1 1/2 cups plus 2 tablespoons warm water (100 degrees F to 110 degrees F)
3/4 teaspoon active dry yeast
4 cups unbleached all-purpose flour, plus more for dusting
2 1/2 teaspoons kosher salt
Extra-virgin olive oil, for brushing Cornmeal, for dusting
1 28-ounce can whole peeled tomatoes (preferably San Marzano) Kosher salt
8 ounces fresh mozzarella cheese, sliced
Extra-virgin olive oil, for drizzling
Torn fresh basil, for topping

Steps:

  • Make the dough: Combine the warm water and yeast in a small bowl, stirring to dissolve the yeast. Combine the flour and salt in a medium bowl. Add the yeast mixture to the flour and stir to make a shaggy dough. (The dough should be tacky. If it feels too wet and sticky, add flour, 1 tablespoon at a time; if it's too stiff, add a little water.) Transfer to a lightly oiled surface and knead until smooth and elastic, about 3 minutes. Place an inverted bowl over the dough and let rise slightly, 30 minutes. Divide the dough into 4 pieces and form each into a ball; arrange 3 inches apart on a lightly oiled baking sheet. Rub the tops of the dough lightly with olive oil and cover the baking sheet with plastic wrap. Refrigerate overnight.
  • Remove the dough from the refrigerator about 2 hours before baking; let sit, covered, until ready to use. One hour before baking, put a pizza stone or inverted baking sheet on the middle oven rack and preheat to 500 degrees F (or 550 degrees F if your oven goes that high).
  • Make the sauce: Combine the tomatoes and their juices with 1 teaspoon salt in a blender; blend until smooth.
  • Generously sprinkle a pizza peel or an inverted baking sheet with cornmeal. Place 1 ball of dough upside down on the cornmeal using floured hands. Gently pull the dough into an 8- to 10-inch circle, reflouring your hands as needed and being careful not to deflate the dough. Spread about 1/4 cup tomato sauce on the crust; top with one-quarter of the mozzarella. Drizzle with 1 to 2 teaspoons olive oil and season with salt.
  • Slide the pizza onto the hot stone and bake until the crust is dark golden brown and the cheese is bubbling, 7 to 9 minutes. Transfer to a cutting board and sprinkle with basil. Let cool 2 minutes before slicing. Repeat to make 3 more pizzas.

4 pounds tomatoes
¼ cup extra-virgin olive oil
4 cloves garlic, minced
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon red pepper flakes
10 leaves fresh basil, roughly chopped

Steps:

  • Score an "x" in the bottom of each tomato. place tomatoes in boiling water for a minute, carefully remove tomatoes and plunge into an ice bath. The tomato skin will peel off easily.
  • Bring a large pot of water to a boil. Working in several batches, place tomatoes in the boiling water for 1 minute. Carefully remove and plunge into an ice bath. Transfer to a work surface and remove skins.
  • Heat oil in a heavy saucepan over medium heat. Add garlic and cook until lightly browned and fragrant, about 45 seconds. Add tomatoes, crushing each one by hand. Add salt, pepper, and red pepper flakes. Cook, stirring every few minutes, until sauce starts to thicken, 20 to 25 minutes.
  • Stir in fresh basil and remove from the heat. Serve immediately.

1 1/2 lbs top round steaks, cut 1/8-inch thick
salt and pepper, to taste
1/3 cup flat leaf parsley, minced
1/4 cup pecorino cheese, grated
4 meaty spareribs, on the bone
2 tablespoons extra virgin olive oil (Colavita)
1 onion, coarsely chopped
1 celery rib, coarsely chopped
1 large carrot, coarsely chopped
2 large garlic cloves, minced
1 bunch basil leaves, stemmed, and torn into pieces
3 (28 ounce) cans crushed plum tomatoes
1/2 cup dry red wine or 1/2 cup white wine
1 tablespoon kosher salt
ground black pepper
1 tablespoon sugar

Steps:

  • Dry the round steak with paper towels, and rub it on both sides with salt and pepper.
  • Sprinkle the meat with the parsley and cheese.
  • Roll the meat up like a jellyroll, and tie it in several places with kitchen string.
  • Salt and pepper the spare ribs. Set the meats aside.
  • Heat the olive oil over medium heat in a large heavy duty pot. Over medium heat, brown the round steak and spare ribs in the oil on all sides. This will take about 5 minutes.
  • Stir in the onion, celery and carrot and continue cooking until the vegetables begin to soften. Stir in the garlic and basil. Cook 1 minute.
  • Combine the tomatoes and wine in a bowl. Slowly pour the mixture over the meat.
  • Stir in the tablespoon of salt, a grinding of pepper, and the sugar.
  • Cover the pot, bring the sauce to a boil, then lower the heat to simmer, and cook the sauce until the meat is fork tender, about 1 1/2 hours.
  • Remove the meat to a dish. Cover the dish, and refrigerate the meat to make it easier to cut when cold.
  • When ready to use, transfer the round steak to a cutting board, and cut the strings from the round steak with a kitchen scissors.
  • Cut into neat slices about 1/4-1/2" thick.
  • Add to the sauce. Cut the meat off the bones of the spareribs and add the pieces to the sauce.
  • Use the sauce for pasta dishes both boiled and baked.
