CALABACITAS RECIPE

Calabacitas Recipe image

This calabacitas recipe is a side dish with big flavor, made with sauteed zucchini and squash with roasted peppers, onions, lots of seasonings and cheese.

Provided by Mike Hultquist

Categories     Main Course     Side Dish

Number Of Ingredients 17

2 poblano peppers (you can also use Anaheim peppers, any New Mexican varieties, even bell peppers work for super mild, or others)
1 jalapeno pepper (optional, for a spicier version)
1 tablespoon olive oil
1 medium onion (diced)
3 cloves garlic (diced)
2 small zucchinis (cubed)
2 small summer squash (cubed)
1 cup fresh corn kernels (canned or frozen are fine to use)
1 teaspoon Mexican oregano
1 teaspoon ancho powder (or use your favorite chili powder blend)
1 teaspoon red pepper flakes (optional, for a spicier version)
½ teaspoon cumin
Salt to taste
1/4 cup Chopped cilantro
Extra chopped cilantro, crumbly white cheese and red pepper flakes for garnish
1/4 cup Mexican crema or sour cream (or use milk)
½ cup cotija cheese (grated (use 1 cup for cheesier - you can sub in other melty cheeses, like Monterrey jack))

Steps:

  • ROAST THE PEPPERS. Slice the poblano peppers in half lengthwise and scoop out the insides. Remove the stems. Set them onto a baking sheet and bake them at 350 degrees 20-30 minutes, or until the skins char and bubble. You can also broil them about 12-15 minutes to the same effect.
  • Remove from heat and place them into a paper bag or baggie for a few minutes. The heat will steam them and loosen the skins.
  • Peel away the skins and roughly chop the peppers. Set them aside for now.
  • Cook the Onion, Jalapeno and Garlic. Heat the olive oil in a large pan or skillet and add the onions and jalapeno pepper. Cook for 5 minutes to soften.
  • Add the garlic and cook for 1 minute, until the garlic becomes fragrant.
  • Cook the Zucchini and Squash. Add the zucchini, squash, corn, Mexican oregano, ancho powder, chili flakes, cumin and salt to taste. Sauté until just tender, 3-4 minutes, to your preference.
  • Stir. Stir in the chopped peppers and chopped cilantro. Heat through.
  • Garnish. Garnish with fresh cilantro, crumbly white cheese and red pepper flakes
  • FOR CREAMY-CHEESY VERSION
  • Stir in the Mexican crema and cotija cheese until it melts through along with the chopped peppers and cilantro over low heat.

KOLACHES

Kolaches image

Provided by John T. Edge

Categories     breakfast, dessert, side dish

Time 2h15m

Yield 12 kolaches

Number Of Ingredients 21

1/4 ounce (1 packet) dry yeast
1 cup whole milk, lukewarm (110 to 115 degrees)
1/4 cup granulated sugar
3 cups all-purpose flour (about 420 grams), more for kneading
12 tablespoons (1 1/2 sticks) unsalted butter
2 large eggs
1 teaspoon salt
Vegetable oil, as needed
1 cup dried apricots, prunes or other dried fruit
2 tablespoons granulated sugar
1/4 teaspoon ground cinnamon
1/2 teaspoon finely grated lemon zest
8 ounces cream cheese, softened
1/4 cup granulated sugar
3 tablespoons all-purpose flour
1 large egg yolk
1/2 teaspoon finely grated lemon zest
2 tablespoons all-purpose flour
2 tablespoons granulated sugar
1 tablespoon unsalted butter
1/8 teaspoon ground cinnamon

Steps:

  • Make the pastry: In a large bowl, combine the yeast, milk, sugar and 1 cup flour. Mix well, cover and let rise until doubled in size, about 20 minutes.
  • Melt 8 tablespoons (1 stick) of the butter. Pour into a large bowl and whisk in the eggs and salt. Add to the flour mixture and mix well. Slowly add the remaining 2 cups of flour; the dough will be soft and moist. Turn onto a floured surface and knead for 10 minutes, adding flour as necessary to make a soft workable dough. Place in an oiled bowl, cover and let rise until doubled in size, about 1 hour. Meanwhile, make your choice of filling.
  • Make the dried-fruit filling: Place the fruit in a small saucepan and add 1/2 cup water or just enough to cover. Set aside until plumped and softened, about 1 hour. When the fruit is ready, add the sugar, cinnamon and lemon zest. Simmer over low heat for 15 minutes. Purée in a food processor or blender and set aside.
  • Make the cream cheese filling: Using an electric mixer, beat together the cream cheese and sugar until fluffy. Add the flour, egg yolk and lemon zest. Mix to blend and set aside.
  • After the dough has risen, punch it down and divide evenly into 12 pieces. Roll the pieces into balls and place on an oiled baking sheet several inches apart. Flatten each ball slightly so it is about 3 inches in diameter. Cover and let rise for 30 minutes. Heat the oven to 375 degrees. Meanwhile, prepare the crumble topping.
  • For the topping: In a medium bowl, combine the flour, sugar, butter and cinnamon. Crumble with your fingers until the mixture resembles bread crumbs. Set aside.
  • To assemble and bake the kolaches: With your finger, gently make an indentation in the center of each bun, being careful not to flatten too much. Fill with 1 tablespoon of filling and sprinkle with topping. Bake until risen and pale gold, 12 to 15 minutes. While baking, melt the remaining 4 tablespoons butter. When the kolaches are removed from the oven, brush with melted butter and serve warm.

