6 small red potatoes, quartered
2 tablespoons butter
2 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
sea salt and ground black pepper to taste
1 cup fresh spinach leaves

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place the potatoes in a single layer in a ceramic casserole dish. Melt the butter in a skillet over medium heat. Add garlic, and cook until golden. Stir in the rosemary, and cook just until fragrant. Pour over the potatoes in the dish. Season with sea salt and pepper.
  • Roast uncovered for about 30 minutes in the preheated oven, until the potatoes are fork tender. Remove from the oven, and toss with the spinach leaves. Return to the oven for 1 to 2 minutes, until the spinach has wilted.

2 1/2 lbs small red potatoes, scrubbed (about 1 1/2 inches in diameter)
1/4 cup water
2 lbs Baby Spinach
3 tablespoons vegetable oil
1 large onion, finely chopped
3 garlic cloves, minced
2 tablespoons peeled minced fresh ginger
2 jalapenos, minced with some seeds
3 large tomatoes, finely chopped
1 cup coarsely chopped cilantro, plus
cilantro leaf, for garnish
2 tablespoons ground coriander
2 teaspoons ground cumin
1 teaspoon paprika
1 teaspoon garam masala
3/4 cup plain yogurt
salt
cherry tomatoes, quartered, for garnish

Steps:

  • Put the potatoes in a large pot of salted water and bring to a boil.
  • Boil over moderate heat until tender when pierced with a knife, about 25 minutes.
  • Drain and let cool, then halve the potatoes.
  • Meanwhile, in a large, deep skillet, bring the water to a boil.
  • Working in batches, add the spinach by handfuls and cook over moderately high heat until wilted.
  • Using tongs, transfer the spinach to a colander and repeat with the remaining spinach.
  • Squeeze the spinach dry, then transfer it to a food processor and puree.
  • Wipe out the skillet.
  • Heat the oil in the same skillet.
  • Add the onion and cook over moderately high heat, stirring occasionally, until beginning to brown, about 8 minutes.
  • Add the garlic, ginger and jalapeños and cook, stirring, until fragrant, about 3 minutes.
  • Add the chopped tomatoes and cilantro and cook over moderate heat until most of the liquid has evaporated, about 10 minutes.
  • Add the coriander, cumin, paprika and garam masala to the skillet and cook, stirring, for about 2 minutes.
  • Slowly stir in the yogurt.
  • Add the potatoes and a large pinch of salt, cover and cook over moderately low heat for 5 minutes, stirring occasionally.
  • Add the pureed spinach and stir well.
  • Cover and simmer for 10 minutes to blend the flavors.
  • Season with salt.
  • Transfer the potatoes and spinach to a platter or bowl, garnish with the cilantro leaves and cherry tomatoes and serve.

2 lb potatoes (peeled and cut into very thin slices)
1 small onion (thinly sliced)
1 bag fresh spinach
1 Cup cream
1 1/2 Cup Gouda cheese (grated)
2 clove Garlic (crushed)
1 Tablespoon olive oil
1 Teaspoon oregano
1 Teaspoon rosemary
Small bunch of fresh chopped parsley
Sea salt
Black pepper
Butter (to grease baking dish)

Steps:

  • Preheat oven to 350 degrees F. Grease a deep sided 8 inch round baking dish.
  • Place the spinach in a colander set over a bowl. Pour over boiling water to wilt the spinach. Squeeze out as much excess water as you can and set aside.
  • In a medium skillet set over medium heat, add the olive oil and sliced onions. Give a good stir and cook for about 10 minutes until softened and lightly golden. Set aside.
  • In a medium saucepan set over high heat, add the cream and bring to a boil and add the garlic, oregano, rosemary, fresh parsley (reserving a small amount for the top),salt and pepper. Stir and remove from heat.
  • Add the potatoes to the cream mixture and coat well. Spoon about half of the potatoes into the baking dish. Top with the onions, spinach and bout 2/3 of the cheese. Top with remaining potatoes, cheese and parsley.
  • Cover and bake for about 1 1/2 hours. Uncover and return to oven for 15 more minutes. Remove from oven and allow to set for about 10 minutes before serving.

500g new potatoes , halved
1 tbsp olive oil
2 tbsp butter
100g spinach
2 tbsp caper , drained and rinsed
zest and juice 1/2 lemon

Steps:

  • Put the potatoes in a large saucepan and cover with cold salted water. Bring to the boil, then simmer for 15 mins until they are tender but still hold their shape, and you can insert a cutlery knife easily.
  • Drain the potatoes and allow to steam-dry. Heat the oil with 1 tbsp of the butter in a large frying pan over a medium-high heat. Once the butter is foaming, add the potatoes, cut-side down, and fry undisturbed for 5 mins until golden.
  • Add the remaining butter along with the spinach, capers, lemon zest and juice. Stir everything together for a few mins so that the potatoes are coated and the spinach has wilted, then season to taste with salt and black pepper.

2 pounds Yukon gold potatoes, quartered
Pinch salt, for water
1 tablespoon butter
2 cloves garlic, minced
1 small onion, halved and thinly sliced
1 teaspoon curry powder
4 cups baby spinach
1 large tomato, diced

Steps:

  • In a large pot, cover the potatoes with cold water, add some salt then bring to a simmer. Cook, uncovered, until tender when pierced with a knife, about 20 minutes. Drain the potatoes.
  • Melt the butter in a large skillet over medium heat. Add the garlic and the onion and cook until the onion has softened, about 2 minutes. Add the potatoes. Stir in the curry powder, then add the spinach and tomato. Cook and stir until the spinach has wilted and all the flavors have merged together, about 2 more minutes. Serve warm.

