and oranges and cook for 2 minutes to heat through. Turn the heat off, cover with a lid and let sit for 10 minutes. Remove the bay leaves and serve.
NIGERIAN GROUNDNUT STEW
This is posted for ZWTII - for African/Middle East, recipe taken from "The Avon International Cookbook". English colonists called peanuts groundnuts, giving this celebrated West African dish its unusal name.

- In a large saucepan or Dutch oven brown chicken pieces in hot oil abut 15 minutes; remove from pan. Set aside, reserving drippings.
- Add beef, onion, and green pepper to drippings; cook till beef is brown and onion is tender. Drain off fat. Stir in undrianed tomatoes, salt, and red pepper. Bring to boiling; reduce heat. Cover; simmer 30 minutes.
- Add chicken pieces: simmer 20 minutes more. In small sauce pan melt peanut butter over low heat. Stir into chicken mixture. Return mixture to boiling; reduce heat. Cover simmer 20 minutes more. Skim off fat.
- Serve with mashed sweet potatoes or hot cooked rice.

NIGERIAN BEEF-SPINACH STEW
From the American Heart Association cookbook. The book states that if you were a member of the Yoruba tribe in Nigeria, you would make this dish with melon seed and call it Efo Egusi. Efo means spinach and egusi means melon seed. In other parts of West Africa, it is known as Palaver sauce. Whatever its name, this classic African dish is usually a mixture of meat and fish. Here it has a modern addition to the sauce in the form of ginger ale. I haven't made this but I will probably make it on the stove in a Dutch oven or it seems adaptable to the crockpot.

- Brown beef cubes in oven. Add giner ale, red pepper. black pepper, and the chopped tomato.
- Cover and simmer 1 1/2 hours or until meat is tender.
- Meanwhile, wash the spinach, and remove any tough stems. Tear the leaves into small pieces. Slice the onions thinly and separate the slices into rings. Slice the whole tomatoes.
- Mix the cornstarch with 1 tablespoons cold water. Stir into the stew and cook 1 minute until slightly thickened.
- Add onion rings, tomato slices and spinach. Return to simmer. Cover and simmer until the vegetables are just tender-about 5 minutes.
- Serve with rice.

VEGETARIAN STEW WITH KIDNEY BEANS
Remarkably similar in taste to real beef stew, but made with kidney beans for that no-cholesterol, no-fat goodness. I found this on boutell.com web-site. Very tasty stew. You may add tamari (soy sauce) for colour, and a few teaspoons nutritional yeast flakes. I did not count in the time to soak beans overnight. Times are approximate.

Steps:
- Soak the beans overnight.
- Rinse and cook for 1/2 hour.
- (skip this step if using can beans) Add 2-3 cups water and bring back to boil.
- Add the vegetables and bring back to boil.
- Simmer, covered, until the potato and beans are thoroughly cooked.
- Takes about 1 hour, the longer it simmers the better its flavour.
- To thicken: in a container, shake up 2-3 tablespoons flour with a 1/2 cup of water.
- Add to the stew and bring to a boil.
- Boil for 5 minutes, stirring often to prevent sticking.
- Add a small amount of tamari sauce (soy sauce) to darken the stews color if desired.
- A few teaspoons nutritional yeast flakes for added flavour if desired.
- This stew refrigerates and freezes well.

WEST AFRICAN PEANUT STEW
A hearty stew that's super-easy to make and great for peanut butter lovers. Can be made vegetarian or with chicken. In a pinch, feel free to use vegetable or corn oil for peanut oil, powdered ginger for fresh, water for stock, etc. Kale works well in place of collard greens.

- Heat the peanut oil in a large pot over medium-high heat; cook and stir the onion, garlic, and ginger in the hot oil until softened, about 5 minutes. Add the chicken; cook and stir until completely browned. Season with the crushed red pepper, salt, and black pepper. Pour the chicken stock over the mixture. Stir the sweet potatoes into the liquid and bring the mixture to a boil; reduce heat to low, cover the pot partially with a lid, and cook at a simmer for 15 minutes.
- Stir the tomatoes, collard greens, and peanut butter into the soup. Partially cover the pot again and continue cooking, stirring occasionally, another 20 minutes.
