GREAT NANA'S SECRET INGREDIENT DATE NUT BREAD
This rich date nut bread is easy to make and simply delicious. The secret ingredient really enhances the flavor.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8x4 inch loaf pans, or line with parchment paper.
- Sift the flour, baking powder, baking soda and salt into a bowl, and set aside. In a large bowl, mix together the sugar and shortening. Beat in the eggs and vanilla. Toss the walnuts and dates with the dry ingredients, and stir into the sugar mixture alternately with the hot coffee. Divide the batter evenly between the two loaf pans.
- Bake for 1 hour in the preheated oven, or until a knife inserted in the center comes out clean.

- Cream shortening with sugar. Mix in eggs. Dissolve soda in milk, and add to the creamed mixture. Stir in flour, cream of tartar, and salt. Stir in nuts.
- Pour batter into a 3 pound coffee can, or several 1 pound soup cans; fill containers 1/2 to 3/4 full.
- Bake at 350 degrees F (175 degrees C) for 1 hour, or until a tester inserted in the center of loaf comes out clean.

If there's anything that will make you fall in love with Indian food, it's naan. This flatbread from the North of India is juxtaposition at its most beautiful: pillowy and elastic, with dark charred bubbles and a crispy bottom. It's usually made in a tandoor oven, a clay oven that can reach up to 900 degrees F! That's hard to replicate at home, but this stovetop version comes pretty darned close.

- In a large glass, dissolve the dry yeast and 1 teaspoon sugar with 3/4 cup warm water (about 100 degrees F). Let it sit on your counter until it's frothy, about 10 minutes.
- Meanwhile, sift the flour, salt, remaining 1 teaspoon of sugar and baking powder into a large, deep bowl.
- Once the yeast is frothy, add the yogurt and the olive oil into the glass, and stir to combine. Pour the yogurt mixture into the dry ingredients and add the kalonji and fennel seeds, if using, and gently mix the ingredients together with a fork. When the dough is about to come together, use your hands to mix. It will feel like there isn't enough flour at first, but keep going until it transforms into a soft, slightly sticky and pliable dough. As soon as it comes together, stop kneading. Cover the dough with plastic wrap or a damp tea towel and let it sit in a warm, draft-free place for 2 to 4 hours.
- When you're ready to roll, make sure you have two bowls on your counter: one with extra flour in it, and one with water. The dough will be extremely soft and sticky-this is good! Separate the dough into 6 equal portions and lightly roll each one in the bowl of extra flour to keep them from sticking to each other.
- Shape the naan. Using a rolling pin, roll each piece of dough into a teardrop shape, narrower at the top than at the bottom. It should be 8 to 9-inches long, 4-inches wide at its widest point and about 1/4-inch thick. Once you've formed the general shape, you can also pick it up by one end and wiggle it; the dough's own weight will stretch it out a little. Repeat this method with the rest of the dough. (If you're making the gluten-free version, you'll have better luck pressing the dough out with your fingertips, than rolling.)
- Warm a large cast-iron skillet over high heat until it's nearly smoking. Make sure you have a lid large enough to fit the skillet and have a bowl of melted butter at the ready.
- Dampen your hands in the bowl of water and pick up one of your naans, flip-flopping it from one hand to the other to lightly dampen it. Gently lay it in the skillet and set your timer for 1 minute. The dough should start to bubble.
- After about 1 minute, flip the naan. It should be blistered and somewhat blackened, don't worry - that's typical of traditional naan! Cover the skillet with the lid and cook 30 seconds to 1 minute more.
- Remove the naan from the skillet, brush with a bit of butter and sprinkle with a little coarse sea salt. Place the naan in a tea towel-lined dish. Repeat with the rest of the naans and serve.

- Preheat oven to 350 degrees F. Grease and flour a 9 1/2 by 5 1/2-inch loaf pan.
- In a large mixing bowl, sift flour, whole-wheat flour, baking powder, and baking soda. Reserve.
- In the bowl of an electric mixer, food processor, or blender, add eggs, butter, buttermilk, lemon juice, bananas, sugar, and salt.
- Mix or blend until smooth. Slowly add dry ingredients. Fold in nuts. Pour batter into pan and bake 1 hour and 25 minutes or until toothpick inserted comes out clean.

In my opinion, this is the absolute best banana bread out there. I got it through a mail order recipe club called "Grandma's Kitchen". It is so easy to make, and it seems like everyone always has some ripening bananas that they're trying to get rid of!

- Preheat oven to 350 degrees, and spray bottom of a 9 inch round pan with non-stick cooking spray.
- Beat butter in a large bowl with an electric mixer until light and fluffy.
- Add granulated Sugar and brown sugar; Beat until well blended.
- Add egg, egg whites and vanilla; blend.
- Mix in the mashed bananas, and beat the mixture on high speed for 30 seconds.
- In a separate bowl, combine flour, baking soda, salt and baking powder.
- Add flour mixture to butter mixture alternately with the cream, ending with the flour mixture.
- Mix in the walnuts.
- Pour batter evenly into prepared 9 inch round pan (or loaf pan).
- Bake until golden brown, and toothpick inserted near the center comes out clean (About one hour).

- Soak grapenuts in buttermilk for 10 minutes.
- Add remaining ingredients to grapenut mixture.
- Place in 2 greased & floured bread pans. Let set for 30 minutes before baking.
- Bake at 350 degrees F for 30-35 minutes.

- Preheat oven to 325°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in milk and vanilla. - Preheat oven to 350 degrees F. Spray a 9X5-inch loaf pan with nonstick cooking spray. Set aside.
- Blend the dry ingredients in a large mixing bowl. Set aside.
- Add oil, buttermilk and vanilla to the mashed bananas. Mix well. Pour banana mixture into dry ingredients. Stir until just mixed.
- Add chopped walnuts. Stir until just mixed.
- Pour batter into prepared pan. Bake 45-55 minutes or until rich brown and the center is set.
- Note: Black walnuts can be used to create a uniquely flavored banana bread.
