NEVER-FAIL HARD-BOILED EGGS
Try this never-fail method of cooking hard-boiled eggs for a dozen eggs that are perfect for snacking, using in salads, or making deviled eggs.

Steps:
- Fill a pot with enough water to cover all eggs. Bring to a boil. Lower eggs gently into the boiling water using a slotted spoon.
- Return to a gentle boil and cook for 13 to 15 minutes, depending on how firm you want the yolks. Remove from heat and drain water, keeping eggs in the pot. Fill the pot quickly with cold water to cool eggs. Add ice to speed the process.
- When eggs are cool enough to handle, remove each one and gently crack the shell on all sides, without removing any shell. Place eggs back in the cold water and let stand for 15 minutes. Peel and remove egg shells to serve.

- Place your eggs in a pot and cover with cold water by 1 inch. Bring to a boil over medium-high heat, then cover, remove from the heat and set aside 8 to 10 minutes. Drain, cool in ice water and peel.
- Bring a pot of water to a boil over high heat. Reduce the heat to low, then add your eggs and cook 4 to 5 minutes. Drain, cool in ice water and peel.
- Bring a pot of water to a boil over high heat. Reduce the heat to low, then add your eggs and cook 7 to 8 minutes. Drain, cool in ice water and peel.

Steps:
- Place eggs in medium saucepan, cover with 1 inch of water, and bring to a boil over high heat.
- Remove pan from heat, cover, and let sit for 10 minutes.
- Meanwhile, fill medium bowl with 1 quart water and 1 tray ice cubes (or equivalent).
- Transfer eggs to ice bath with slotted spoon and let sit 5 minutes.
- Tap each egg all over against countertop to crack shell, then roll egg gently back and forth several times.
- Begin peeling from air-pocket (wider) end.
- The shell should come off in spiral strips attached to thin membrane.
- Hard-boiled eggs can be refrigerated for several days.
- You can double or triple this recipe as long as you use a pot large enough to hold the eggs in a single layer, covered by an inch of water.

PERFECT HARD BOILED EGGS (TECHNIQUE)
No fail! Never undercook or overcook your eggs again. I came across this method in my search to avoid the ugly green cast that yolks take on when overcooked. Add on a couple minutes to soak time if you use Jumbo eggs.

Steps:
- Put eggs in large pot.
- Cover with water so that there is at least an inch of water above the eggs.
- Add a pinch of salt.
- Turn on heat (med high) and heat, uncovered, to a boil.
- If you have more than a single layer of eggs, you may want to stir them occasionally (gently!) while they heat.
- Once the water comes to a boil, watch your clock and let it boil for 2 minutes.
- Remove pot from the heat and cover with lid.
- Let sit, covered, for 11 minutes.
- Drain and cool eggs for 2 minutes in ice water.

HARD BOILED EGGS (EASY TO PEEL)
I have had a few problems with trying to hard boil organic fresh chicken eggs. They were usually hard to peel and it would take about half of the egg white with the shell. I ran across this recipe from my sister, of all people...yes, I was skeptical at first...lol! :P Anyway, after you use this simple recipe your eggs will no longer be hard to peel. It works even on store bought/farm eggs. I just prefer fresh eggs because they taste so much better. I wish I could have chickens in the city! I never knew what I was missing till my daughters great grandmother got 8 chickens. They eat poms, strawberries, melons, tomatoes, bugs, worms... spoiled little hens. lol! They have the best eggs though.

- Put the eggs in pot.
- Fill the pot with water just enough to cover the eggs.
- Add salt (optional).
- On high temperature, bring to a rapid boil.
- Cover pot.
- Turn off burner.
- Let sit for 20 minutes on the warm burner.
- Drain water, put eggs back in carton or bowl and put in refrigerator.
- Eat them once they cool.

- Add Eggs and Water. Place your eggs in your pot. You can cook as many as will fit in a single layer in your pot. Add cold tap water, enough to competely cover your eggs in your pot.
- Add Salt. Add about a teaspoon of salt to the water. It is very important that you add the salt, do not skip this step. Salt does two things: 1. The salt raises the boiling point slightly so that the eggs will reach a slightly higher temperature while cooking.
- Add Lid and Turn on Stove. Place your pot on the stove. Add the lid to the pot. Turn your burner to high.
- Water Reaches a Boil. Watch until your pot reaches a boil. Once the water is a roaring boil (see photo) below follow these steps: 1. If you removed the lid to onserve the boiling, replace the lid on the pot.
- Cool the Eggs. As soon as the timer goes off you must cool the eggs immediately. Pour out the hot water and replace with cold tap water. Repeat until the water in the pot is cool.
- Perfect Hard Boiled Eggs. Your eggs are perfect, you can either store in your refrigerator for later or peel to eat now!
- Remove Egg Shells. Once you are ready to eat your hard boiled egg you need to peel it. If you added the salt, this step will be easy. Take your egg and rap it on the counter.