BREAKFAST KOLACHES

Breakfast Kolaches image

This is a recipe that my family has created for a portable breakfast. It uses a bread machine for the dough preparation. The filling can be with a variety of things. We like the sausage, cheese, and hash browns for a breakfast meal. I prepare the recipe by filling the kolaches the night before, and keeping them in the refrigerator overnight. In the morning, I set out the kolaches to warm to room temperature while the oven is preheating, and then cook them for a quick, hot breakfast.

MEATBALL SUB KOLACHES

Meatball Sub Kolaches image

This savory take on a classic kolache brings all of the flavor from a meatball sub and turns it into a portable tasty treat!

Provided by Jonathan Melendez

Categories     Yeast Breads

Time 3h25m

Yield 12 kolaches, 12 serving(s)

Number Of Ingredients 27

3 1/2 cups all-purpose flour
1/3 cup granulated sugar
2 1/4 teaspoons active dry yeast
1 cup whole milk, warmed
1/2 cup unsalted butter, melted and cooled
3 large egg yolks
1 teaspoon kosher salt
1 lb ground beef
1 large egg
1/2 cup Italian seasoned breadcrumbs
1/3 cup whole milk
1/4 cup parmesan cheese
1 teaspoon kosher salt
1/2 teaspoon coarse black pepper
2 tablespoons fresh parsley, chopped
2 garlic cloves, minced
1/2 teaspoon granulated garlic
1/2 tesapoon granulated onion
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
1 large egg whisked with a splash water
1/2 cup marinara sauce
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1/4 cup Italian seasoned breadcrumbs
2 tablespoons fresh basil

Steps:

  • To make the dough, in a large bowl, combine 1 cup flour, granulated sugar, and yeast. Stir in the warm milk until well-combined, and set aside until small bubbles form at the surface, about 5 minutes.
  • In a separate bowl, whisk together the melted butter, egg yolks, and salt. Add to the yeast mixture and stir to combine. Stir in the remaining flour, adding a cup at a time. After the third cup has been added, transfer the dough to a lightly floured work surface and knead until smooth, adding as much of the remaining 1/2 cup of flour as needed. The dough should be tacky and a little greasy. It shouldn't be sticky. If it is, add more flour a little at a time, but try not to add too much at this stage. Knead until smooth and springy, about 3 to 4 minutes. Transfer to a lightly greased bowl, cover with plastic wrap and let rise in a warm spot until doubled in size, about 1 hour and 30 minutes.
  • In the meantime, preheat oven to 375°F. Line a baking sheet with foil and grease lightly with cooking spray or brush with oil. Set aside.
  • To make the meatballs, in a large bowl, stir the ground beef, egg, bread crumbs, milk, parmesan, salt, pepper, parsley, cloves, granulated garlic, granulated onion, dried oregano, dried basil and crushed red pepper flakes until just combined. You don't want to overwork the mixture. Divide and shape into twelve even meatballs and place on the prepared baking sheet. Bake for 20 minutes and remove from the oven to cool.
  • Once the dough has risen, transfer to a lightly floured work surface and lightly knead a few times to release the air. Divide into 12 even pieces (roughly about 2 1/3 ounces each). Working with one at a time, pull the ends of the dough towards the center to form a tight ball and then place on your work surface (no flour should be needed at this stage) and using a cupping motion firmly roll the dough with the palm of your hand to create a smooth tight ball. Place on a baking sheet that has been lined with parchment paper. Continue shaping and rolling the rest of the dough, placing them all on the same baking sheet, evenly spacing them out. Cover loosely with plastic wrap and set aside to rise for another 30 to 45 minutes or until doubled in size.
  • Once done, use your finger tips (lightly greased to prevent sticking) to stretch the center of each slightly to create 2-inch-wide wells. Brush with egg wash and then fill the center of each with about a tablespoon of marinara. Sprinkle the centers with mozzarella and parmesan. Place a meatball in the center of each kolache. Sprinkle with bread crumbs and parmesan and bake until golden brown, 20 to 25 minutes. Remove from oven and sprinkle with basil before serving. Leftovers can be stored in an airtight container in the fridge for up to 4 days and reheated before serving. Enjoy!
