This recipe is so quick and has been in my Italian family for years!

1 ½ tablespoons extra virgin olive oil
1 onion, chopped
2 tomatoes, chopped
1 (15 ounce) can cannellini beans
2 cups penne pasta
salt to taste

Steps:

  • In a medium size saucepan heat the olive oil. Saute onion until tender. Stir in tomatoes and entire can of beans. Let simmer for 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Add penne pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Mix pasta with bean mixture and salt as desired.

7 ounces broad egg noodles, cooked by package directions
1 (8 ounce) can dark red kidney beans, drained and rinsed
1 medium yellow onion, diced
1 (8 ounce) can beef gravy
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dried dill
1 tablespoon olive oil

Steps:

  • In a large skillet or pot, saute the onions until they're translucent.
  • Then, add the beans to the skillet and lightly saute, stirring constantly for 1-2 minutes.
  • Add the noodles, gravy,and spices.
  • simmer on low, stirring frequently until everything is heated through, about 5-10 minute.

1/4 cup olive oil
2 large cloves garlic, minced
1/8 teaspoon hot red pepper flakes
3 peeled plum tomatoes, crushed, from a can
1/2 teaspoon salt
2 1/2 to 3 cups cooked cannelloni beans, cooking water reserved
1 pound cooked ditalini pasta, cooking water reserved

Steps:

  • In a 3-quart saucepan, combine the oil, garlic, and hot pepper flakes over medium-low heat. As soon as the garlic begins to color, add the tomatoes and salt. With a wooden spoon, break up the larger pieces of tomato. Increase the heat slightly and sizzle for about 5 minutes. Stir in the cooked beans and enough bean water to cover. Bring to a boil, stirring frequently. Lower the heat and simmer gently for 5 minutes. Stir in the cooked pasta and simmer gently over medium heat for 2 minutes. Add reserved pasta water if necessary.

3 tablespoons olive oil
2 cups chopped onion
1 tablespoon chopped garlic
1 pound ground chuck or lean beef
3/4 teaspoon dried crushed red pepper
6 1/2 to 7 1/2 cups canned beef broth
1 15- to 16-ounce can kidney beans, drained
1 8- ounce can tomato sauce
1 pound small shell pasta or elbow macaroni

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onions and garlic; sauté 5 minutes. Add meat and red pepper. Sauté until meat is no longer pink, breaking up large pieces, about 5 minutes. Add 6 1/2 cups broth, beans and tomato sauce; bring to a boil. Mix in pasta. Reduce heat to medium, Simmer uncovered until pasta is just tender but still firm to the bite, stirring often and adding remaining broth by 1/4 cupfuls if mixture is too thick, about 12 minutes. Season with salt and pepper.

1 cup milk
1 box Hamburger Helper™ beef pasta
1 tablespoon dried minced onion
1 1/2 cups frozen cut green beans
1 can (4.5 oz) sliced mushrooms, drained

Steps:

  • In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain.
  • Stir in hot water, milk, sauce mix and uncooked pasta (from Hamburger Helper box), onion, frozen green beans and mushrooms. Heat to boiling, stirring occasionally.
  • Reduce heat; cover and simmer 10 minutes, stirring occasionally. Remove from heat; uncover and let stand 5 minutes (sauce will thicken as it stands). Stir before serving.

1 large onion , chopped
2 sticks celery , thinly sliced
340g extra-lean minced beef
2 tsp mild chilli powder
410g can chopped tomatoes
1 tbsp tomato purée
400g can kidney bean in water, drained and rinsed
300ml beef or chicken stock
300g wholewheat penne
½ x 568g tub 0% fat Greek yogurt
2 eggs , beaten
50g red leicester cheese, coarsely grated
1 small garlic clove , crushed

Steps:

  • Heat a splash of oil in a frying pan, add the onion and celery, season with pepper and a little salt, then cook until soft. Remove vegetables and set aside. Brown the mince in the pan, a handful at a time, tossing with a fork as you go. Only add a splash of oil if the mixture begins to stick too much. Once browned, tip into a sieve to remove any excess fat.
  • Return mince and cooked veg to the frying pan, add the chilli powder, tomatoes, tomato purée, beans and stock, bring to the boil and simmer for 15 mins.
  • Heat oven to 200C/fan 180C/gas 6. Cook the pasta according to pack instructions. Drain, stir into the mince and spoon into a large lasagne dish. Mix the yogurt, eggs, cheese and garlic together and season lightly. Spoon over the top of the pasta and bake for 20-25 mins or until lightly browned.