700g baby new potatoes
2 tbsp olive oil
1 lemon , zested
4 garlic cloves , whole and unpeeled
small bunch of thyme , leaves picked and torn, plus a few small leaves to serve
4 bay leaves
chicken legs, including thighs and drumsticks
½ tsp paprika
300g carrots , cooked, to serve
200g bag baby spinach
knob of butter
1 onion , chopped
2 garlic cloves , crushed
2 tbsp plain flour
300ml milk
generous grating of nutmeg
20g mature cheddar , grated

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Halve any large potatoes so they're all roughly the same size. Put in a pan of water, bring to the boil and simmer for 8-10 mins until tender. Drain.
  • Tip the potatoes into a large roasting tray to sit in one snug layer. Drizzle with 1 tbsp oil, season and add the lemon zest, garlic, thyme and bay. Toss to coat the potatoes. Use a potato masher to gently crack each potato, being careful not to break them up too much. Place the chicken on top, rub with the rest of the oil and the paprika, then season. Roast for 45 mins until golden brown and cooked through.
  • Meanwhile, make the creamed spinach. Boil the kettle and tip the spinach into a colander. Pour over the boiling water to wilt the leaves. Leave to cool.
  • Heat the butter in a pan. Add the onion and cook for 8-10 mins until softened. Stir through the garlic for another minute, then the flour for another minute. Pour in the milk, a little at a time, stirring and adding more until you have a smooth sauce. Bring to a simmer and stir continuously until the sauce has thickened.
  • Squeeze any liquid out of the spinach, then roughly chop. Add to the sauce along with the nutmeg. Season to taste. Transfer to a baking dish, top with the cheese, and bake for 15 mins until golden.
  • Cover the chicken and rest for 5 mins. Set aside 2 legs to cool before chilling for lunch tomorrow. Serve the rest (1 full leg each per adult, a drumstick or thigh each for the children) with the potatoes and spinach alongside some carrots.

Spice-crusted salmon with sautéed potatoes & spinach image

1 tsp fennel seeds
1 tsp coriander seeds
1 tsp yellow mustard seeds
6 salmon fillets , skin on (about 140-175g/5-6oz each)
3-4 tbsp vegetable oil
3 shallots , finely chopped
100ml white wine vinegar
150ml fish stock
1 pinch saffron (no more than 4-5 strands per person)
100g plus 1 tbsp salted butter , cut into 2.5cm cubes and chilled until needed
750g potatoes (we like Maris Piper), cut into 2cm cubes
2-3 tbsp vegetable oil
1 tsp turmeric
¼ tsp chilli powder (optional)
400g spinach leaves
1 tbsp butter

Steps:

  • Start by toasting the fennel, coriander and mustard seeds in a dry frying pan on a low heat, about 8-10 mins. Once you start to smell the rich aromas of the spices, you know they have cooked through. If they start to smoke, the spices will taste bitter and it would be better to start again. Once toasted, roughly crush using a pestle and mortar, or wrap the spices in a tea towel and crush with the base of a small saucepan. Stir in a pinch of black pepper.
  • Scrape the skin sides of the salmon with a knife to get rid of any remaining scales, and scrape off as much of the film of moisture you sometimes get (this helps to get the skin crisp). Slash the skin 3 times, about 3cm in length, to stop it shrinking during cooking.
  • Tip the spice mix onto a plate, lay the fish on it, skin-side up, so that the spices cover the underside of the fish. You can do this a few hrs ahead to help infuse the fish with the spices. You can also start the sauce ahead - put the finely chopped shallots in a pan with the vinegar, fish stock and saffron. Bring to the boil, then reduce by two-thirds. Set aside.
  • Put the potatoes in a pan and cover with salted water. Bring to the boil and boil for 1-2 mins only, then drain. Heat the oil in a large frying pan, then add the turmeric and chilli powder, if using. Toss the potatoes in the spiced oil, then cook for 5 mins without stirring. Shake the pan and cook for 5-10 mins more, or until the potatoes are cooked through. Season and keep warm.
  • When ready to cook the salmon, rub the skin sides with some oil, then fry in a pan (skin-sides down) on a medium heat with a little bit more oil, pressing down lightly on the fish for a few secs when it first goes in the pan. Don't touch the fish or move the pan for about 5-6 mins - this ensures you get beautiful crisp skin. When the edges start to look golden, turn the fish over and cook for 1 more min.
  • While the fish is cooking, cook the spinach in a large pan of boiling water for 2 mins. Drain, then squeeze out the excess water. Return to the pan and stir in the butter. This will form a simple emulsion, which will prevent water running out over the plate. Season.
  • To finish the sauce, warm the pan of reduced mixture until hot. Take off the heat, then whisk in all the butter, reserving 2-3 cubes. Once the butter is amalgamated, stir in remaining cubes. Season with pepper and use immediately.
  • Place a spoonful of spinach in the middle of each plate, then lay the salmon on top. Scatter some potatoes and pour some sauce around the fish. Sprinkle a few sea salt flakes over the fish and serve.
