LOADED NACHO RICE DIP

This loaded beef nacho rice dip shot right up to the top of the ultimate appetizer list! Taco seasoned beef with rice, jalapeños, tomatoes and melted Cheddar.

Yield makes 5 cups

Number Of Ingredients 10

1 cup Carolina® Jasmine Rice, uncooked
1 pkg (1.25 oz.) dry taco seasoning mix
1 ¾ cups water
8 oz lean ground beef
½ cup sour cream
1 cup tomatoes, chopped
½ cup shredded Cheddar cheese
½ cup jalapeño peppers, pickled, canned, sliced
1 bowl tortilla chips
1 cup prepared guacamole, optional

Steps:

  • This recipe has taken the very best of loaded beef nachos and made it into the ultimate rice dip! Get your tortilla chips ready for this combo of Carolina® Jasmine Rice, taco seasoning, lean ground beef, sour cream, pickled jalapeño peppers, tomatoes and melted cheese! Don't forget to pair with your favorite guacamole.
  • Step 1 In a medium saucepan combine rice, 1/2 packet taco seasoning and water. Bring to a boil. Reduce heat to low. Cover and cook for about 15 minutes.
  • Step 2 Meanwhile in a large skillet brown beef. Add onions and remaining taco seasoning. Reduce heat to low and cook 10 minutes, stirring occasionally.
  • Step 3 In a large bowl combine rice and sour cream. Stir in beef mixture, tomatoes and cheese. Top with jalapeños.
  • Step 4 Serve warm with tortilla chips and guacamole, if desired.

1 (10 ounce) can diced tomatoes with green chile peppers, drained

Steps:

  • Place ground beef and onion in a large, deep skillet. Cook over medium high heat until beef is evenly brown and onions are soft. Drain and set aside.
  • In a medium saucepan over low heat, melt the cheese. Mix in the ground beef, onion and diced tomatoes with green chile peppers. Serve warm.

1 package (6.8 ounces) Spanish rice and pasta mix
2 tablespoons butter
2 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
1 pound ground beef
1 pound (16 ounces) process cheese (Velveeta), cubed
1 can (14-1/2 ounces) stewed tomatoes
1 jar (8 ounces) process cheese sauce
Tortilla chips

Steps:

  • In a large saucepan, cook rice mix in butter until golden brown. Stir in water and diced tomatoes; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender. , Meanwhile, in a large skillet, cook beef until no longer pink. Drain and add to the rice. Stir in the cheese, stewed tomatoes and cheese sauce; cook and stir until cheese is melted. , Transfer to a slow cooker set on low. Serve with tortilla chips.

  • Add in Taco Seasoning and mix well.

1 (250 g) package cream cheese, softened
125 ml (1/2 cup) sour cream
50 ml (1/4 cup) Miracle Whip
1 jar of your favourite salsa
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese (i do not always use both,sometimes just cheddar)
1 green pepper, chopped
3 green onions, chopped
1 tomatoes, diced

Steps:

  • Blend first three ingredients together.
  • Spread over 12 inch pizza pan or other large plate or platter.
  • Chill for one hour (if you have time, if not don't worry about it).
  • Add salsa sauce over top.
  • Alternate cheese,green peppers, onions, tomatoes.
  • Cover& chill.
  • Serve with Nacho chips for dipping.
  • Regular or bite sized.
  • Very addictive!
