NANNY'S PANCAKES
These are the pancakes my grandmother would make us when we were children. She didn't use exact measurements, so she estimated them when I asked her for the recipe she uses. Sometimes she would add things to them like coconut milk, or applesauce for an added treat. We would eat them with maple syrup, jam or with butter and sugar rolled up.

Steps:
- Mix the dry ingredients first until they are well blended.
- In a separate bowl mix the wet ingredients, then slowly pour the wet ingredients into the dry ingredients and mix well.
- Ladle into a hot frying pan and flip when bubbles form.

KAMUT PANCAKES
This is a great recipe from Sue Gregg's "Breakfasts" cookbook that I found online a few years ago. I love looking for new healthy ingredients that I can cook and my kids will eat. The batter will be much thinner then your usual pancakes, as will the finished pancakes. But they have a great nutty flavor and are a fun alternative to regular pancakes. The serving size is approximate and depends on the size of your pancakes.

Steps:
- In a blender put the milk, the egg, the oil, the vanilla, the kamut and the oatmeal.
- Blend for 3 to 5 minutes or until very smooth.
- Get the griddle hot (or the pan if that is what you will be using).
- Just before you are ready to bake them add the baking soda, salt, and baking powder.
- Blend for a few seconds.
- Cook the pancakes on a griddle, turning when they bubble, until they are slightly golden brown.
FLUFFY BUNNY PANCAKES
Steps:
- Preheat griddle over medium-high heat. Whisk together flour, sugar, baking powder and salt. Combine egg, milk and melted butter; stir into dry ingredients just until moistened., For each bunny, make a pancake 4 in. wide for the body, a pancake 2-1/2 in. wide for the head, two small oval-shaped pancakes for the feet and two small triangular pancakes for the ears. Spoon batter onto griddle; cook until bubbles form on top of pancakes. Turn; cook until second side is golden brown. , To form bunny, place ears at the top of a plate. Place head slightly overlapping the bottom of the ears; top with body slightly overlapping head and feet slightly overlapping body. Place a banana slice on each foot; arrange mini chocolate chips at the end of each foot for toes. Dollop whipped cream on body just above the feet; sprinkle with coconut for the tail. Serve immediately.

GRANNY'S PANCAKES
This is the way my Granny made pancakes. All the grandchildren had to have them when visiting. We sometimes have them for supper with good ole pan sausage!

- Sift flour,baking powder, salt and sugar in a large bowl.
- Mix in milk, egg, melted butter and vanilla until smooth.
- Heat lightly oiled griddle over medium high heat.
- Pour about 1/4 cup for each pancake.
- Brown on both sides.
- (I brush melted butter on each pancake as I add them to the stacks.).

HOOTENANNY
Kinda like a pancake/French toast recipe all in one dish. My kids always loved it. And it is very easy!!!

- Mix above in blender. Melt 1 stick margarine in a 9 x 13 oven proof dish while oven is heating. Pour mixture into HOT dish. Bake 25 minutes at 425 degrees or until knife comes out clean. The Hootenanny should rise up and out of the pan.
- Sprinkle with powdered sugar. May add cinnamon if desired. Serve with maple syrup.
