- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking pan.
- In a large bowl, combine the flour, baking powder, salt, sugar and unsweetened cocoa. Stir in the oil, vanilla, and 3/4 cup of evaporated milk until well blended. Spread the mixture evenly into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.
- To make the frosting: In a small saucepan, combine the remaining evaporated milk, sweetened cocoa, and butter. Cook over medium heat until almost boiling, remove from heat and chill until brownies are ready. When brownies are completely cool, frost with the chilled icing and cut into bars, or frost them individually.

- In a food processor, add the dates and pulse until the dates are broken into pieces and beginning to turn into a paste. You may need to scrape down the sides a few times if the dates get stuck.
- Add the cocoa powder and sea salt and pulse until combined. If your mixture seems dry and isn't coming together, add 2 tbsp of water and continue to pulse until the mixtures starts to mix fully together.
- Press the brownie mixture into a silicone loaf pan. Sprinkle a touch of sea salt on the top. Chill in the fridge for 1 hour. Cut into pieces and enjoy!

- Preheat the oven to 180ºC (350ºF) and lightly grease and line a 20cm (8 inch) square baking tin with non-stick parchment paper. Leave a couple inches of paper hanging over the sides of the pan for easy removal.
- Create a bain marie by placing a large heatproof bowl over a saucepan of simmering water, ensuring the bottom of the bowl doesn’t touch the water. Add the butter and dark chocolate to the bowl and melt together, stirring with a rubber spatula to combine. Once the ingredients are melted, remove the bowl from the heat and allow it to cool for 7-10 minutes. It should be just warm to the touch.
- Add the coconut sugar and maple syrup and whisk together well. Crack in the eggs and add the vanilla and whisk to combine. Don’t overmix at this point or you’ll get humps in your brownies.
- Sift in the flour, cacao powder, salt, and espresso powder. Stir everything together using a rubber spatula until smooth and all the streaks of dry ingredients have disappeared.
