Everyone seems to love this version of your typical macaroni salad. I have made a few adjustments to an old standard to jazz it up a bit. The corn is the key.

1 (16 ounce) package elbow macaroni
4 eggs
½ cup chopped celery
1 (15 ounce) can whole kernel corn, drained
⅓ cup chopped green onions
1 cup mayonnaise
½ cup creamy salad dressing
¼ cup sweet pickle juice
1 tablespoon Dijon-style prepared mustard
salt and ground black pepper to taste
1 pinch paprika

Steps:

  • In a large pot of boiling salted water cook pasta until al dente. Drain and cool under cold water.
  • Place eggs in a saucepan, and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and slice.
  • Place pasta in a large bowl and add the celery, corn, onion, and eggs; mix.
  • In a separate bowl, combine the mayonnaise, mustard, pickle juice, salt and pepper together until smooth. Pour dressing over the macaroni and mix well. Sprinkle with paprika and keep the salad refrigerated until ready to serve.

1/2 cup diced vine-ripened tomato (optional)
1/2 cup prepared mayonnaise
3/4 teaspoon dry mustard
1 1/2 teaspoons sugar
1 1/2 tablespoons cider vinegar
3 tablespoons sour cream
1/2 teaspoon kosher salt, plus more to taste
Freshly ground black pepper

Steps:

  • In a large bowl, combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

8 oz (250g) dry macaroni pasta
1/2 medium red bell pepper (capsicum), (seeded and finely chopped)
1/2 medium red onion, (finely diced)
1 small carrot, (peeled and shredded)
2 dill pickles, (finely chopped)
1/4 cup chopped celery
1 cup mayonnaise, ((S&W, Best Foods, Hellmann's, Japanese or any whole egg mayo))
1/4 cup sour cream
2 tablespoons white vinegar, ((adjust to taste))
1 tablespoon Dijon mustard
2 tablespoons fresh parsley, (chopped)
1 tablespoon fresh chives
1 1/2 teaspoons sugar
1 teaspoon minced garlic
1 1/4 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Bring large pot of salted water to the boil over high heat. Add the pasta and boil until al dente (just fork-tender), or follow packet directions.
  • While pasta is boiling, prepare/chop SALAD ingredients and add them to a large serving bowl.
  • Mix DRESSING ingredients together in a small bowl.
  • Once pasta is cooked, drain and rinse under cool running water. Drain well and add to the rest of the SALAD ingredients in the large serving bowl.
  • Pour over DRESSING and toss well to evenly combine. Adjust salt, pepper and vinegar to taste.
  • Set aside for at least 15 minutes to let the ingredients warm close to room temperature and settle into each other before serving.

1 pound ditalini pasta (or elbow pasta)
1 red bell pepper (chopped)
2 ribs celery (finely chopped)
1/2 cup finely chopped red onion
1/2 cup chopped sweet pickles
3 hard boiled eggs (chopped)
1 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil and cook pasta according to package directions for al dente. Transfer the pasta to a colander, rinse it with cold water and drain well. Set pasta aside to cool while you prepare the rest of the salad ingredients (see note). Stir the pasta occasionally to prevent it from sticking together.
  • In a large bowl, combine the red bell pepper, celery, onion, pickles and hard boiled eggs.
  • To make the dressing, combine the mayonnaise, apple cider vinegar, Dijon, sugar, salt and pepper in a medium bowl. Whisk until well combined and smooth.
  • When the pasta is completely cooled, add it to the bowl with the other pasta salad ingredients. Pour on the dressing and stir until everything is well combined.
  • Cover and chill macaroni salad in the refrigerator for at least 2 hours before serving. It will keep for up to 3 days when stored in an airtight container in the refrigerator.

16 ounces short pasta (1 lb bag short pasta - Anthony's brand)
6 hard-boiled eggs (chopped)
3 cups celery (diced)
2 cups green onions ( sliced)
2 cups dill pickles (chopped)
2 cups picked juice from dill pickles
1 cup black sliced olives (2 small cans of sliced black olives)
1 cup mayonnaise
1/4 cup yellow mustard
1 teaspoon sea salt
1 teaspoon pepper

Steps:

  • Make and peel 6 hard-boiled eggs. Try my recipe to make Steam Hard Boiled Eggs.
  • Put a large pot of salted water and heat on the stove to boil the pasta. Follow the cooking time and the package instructions of your pasta brand. Adding salt is optional but recommended.
  • Gradually add pasta, stirring to separate it, and return to a boil. Boil uncovered, stirring occasionally until you have tender macaroni that is al dente pasta.
  • While the pasta is boiling, chop the fresh ingredients: celery, green onions, dill pickles, and chop the eggs into small pieces.
  • Drain the large pot of pasta, and pour it into a very large bowl.
  • Into the large bowl, add the chopped ingredients to the warm cooked pasta. Add celery, green onions, chopped pickles, pickle juice, chopped eggs, black olives, mayonnaise, yellow mustard, sea salt, and black pepper.
  • Stir well to combine, and chill for several hours or overnight. The warm pasta will absorb the pickle juice as it sits in the fridge, that is what makes it so good!
  • Optional: Slice a couple of eggs and places them on top with sprinkles of paprika to make it pretty.
  • Serve macaroni pasta salad in a large bowl or inexpensive paper Chinese takeout containers (order online), great for picnics and parties. Keep this macaroni salad chilled at all times in an airtight container, or serve immediately.

This macaroni salad recipe is creamy but still light, sweet but tangy, and has a wonderful mix of flavor, spice, and texture. And you can make it fast, in less than 30 minutes!

4 c. elbow macaroni
1/2 c. mayonnaise
1 tbsp. red wine or distilled vinegar
3 tsp. sugar, more or less to taste
1/4 tsp. salt, more to taste
Plenty of black pepper
1/4 c. milk (more if needed)
Splash of pickle juice, more to taste
3 whole roasted red peppers, more to taste (can also use pimentos)
1/2 c. black olives, finely chopped
6 sweet/spicy pickle slices, diced (about 1/2 cup diced)
3 green onions, sliced (white and dark green parts)

Steps:

  • Cook the macaroni in lightly salted water according to the package directions. Drain and rinse under cold water to cool. Set aside.
  • Mix together the mayo, vinegar, sugar, salt, and pepper. Splash in enough milk to make it pourable. Splash in pickle juice for extra flavor. Taste and adjust seasonings as needed. Set aside.
  • Place the cooled macaroni in a large bowl and pour in 3/4 of the dressing. Toss and add more dressing if you'd like. (The dressing will seem a little thin, but it will thicken up as the salad chills.)
  • Stir in the roasted red peppers (or pimentos), olives, pickles, and green onions. Add more of any ingredient if you'd like more stuff going on! At the end, splash in a little more pickle juice and stir.
  • Chill for at least 2 hours before serving. Sprinkle with sliced green onions to serve!
