1 pork tenderloin (1 lb.)
1/4 tsp. cracked black pepper
1/4 cup packed brown sugar
2 Tbsp. apple juice
1 tsp. GREY POUPON Dijon Mustard
dash ground nutmeg

Steps:

  • Heat oven to 400ºF.
  • Wrap bacon around tenderloin; place in foil-lined pan sprayed with cooking spray. Sprinkle with pepper.
  • Bake 20 min. or until cooked to 135ºF. Meanwhile, bring remaining ingredients to boil in saucepan on medium heat, stirring occasionally.
  • Brush meat with sugar mixture. Bake 10 min. or until tenderloin is done (145ºF). Remove from oven; cover loosely with foil. Let stand 3 min. before slicing.

One 5-pound boneless pork roast, fat trimmed
1/4 cup extra-virgin olive oil
Kosher salt and cracked black pepper
12 to 15 fresh parsley leaves
12 to 15 fresh sage leaves
12 strips bacon
4 pounds fingerling potatoes
2 red onions, sliced into 1 1/2-inch julienne

Steps:

  • Preheat the oven to 400 degrees F.
  • Coat the pork with olive oil and sprinkle with salt and pepper. Arrange the parsley and sage leaves along the top of the roast.
  • Lay the bacon horizontally in a roasting pan, with the strips touching. Set the pork roast in the center of the pan and fold the bacon over to wrap the roast.
  • Add the potatoes and onions to the pan, to border the roast. Transfer to the oven and roast until the bacon is crisp and the pork reaches an internal temperature of 140 degrees F on an instant-read thermometer, about 1 1/2 hours.
  • Transfer the roast to a cutting board and rest for 10 to 15 minutes. Slice and serve with the potatoes and onions.

14 strips bacon (about 13 ounces)
1 pork tenderloin, trimmed (about 1 1/4 pounds)
Kosher salt and freshly ground black pepper
1/3 cup Dijon mustard
3 tablespoons packed light brown sugar
1 1/2 teaspoons garlic powder
1/2 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Lay the bacon onto a rimmed baking sheet lined with a baking rack. Bake until the bacon has rendered some of its fat but is still completely flexible and hasn't begun to brown, about 15 minutes. Remove from the oven and let cool 5 minutes. Raise the oven temperature to 450 degrees F.
  • Generously sprinkle the tenderloin with salt and black pepper.
  • In a small bowl, stir together the mustard, brown sugar, garlic powder and cayenne. Coat the tenderloin all over with the mixture.
  • Starting at one end, wrap the bacon strips around the tenderloin, overlapping them slightly so they are shingled.
  • Place the tenderloin on the baking rack and roast until 130 degrees F at the thickest point, about 17 minutes. Let rest 5 minutes, then transfer to a cutting board using a long offset spatula and tongs. Slice into 1-inch-thick rounds and serve.

1 can (15 oz.) diced tomatoes, drained
1/3 cup KRAFT Original Barbecue Sauce
3 ancho chiles, stemmed, seeded and hydrated
2 guajillo chiles, stemmed, seeded and hydrated
1 apple, peeled, coarsely chopped
1 oz. (1 small cone) piloncillo (Mexican brown loaf sugar), coarsely chopped

Steps:

  • Heat oven to 350ºF.
  • Cook roast in large skillet on medium-high heat 5 min. or until evenly browned on all sides, turning occasionally; transfer to roasting pan sprayed with cooking spray. Top with bacon, overlapping slices as necessary to cover top of roast. Bake 1 hour or until roast is done (145ºF).
  • Meanwhile, cut 1 pineapple wedge into 12 pieces; reserve for later use. Chop remaining pineapple; place in blender. Add remaining ingredients; blend until smooth. Pour into saucepan. Bring to boil, stirring frequently. Simmer on low heat 20 min., stirring occasionally.
  • Place roast on cutting board. Tent with foil; let stand 5 min. Meanwhile, cook pineapple wedges in skillet on medium heat 5 min. or until evenly browned, turning frequently.
  • Slice roast. Serve with the pineapple wedges and mole sauce.

This is what I got when I realized that I had a pork loin and bacon in the fridge at the same time! Only 3 ingredients and a little prep and you'll have a very tasty, juicy pork. I used Recipe #347977 for the dry rub. I also let the loin sit overnight in the fridge after it was prepped. One little tip - count the number of toothpicks that you use so you know how many you need to pull back out! I cooked this in the BBQ but I don't see why you can't cook it on a rack in the oven. Enjoy!

4 lbs pork loin
2 -4 tablespoons dry rub seasonings, your favourite
12 slices bacon

Steps:

  • Rub the pork loin with the dry rub. Be sure to cover the whole thing.
  • Lay bacon slices out on a cutting board, overlapping about 1/4". Roll the pork loin over the bacon, making sure to roll the bacon up and around it.
  • Meet the bacon slice ends together and secure each one with a toothpick. You may have to pull the bacon slightly to stretch it far enough for the ends to meet.
  • Heat a nonstick pan over medium-high heat. Sear the outside of the loin completely until the bacon is nicely browned.
  • Meanwhile, preheat barbecue to 350°F, leaving the middle burners off. Place the pork loin over indirect heat on the barbecue. Rotate the roast every 10 minutes or so until pork is cooked through and internal temperature reaches 170°F, about 45-60 minutes.
  • Let rest for 10 minutes, remove the toothpicks and slice.

Steps:

  • Prepare the charcoal your Weber® Kettle Premium Grill for the indirect cooking method. Instructions are provided in the Charcoal Grill Owner's Guide that comes with the grill.
  • In a small bowl, whisk together the ketchup, brown sugar, onion powder, garlic powder, salt, pepper and worcestershire sauce.
  • Brush the sauce all over the meat, and wrap the bacon strips around the roast, one at a time.
  • Secure the bacon at the bottom of the roast with toothpicks.
  • Place the pork on the grill and cover the grill.
  • Cook for one hour or until internal temperature reaches at least 145 degrees F and bacon is crispy.
  • Remove from grill. Cover with foil and let rest for 15 minutes.
  • Remove toothpicks. Cut the meat into slices and serve.