200g podded broad beans (about 600g unpodded), defrosted if frozen
200g trofie pasta (see tip, below)
75g pancetta
1 lemon, zested and halved
5 mint sprigs, leaves picked and finely chopped
125g ricotta
15g parmesan, to serve (optional)

Steps:

  • Bring a large pan of water to the boil and cook the beans for 3 mins until just tender. Remove to a bowl of ice-cold water using a slotted spoon to halt the cooking process.
  • Set the pan back on the heat, tip in the pasta and cook following pack instructions. Meanwhile, pop the beans out of their skins so you're left with the bright green beans, and set aside. (This is optional, but the colour, texture and flavour is improved. Discard the skins.)
  • Heat a small, dry frying pan over a medium heat and fry the pancetta for 5-7 mins until crisp and golden. Drain the broad beans and add to the pancetta along with the lemon zest and mint. Squeeze over one of the lemon halves and season well. Cook for 1-2 mins to warm through, then remove from the heat.
  • Drain the pasta, reserving a mugful of the water, then return to the pan along with the pancetta and broad bean mixture, the ricotta and a few tablespoons of the reserved pasta cooking water. Mix together, adding more of the reserved water if needed to create a slightly glossy sauce. Divide the pasta between bowls, squeeze over the remaining lemon half and scatter with the parmesan, if you like.

This is an Italian dish that my mother always made. It takes less than five minutes to put together, very little time to cook and is INEXPENSIVE, EASY, and makes great leftovers!

2 (16 ounce) cans cannellini beans
48 ounces tomato sauce
1 tablespoon minced garlic
2 tablespoons olive oil
1 lb small shell pasta

Steps:

  • Boil the pasta shells according to package directions.
  • Add salt to the pasta water.
  • Heat olive oil in a pot and add minced garlic.
  • Add cannelloni beans AND the liquid from the cans. I like to mash one of the cans of beans up just a bit, to help thicken the sauce.
  • Add tomato sauce.
  • Mix well and simmer until pasta is done boiling.
  • The longer you let the sauce simmer, the more the flavors will meld. Drain pasta. Serve the pasta with the sauce over it. Enjoy!
  • Note: this is great with garlic bread!

1 medium green pepper, diced
1 medium onion, finely chopped
1/4 teaspoon garlic powder
Crushed red pepper flakes and pepper to taste
2 tablespoons grated Parmesan cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. In a large bowl, combine the macaroni, 1-1/2 cups cheddar cheese, beans, tomatoes, green pepper and onion. Stir in the beef, garlic powder, pepper flakes and pepper., Spoon into a 13x9-in. baking dish coated with cooking spray. Sprinkle with Parmesan cheese and remaining cheddar cheese. Cover and bake at 375° for 30 minutes or until heated through.

1 lb lean ground beef
2 teaspoons chili powder
1 teaspoon dried Italian seasoning
1 cup beef stock (use low sodium if you wish)
20 ounces pasta sauce (home made or in an jar)
1 (15 ounce) can red kidney beans, rinsed and drained
10 ounces corn kernels (frozen or canned)
1 green bell pepper, diced
1 lb spaghetti
parmesan cheese (optional)
fresh cilantro (optional) or parsley (optional)

Steps:

  • Heat olive oil in a large skillet, then brown the beef with chili powder and herbs for about 5 minutes over medium heat.
  • Stir in beef stock and pasta sauce and bring mixture to boil.
  • Reduce the heat and simmer (partially covered) for 15 minutes, stirring occasionally.
  • Add beans, corn and pepper, then cook for another 5 minutes.
  • While the sauce is simmering, prepare the pasta according to the package instructions.
  • Drain pasta and serve hot with the sauce.
