GARLIC DILL NEW POTATOES

This New Potato side dish is full of garlic, fresh dill, and creamy butter!

Number Of Ingredients 5

1 ½ pounds new potatoes (or baby potatoes)
4 cloves garlic
2 tablespoons butter
1 tablespoon fresh dill (minced)
salt & pepper (to taste )

Steps:

  • Wash potatoes and cut in half if larger than bite-sized.
  • Peel garlic cloves and slice each clove into 2-3 slices.
  • Bring a large pot of salted water to a boil. Add potatoes and garlic.
  • Boil until potatoes are tender when poked with a fork, about 12-14 minutes.
  • Drain potatoes & garlic well and place in a bowl.
  • Stir in butter and dill and season with salt & pepper to taste.

Roasted New Potatoes with Garlic image

1 1/2 pounds medium red bliss or other waxy-style potatoes, skin-on and scrubbed
2 tablespoons unsalted butter, melted
1 teaspoon kosher salt, plus more
1 tablespoon finely minced garlic
1 tablespoon finely chopped flat-leaf parsley
Freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Half the potatoes lengthwise and cut them into 1-inch-wide wedges. In a medium bowl, toss the potatoes with the butter and 1 teaspoon of salt. Spread the potatoes out on a roasting pan large enough to hold them in a single layer. (Arrange the potatoes cut-side down, to ensure crisply browned edges.)
  • Roast the potatoes until golden brown, about 45 minute. Add the garlic and stir to coat the potatoes evenly. Continue to roast until the potatoes and garlic are evenly browned, about 15 minutes more. (Take care that the garlic doesn't burn.) Remove from the oven and mix with the parsley. Season with salt and pepper to taste. Serve.

750 gram Baby Potato
10 gram Fresh Dill
5 clove Garlic
2 tablespoon Vegan Butter
1/2 teaspoon Salt
1 pinch Ground Black Pepper

Steps:

  • Wash and place the Baby Potato (750 gram) in a pan. Cover with at least 3cm of boiling water and cook on medium heat until tender for about 20 minutes.
  • Drain the potatoes in a sieve and shake to remove any excess water, set aside, and allow them to dry for a few minutes.
  • Heat the Vegan Butter (2 tablespoon) in a pan on medium heat. Add the Garlic (5 clove) and fry until golden.
  • Add the baby potato and spread them evenly. Press down gently on each potato with a large fork or potato masher until it's flattened but still in one piece.
  • Gently stir and turn the potatoes so they're evenly coated in butter. This should take 3-5 minutes.
  • Add Fresh Dill (10 gram), Salt (1/2 teaspoon), and Ground Black Pepper (1 pinch), toss and then cook for another couple of minutes.
  • Serve hot and enjoy!

1/2 cup butter, cubed
1/2 cup minced fresh parsley

Steps:

  • Cook potatoes in boiling salted water for 20-30 minutes or until tender; drain. Cool for 5 minutes. Remove skins. In a large skillet over medium heat, cook and stir the potatoes in butter until lightly browned, about 20 minutes. Stir in parsley.

I love this recipe. It is so simple, and yet, so delicious. I serve these potatoes with my Tarragon Cream Chicken. However, they are a delicious accompaniment to any meal. I took this recipe from Southern Living. It can be found in their Ultimate Quick and Easy cookbook. I generally do make a couple of changes- I add 1/4-1/2 tsp. salt to the garlic butter. I also often add minced fresh dill when I have it. Enjoy!

18 new potatoes, quartered (about 2 3/4 lbs.)
1/4-1/3 cup butter
2 -4 garlic cloves, minced (more or less to taste)
1 tablespoon chopped fresh parsley
1/4 teaspoon pepper
1/4-1/2 teaspoon salt (not in original recipe) (optional)
1/2-1 tablespoon chopped fresh dill (not in original recipe) (optional)

Steps:

  • Add potato to salted water in a large saucepan. Cook, covered, 10 minutes or until tender. Drain. (Do NOT overcook the potatoes- they will be mushy!).
  • Meanwhile, melt the butter in a small skillet over medium-high heat.
  • Add garlic and salt (optional). Cook, stirring constantly, for 3 minutes or until garlic is tender.
  • Add parsley, pepper, and dill (optional). Pour over potatoes, tossing gently to coat.
  • Enjoy!
