NEIMAN MARCUS' MANDARIN ORANGE SOUFFLE
Mother and I loved to dine at Neiman Marcus' Zodiac Rooms until just before here death - I would move from menu item to menu item through the years, but Mother always had the salad luncheon platter and never waivered - it may have changed over the years, tuna or shrimp or chicken salad, etc... but one thing that never was never altered was the Mandarin Orange Souffle - "the number one 'ladies lunch' item throughout the country. The "cooking time" here refers to cooling time - a lovely cool molded addition to any luncheon.

- Pour 1/4 cup of the orange juice into a small bowl, sprinkle the gelatin over, and stir to dissolve.
- Seat aside to let the gelatin soften.
- Prepare and ice bath in a large bowl.
- Pour the remaining orange juice into a small, heavy-bottomed saucepan and stir in the sugar and egg yolks.
- Over medium heat, gradually bring the mixture to a simmer, stirring constantly until the mixture begins to steam and is slightly thickened. Do not allow the mixture to boil.
- Add the softened gelatin mixture (which will have a rubbery texture) and the lemon juice.
- Stir until incorporated and then transfer the "custard" to a clean mixing bowl; sit the bowl in the ice bath to cool.
- While the custard is cooking, stir it occasionally.
- Using a wire whisk or an electric whisk, whip the heavy cream until soft peaks form.
- With a spatula, gently fold some of the whipped cream into the cooled custard mixture to "loosen" it, then add the rest of the cream mixture and fold in until fully incorporated.
- Place three or four of the mandarin orange sections in the bottom of six individual 5-ounce fluted plastic dessert molds and then fill the molds with the orange souffle mixture.
- Place the molds on a cookie sheet and cover with plastic wrap.
- Transfer to the refrigerator and chill for at least 4 hours, and preferably overnight, until firm.
- Carefully unmold.

- Soften gelatin in cold water; set aside. Mix egg yolks, lemon juice, salt, and 1/2 cup sugar. Cook in double boiler until thickened. Stir in gelatin, lemon peel, and lemon extract.
- Beat egg whites until soft peaks form. Gradually beat in rest of sugar, and beat until stiff. Whip the cream. Fold egg whites into custard as it begins to congeal, then fold in whipped cream.
- Pour into custard cups and refrigerate. Unmold and serve with sauce of apricots pureed in the blender and sweetened to taste or pour into a 1 1/2-quart soufflé dish or mold. I like to put a collar of foil around a 1-quart soufflé dish, tie securely, then remove before bringing to the table.
- .This can be served cold with any fruit and flavored whipped cream.

- For Orange Soufflé substitute 1/2 cup.
- orange juice and 1 tablespoon grated orange peel for the lemon juice and lemon peel, and omit the lemon extract.

DELIGHTFUL COOKIES A LA MRS. FIELDS & NEIMAN MARCUS OMAC
The mother of one of the kindergarteners on my bus run gave me a dozen of these cookies as a Christmas gift one year. They were such a hit at home that I asked her for the recipe. Which she very graciously provided. Now it is my job to bake a batch every year for our family reunion Christmas celebration. These cookies are truly so scrumptious that there are never any leftover. (I use a cookie scoop, like an ice cream scoop, DIPPED IN COLD WATER before each use. Individual cookie dough FLASH freezes very well. Cook time is for one sheet in the oven - the rest of the dough is in the freezer!)

- In a food processor. A)-GRATE: 8 oz Hershey chocolate bar & set aside in separate dish. B)-Measure 5 cups (Old Fashioned) Oatmeal. Put small amounts of the oatmeal into a food processor until it turns to powder/flour (Add oatmeal flour to 4 cups white flour in step 2 below).
- Combine: In a VERY large bowl (I use a 13 quart mixing bowl.) 4 cups white flour (with above Oatmeal flour included), 1 teaspoon salt, 2 teaspoons baking powder, & 2 teaspoons baking soda.
- CREAM together 2 cups (1 lb.) butter (Softened & whipped before adding sugars), 2 cups (1 lb.) dark brown sugar, 2 cups granulated white sugar.
- To the creamed mix add: 4 large eggs (ONE at a time), and 2 teaspoon pure vanilla extract. Mix together well.
- To the DRY ingredients (flour/oatmeal mixture in a VERY large bowl), ADD the CREAMED mixture. Stir together (with a VERY STRONG, very large spoon - wooden?) all ingredients. Mix well with the SPOON. (Do NOT use a mixer. This recipe has burned out 2 mixers). ***THE MIXTURE WILL BE VERY DRY!***.
- Stir in, 8 oz (grated) Hershey chocolate bar, 24 oz bag of semi-sweet chocolate chips, 3 cups chopped nuts (any kind) OPTIONAL additions 24 oz (3 cups) raisins, craisins, dried cherries etc. Use your imagination! ; ).
- Form (one inch/two tablespoons) ping pong-ball sized cookies. I use a cookie-scoop (like an ice cream scoop) dipped in cold water before each use. (Wal-Mart sells cookie scoops in 2008). The raw dough balls freeze very well. I FLASH freeze them on a cutting board before freezer-bagging them together. KEEP SOME IN THE FREEZER FOR FRESH, HOMEMADE COOKIES ANYTIME!
- Cook on an UNgreased cookie sheet, 2 inches apart. Bake at 375 degrees: Soft cookies = 6 to 10 minutes.Crispy cookies = 10 to 14 minutes. (Mine are 12 minutes).
- COOL cookies on the cookie sheet (until the next batch comes out of the oven) because they are too soft to remove right away. (4 cookie sheets = 1 baking, 1 cooling, 1 prepped, 1 cleaned & drying.). Cookies CRISP as they cool.

NEIMAN MARCUS' ORANGE MARMALADE COOKIES
Helen Corbitt, Neimans first chef, developed this recipe back in the 50's; and it's still as good as ever. The secret is to ice the cookies when they have completely cooled; you can spread a thicker layer of icing that sets up well and won't smear. The recipe was adapted from the book, Neiman Marcus Taste.

- Preheat the oven to 300F; and generously butter a cookie sheet.
- Sift together the flour, baking soda, and salt into a bowl and set aside.
- In a work bowl, add the butter and beat on low speed; add the sugar and continue beating for about 2 minutes, until light and fluffy.
- Add the eggs and mix well, add the reserved dry ingredients and the marmalade and mix thoroughly.
- Drop dough in 2 tablespoon amounts onto the prepared cookie sheet.
- Bake for about 20 minutes or until the cookies are light brown.
- While the cookies are baking, prepare the icing.
- Combine the orange and lemon zests and juices in a bowl, set aside.
- In a separate bowl, beat the butter on low speed, add 1 cup of confectioners (icing) sugar and blend throughly.
- Add the remaining confectioners sugar, the salt, and the citrus mixture and blend until smooth.
- Remove the cookies from the oven and transfer to a wire rack to cool,.
- Ice the cooled cookies with a butter knife.
