CUCUMBER LIMEADE
The first time I had a beverage with cucumber in it was at a spa several years ago. Simple thinly-sliced cucumber rounds in clean iced water... and it was heaven! (Ok, so the lovely, relaxing spa environment didn't hurt.) This slightly "enhanced" version is from Martha Stewart. Feel free to adjust the amount of lime juice to your taste. I found it needed significantly more than the original recipe's call for the juice of one lime (I'm a citrus-head), but once I got it right, it was perfect! I grabbed a book and melted into the hammock out back while sipping this truly refreshing beverage.

Steps:
- Peel cucumber, cut in half lengthwise and remove the seeds. This is easily done by scraping a spoon tip (bowl side down) down the length of the inside of the cucumber half.
- Chop coarsely and combine in a blender with the remaining ingredients, blending until smooth.
- Serve over ice with cucumber spears as garnish.
CUCUMBER-LIME AGUA FRESCA

- Puree 2 cups chopped peeled cucumbers, the juice of 1 lime, 2 tablespoons agave syrup, 1/2 cup mint and 1 cup water in a blender. Chill 30 minutes, then strain, pressing on the solids. Divide among ice-filled glasses. Top with cucumber and lime slices.
NATVIA CUCUMBER LIMEADE
Steps:
- Grate cucumber, omitting the seeds, and divide amongst two glasses. Blend Natvia, lime juice, water and ice cubes together until everything is well-mixed. Pour into the glasses over the grated cucumber, and serve.

- In an upright blender, combine the cucumber, water, mint leaves, lime juice, agave nectar, and salt. Blend the mixture on high until totally liquified, about 1 minute.
- Run the mixture through a fine mesh strainer into a large measuring cup or bowl. Be careful not to press too much on the pulp as we want to avoid any bitterness. Taste the cucumber limeade and add more agave nectar if you like. Stir to combine.
- Pour the resulting minty cucumber limeade over lots of ice. Garnish with a mint sprig, extra cucumber, or a lime wedge.
