NONNA'S TRADITIONAL MEATBALLS

Steps:
- Preheat the oven to 350 degrees F.
- Combine the ground beef and ground pork in a large bowl. Set aside.
- In a food processor, combine the milk, eggs, garlic, basil, parsley, cayenne and salt. Process until pureed.
- Add the wet ingredients to the meat and mix to combine. Then add breadcrumbs and Romano, and gently combine; be careful not to overwork the meat.
- With the help of an ice cream scoop (for even sizing), shape the mixture into 2-ounce meatballs and place on a baking sheet.
- Transfer the baking sheet to the oven and bake the meatballs for 30 minutes.
- Add the meatballs to the Roasted Tomato Sauce and simmer for another 30 minutes.
- Preheat the oven to 425 degrees F.
- In a deep lasagna pan, add the garlic, anchovies, olive oil, red pepper flakes and salt. Place the pan on the stovetop and saute for 5 to 7 minutes to soften. Remove from the heat and add the canned tomatoes and oregano; mix well.
- Transfer the pan to the oven and roast until the tomatoes are nicely charred on top, 45 minutes. Let cool, then blend to your liking with an immersion blender; we like our sauce a bit chunky, but feel free to puree if you choose.
NANA'S SAUSAGE DINNER
My great grandmother frequently served this super quick and simple dish. I often omit the onions for my family and use vegetarian sausage links for my portion.

- Set a deep skillet over medium heat and coat with cooking spray. Add sausages and cook until browned. Remove from the pan and set aside. Add the onion to the skillet; cook and stir until tender. Pour in the tomato soup and bring to a simmer. Return the sausages to the skillet and simmer in the soup for about 30 minutes. Serve over mashed potatoes.

Steps:
- Marinate lamb with yogurt, red chili powder, turmeric powder, cumin powder, coriander powder and salt.
- Stir to mix well and leave aside for 5 minutes.
- Heat up the oil in a deep wok (kadai).
- Mix in bay leaves, cloves and cardamoms and stir fry for 30 seconds.
- Mix in the onions and stir fry until golden brown.
- Mix in marinated lamb stirring it well for about 10 minutes, until the lamb is cooked and tender.
- Mix in tomatoes and green chillies, stirring frequently until the oil separates from the gravy.
- Pour out little water if necessary.
- Sprinkle garam masala and stir fry for about 2 minutes.
- Mix in salt to taste.
- Decorate with coriander leaves, ginger juliennes and cut green chillies.

FARMER'S MARKET CASSEROLE
Another wonderful recipe from my favorite award-winning cookbook and a great way to create a colorful and tasty concoction while using up some of your fresh garden vegetables. Nice vegetarian main meal for two or side dish for four. Be sure to use a shallow casserole so vegetables are tender in allotted time. Note that this may be prepared a couple of hours ahead, up to last cooking interval, if left at room temperature. (This recipe comes from a cookbook of the UP area of Michigan, which could be construed as Canada, so I'm submitting this for Zaar World Tour Canadian recipes.)

- Preheat oven to 375 degrees.
- In ungreased, shallow 8x11 inch casserole, layer vegetables in order given, seasoning each layer with thyme, marjoram, salt and pepper, to taste.
- Pour wine overall, cover (with aluminum foil if cover otherwise unavailable) and bake 1 hour.
- Meanwhile melt butter in small skillet, then stir in bread cubes until butter is absorbed. Sprinkle cheese, then buttered bread cubes over casserole. Bake, uncovered, another 15-20 minutes.
