From the New England section of the United States Regional Cookbook, Chicago Culinary Arts Institute, 1947. For a tasty variation on this recipe, add 1/2 cup sherry or sauterne wine to the chowder just prior to serving.

1 small onion, chopped
1/3 cup rendered bacon or 1/3 cup salt pork fat
2 soda crackers, finely crushed
1 quart milk, scalded
2 cups lobsters, cooked and cubed (either canned or fresh may be used)
1 cup cream, heated
salt
pepper
cayenne pepper, to taste

Steps:

  • Cook the onion in the fat until translucent and lightly golden.
  • Strain and reserve the fat, discarding the onion.
  • To two tablespoons of the fat, add the crushed soda crackers.
  • Add the hot milk gradually, stirring constantly until smooth; add lobster and heat in the top of a double boiler for 20 minutes.
  • Add seasonings to taste, the remainder of the strained fat and the hot cream.
  • Serve with chowder crackers.

1/2 cup chopped bacon
2/3 cup unsalted butter
2 cups finely chopped red onions
1 1/3 cups finely chopped celery
1 red bell pepper, seeded and chopped
2 cups roasted corn kernels
2 teaspoons chopped garlic
2 teaspoons chopped shallots
Salt and freshly ground black pepper
1 teaspoon Essence, recipe follows
1 cup all-purpose flour
1/2 cup sherry
8 cups lobster stock, recipe follows
1/3 teaspoon cayenne
1 pound Yukon gold potatoes, peeled and diced
2 cups heavy cream
3 cups chopped lobster meat from tails and claws
1/2 cup chopped assorted fresh herbs, such as parsley, chervil, basil, and chives
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

3 (1 1/4 pound) lobsters, blanched, cooled and shells cracked with lobster claw and tail meat removed
1/8 cup vegetable oil
2 ribs celery, quartered
2 tomatoes, coarsely chopped
1 yellow onion, peeled and quartered
1 carrot, peeled and coarsely chopped
2 sprigs fresh thyme
1 small bulb fennel
1 head garlic
Water, to cover
Salt and freshly ground black pepper

Steps:

  • In a very large pot, render the bacon over medium heat. Remove with a slotted spoon and set aside. Melt the butter over medium heat. Add the onions, celery, red peppers, and saute until soft, about 4 minutes. Add the corn kernels, garlic, shallots, salt, pepper, Essence, and cook, stirring, for 3 minutes. Add the flour and cook, stirring constantly, until the flour turns the color of peanut butter, about 4 minutes. Add the sherry and cook for 2 minutes. Add the lobster stock and cayenne, and stir well to incorporate. Bring to a boil. Reduce the heat to medium-low and simmer uncovered, stirring occasionally, for 15 minutes. Add the potatoes, stir well, and simmer until tender, about 10 minutes. Add the cream, lobster and assorted herbs, and cook, stirring, for 2 minutes. Remove from the heat and ladle into bowls. Garnish with reserved bacon and serve.
  • In a large stockpot, heat the oil. Add the shells and stir. Cook for about 5 minutes. Add the celery, tomatoes, onion, carrot and thyme. Cut the fennel bulb in half and add to the pot. Cut the garlic head in half horizontally and add to the pot. Add enough water to cover the ingredients by about 2 inches. Season with salt and pepper. Bring the mixture to a boil, then reduce the heat and simmer until the liquid has reduced by half, about 4 hours.

6 tablespoons butter unsalted
6 ears fresh corn, shucked, kernels removed from cob, juices and husk reserved for garnish
2 large Spanish onion, cut into brunoise
4 ribs celery, cut into brunoise
4 carrots, peeled and cut into brunoise
4 cups chicken stock
2 cups heavy cream
3 sprigs fresh thyme
3 (1 1/2 pound) lobsters, split in half and viscera removed
Kosher salt and freshly ground black pepper
1 quart white lobster stock, for blanching
1 1/2 pounds haricots verts, washed and trimmed
1/4 cup heavy cream
Truffle oil
1/4 cup chopped parsley, plus more for garnish
Fresh truffles, for garnish

Steps:

  • In a deep, heavy bottomed stock pot, melt the butter and saute corn, onions, celery, and carrots. Add chicken stock and reduce by 1/2. Add cream and reduce by 1/2. Add thyme sprigs. Set aside.
  • Season the lobsters with salt and pepper. Grill until the flesh becomes milky white. Heat lobster stock and blanch lobster claws for five minutes. Set aside. When cool, pick knuckle and claw meat.
  • Blanch haricot vert in lobster stock. Remove from stock and place in saute pan. Add cream, truffle oil, and chopped parsley. Hold warm and reserve lobster stock.
  • Place creamed corn back on the stove until it simmers. Check seasoning.
  • In a saute pan place the picked meat and grill tails. Warm them with the lobster stock.
  • Spoon the creamed corn into bowls. Arrange haricots verts around the edge of the bowl. Each bowl receives 2 knuckles, 2 claws, and 1 tail. Shave fresh truffles to garnish each bowl and finish with chopped parsley.

