Look for any of the following brands of wonton wrappers: Nasoya, Frieda's or Melissa's. I have also made these using coconut oil instead of olive oil, and they turned out great.

1 package wonton wrappers (look for Melissa's, Nasoya or Frieda's brands)
1/2 cup olive oil or coconut oil

Steps:

  • Preheat oven to 375F. Lightly coat a large baking sheet with olive oil. Lay wonton wrappers in a single layer on baking sheet. Brush with more olive oil. The wonton wrappers should be covered but not saturated with olive oil.
  • Bake for 8 to 10 minutes, or until wonton crackers are lightly golden brown. Continue baking the rest of the wonton crackers, adding more oil to the pan if necessary. Allow to cool before serving.

Steps:

  • Preheat oven to 375 degrees F. Separate the wrappers into small stacks (about 10 at a time) then slice diagonally into triangles. Spread out the triangles onto a cookie sheet pan and spray lightly with the oil; flip them and do the other side. On the top side, lightly brush with egg whites then sprinkle the toppings (cheese, herbs, and salt). Bake them for about 7-10 minutes, or until a golden brown. Let them cool before serving.

8 rectangular (3 1/2-by-3-inch) or square wonton wrappers
1 1/4 teaspoons olive oil
3/4 teaspoon sesame or poppy seeds
3/4 teaspoon fennel seeds
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Arrange wrappers on a parchment-lined baking sheet. Brush both sides lightly with oil, and arrange in 2 rows with sides touching. Sprinkle with sesame and fennel seeds; season with salt and pepper.
  • Place a sheet of parchment paper on top of wrappers, and press down to make seeds adhere; gently remove paper. Using a pastry wheel or sharp knife, cut lengthwise and crosswise, dividing each wrapper into 4 equal pieces. Bake until crisp and golden, 6 to 8 minutes. Remove from baking sheet.

6 ounces bulk sweet Italian sausage links
1/4 cup finely chopped onion
4 ounces mozzarella cheese, shredded
2 tablespoons grated parmesan cheese
2 tablespoons finely chopped fresh parsley
40 wonton wrappers
oil (for frying)

Steps:

  • In a frypan, cook sausage and onion, over medium heat until sausage is brown and onion is tender, stirring to break meat in small pieces; drain well, cool completely.
  • Stir in mozzarella cheese, Parmesan and parsley.
  • Place 1 rounded teaspoon of filling in wonton wrapper.
  • Moisten edges of wrapper with water.
  • Starting at one corner, fold the wrapper over filling, forming a triangle.
  • Press to seal.
  • Bring other two sides together.
  • Cook in deep hot oil for 1-1/2 to 2-1/2 minutes, or until golden brown.
  • Drain on paper towels.

  • Filling: In large skillet brown sausage and onion, breaking suasage into small pieces.
  • Drain all fat from pan.
  • Cool meat mixture.
  • Stir in cheeses and parsley.
  • Assembly: Place a rounded teaspoon of filling into one corner of wrapper.
  • Moisten edges with water.
  • Fold wrapper over and seal edges together forming a triangle.
  • Bring two points over the center and cross.
  • Moisten and press together.
  • Cover and chill or freeze if not frying immediately.
  • Fry wontons a few at a time in deep hot oil until golden brown.
  • Drain on paper towels.
  • Serve with warm marinara sauce.

3 (16-ounce) packages wonton skins, thawed
2 tablespoons sesame oil

1/2 pound snow peas
1/2 pound radishes
1/2 pound carrots
3 tablespoons black sesame seeds
1/4 cup mint leaves
3 tablespoons grated fresh ginger
1/2 cup orange juice
1/2 cup rice vinegar
2 teaspoons grated fresh ginger
2 teaspoons black sesame seeds
1 tablespoon mint leaves
1/4 cup peanut oil
2 tablespoons sesame oil
60 large shrimp, peeled, deveined, and cooked (about 3 pounds)

Steps:

  • Preheat oven to 350 degrees F.
  • Arrange wonton skins in single layer on a flat surface. Cut out circles using a 2-inch cookie cutter. Lightly coat baking sheets with sesame oil, transfer rounds to pan. Drizzle wontons with a little sesame oil, season, to taste, with salt. Bake until lightly browned, about 5 minutes. Let cool completely. The wonton crackers may be made several days ahead and stored at room temperature in an airtight container.
  • Blanch the snow peas in a large pot of rapidly boiling water for 1 minute. Drain well then rinse in cold water to stop the cooking process. Julienne the snow peas, radishes, and carrots, place them in a large bowl. Add sesame seeds, mint, and ginger. Whisk together the marinade ingredients in a separate mixing bowl, pour 1/2 the marinade over the slaw, toss to coat.
  • Remove the shrimp tails and discard. Split the shrimp in half lengthwise and place in a large bowl. Pour the remaining marinade over the shrimp.
  • To assemble: place a small amount of snow pea slaw on wonton cracker. Top with 2 shrimp halves, cut side down. Garnish with black sesame seeds and mint before serving.

8 canned water chestnuts, finely chopped
¼ cup finely chopped green onions