30 littleneck clams (about 3 pounds), scrubbed
4 slices thick-cut bacon, chopped
2 tablespoons unsalted butter
3 stalks celery, finely chopped
1 medium onion, finely chopped
2 teaspoons chopped fresh thyme
1/3 cup all-purpose flour
1 large russet potato, peeled and cut into 1/2-inch cubes
2 cups half-and-half
Kosher salt and freshly ground pepper
Chopped fresh chives, for topping (optional)

Steps:

  • Rinse the clams several times under cold running water. Transfer to a large pot and add 3 cups water. Bring to a simmer over medium-high heat, then cover and cook until the clams open, about 6 minutes. Strain through a fine-mesh sieve into a large bowl; reserve the broth. Transfer the clams to a bowl and cover with plastic wrap so they don't dry out.
  • Cook the bacon in a large pot over medium heat until crisp, about 10 minutes; remove with a slotted spoon and drain on paper towels. Melt the butter in the same pot over medium heat. Add the celery, onion and thyme and cook, stirring occasionally, until soft, about 10 minutes. Add the flour and cook, stirring, 1 minute. Stir in the reserved clam broth, 1 1/2 cups water and the potato. Bring to a simmer and cook until the potato is tender and the soup thickens slightly, about 15 minutes.
  • Meanwhile, remove the clams from their shells and roughly chop.
  • Reduce the heat under the soup to medium low. Whisk in the half-and-half and warm through (do not boil). Remove from the heat. Stir in the chopped clams; season with salt and pepper. Ladle the soup into bowls and top with the reserved bacon and chives.

2 cups canned lobster, drained
2 cups whole milk
1/2 cup cream (recipe does not indicate butter fat content)
2 -3 tablespoons butter or 2 -3 tablespoons margarine
1 teaspoon salt
1/4 teaspoon pepper, freshly ground

Steps:

  • Combine onions and potatoes in a saucepan with water and cook until potatoes are tender.
  • Chop larger pieces of lobster into small pieces.
  • Add lobster, milk and cream to the potatoes and onions.
  • When heated through (do not allow to boil), add butter and season with salt and pepper, to taste.
  • Serve immediately.

1 large onion, chopped
1 large yellow boiling potato, peeled and diced (about 1/2 lb, Yukon Gold, Yellow Finn)
2 cups fresh corn kernels (or 10 oz. pkg. frozen corn, defrosted)
8 sprigs fresh thyme
4 cups defatted chicken broth or 4 cups fish stock
1 cup cold water
1 cup buttermilk
1 lb cooked lobster meat, cut into bite-size pieces
salt
fresh ground black pepper
2 tablespoons chopped fresh parsley

Steps:

  • Heat the oil in a heavy 4-quart saucepan over med-high heat.
  • Add the onion; cook, stirring, until it begins to soften, 2-3 minutes.
  • Add in the potato, corn, and thyme; stir in the broth and water; bring to a boil.
  • Decrease heat to med-low; cover the saucepan and simmer until the potato is tender when pierced with a sharp knife, about 20 minutes.
  • Remove the thyme sprigs.
  • Stir in the buttermilk and lobster meat; cook until the lobster is heated through, 5-7 minutes.
  • Season to taste with salt and pepper; garnish each serving with parsley and serve.

2 cups russet potatoes (peeled and cubed 1/2-inch x 1/2-inch pieces)
1 cup butter
2 tablespoons diced green onions (bulb only)
1/4 cup flour
2 (6 1/2 ounce) cans minced clams (with juice)
1 teaspoon salt (or to taste)
1 teaspoon black pepper
1 teaspoon garlic
12 ounces half-and-half
1/2 cup whole milk
1/3 cup clam juice
fresh parsley (minced for garnish)

Steps:

  • Place potatoes in saucepan and cover with water, cook on medium heat until tender.
  • Remove potatoes from heat, drain and set aside.
  • In 2 quart saucepan on medium low heat melt butter, add diced onions, cook until onions are slightly clear in color.
  • Add flour to butter and stir briskly.
  • Mixture will start to thicken.
  • Add half and half a little at a time while stirring briskly.
  • Mixture will be creamy and will look like thick cream.
  • Place salt, clams and juice, potatoes, bottled clam juice and milk with mixture.
  • On medium low temperature bring chowder to a slow boil.
  • Turn temperature down to low and let chowder simmer gently for 15 minutes, stirring frequently.

2 cups fish stock
1/2 cup butter
1/4 cup onion, chopped
1/2 cup celery, chopped
1/2 cup all-purpose flour
1 lb clam, minced
3 cups half-and-half
2 cups red potatoes, cut into 1/2 inch cubes
1 bay leaf
2 tablespoons parsley, chopped
1/2 lb fresh sea scallop, chopped
1/2 lb shrimp, peeled, deveined, chopped
1/2 lb lobster meat
salt
pepper
parsley

Steps:

  • In a large, heavy pot, place the fish and stock and bring to a boil. Cover pot and simmer for 4-5 minutes. Remove fish with a slotted spoon and set aside. Remove and reserve the stock.
  • In the same pot, melt the butter over medium heat. Add the onions and celery and saute until tender. Add the flour and cook, stirring with a wooden spoon, for 4 minutes. Add reserved stock and mix well. Add potatoes, bay leaf and parsley and cook until potatoes are tender, about 8-10 minutes. Add scallops and shrimp. Cook until tender. Add clams and lobster and stir well.
  • In a saucepan, heat half & half over medium heat until hot and add to the seafood mixture. Cook chowder, stirring frequently until slightly thickened and smooth. Season with salt and pepper to taste. Ladle chowder into bowls and garnish with parsley.
